Easy Weeknight Tuna Pot Pie image

I made this recipe up one night on my commute home from work. It is fast, easy, and delicious! Makes great leftovers, too.

2 tablespoons butter
1 small onion, diced
2 (5 ounce) cans tuna, drained
1 (10 ounce) package frozen mixed vegetables
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup shredded Cheddar cheese
1 (8 ounce) package refrigerated crescent rolls

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt the butter in a saucepan over medium heat. Add onions and cook until soft and translucent. Mix in the tuna and frozen vegetables, stirring often until the vegetables are heated through, 5 to 10 minutes. Stir in the cream of mushroom soup. Pour the tuna mixture into a 9 inch pie dish and sprinkle with shredded cheese.
  • Unroll and separate the crescent rolls. Lay each crescent roll on top of the tuna mixture with the point facing inward, the rolls may overlap slightly. Bake until crescent rolls are golden brown and mixture is bubbly, 11 to 13 minutes. Let the pie sit for 5 to 10 minutes before cutting and serving.

1 (12 ounce) can light tuna, drained
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup milk
1/4 cup frozen chopped onion, thawed
1 (10 ounce) box frozen mixed vegetables, thawed
1 cup chopped cooked potato
salt and pepper
1 (7 1/2 ounce) can refrigerated biscuits, quartered

Steps:

  • Heat oven to 375°F.
  • Heat soup and milk in a saucepan on low heat until smooth.
  • Stir in vegetables, tuna, potato, salt and pepper.
  • Continue cooking until mixture comes to a low boil.
  • Transfer to a 1 1/2 quart casserole top with biscuits.
  • Bake 18 to 20 minutes or until biscuits are golden brown.

1 (10 ounce) package frozen peas and carrots
1/2 cup chopped onion
1 can cream of celery soup
1/3 cup milk
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 tablespoon finely chopped celery or 1/2 teaspoon dried celery flakes
salt
pepper
pastry for double-crust pie (biscuits could be substituted)

Steps:

  • Line a pie pan with crust; set aside.
  • Combine remaining ingredients.
  • Pour into pie crust and top with the second.
  • (If you choose to use biscuits, wait until last few minutes of baking so they won't burn.) Seal and crimp edges.
  • Slit the top of crust to vent and bake 45 to 50 minutes at 375.

Oh, I love these individual tuna pot pies! I found these on the back of a Chicken of the Sea Tuna pouch, and I am glad I did. Recipe is very easily halved into 2 pot pies. Also, with my changes (The ones in parentheses) these come out to 200 calories per pot pie. Also, if you want a crust or lattice top piece, simply crisscross crescent roll dough on top of pies before baking.

1 cup water
1 chicken bouillon cube
1 cup frozen vegetables, NOT defrosted (personally, I use about 2 cups, and whatever I have in the freezer with success)
1 cup milk (I use skim)
2 tablespoons cornstarch
1/2-1 cup shredded cheddar cheese (I use 0.5 cup 2% sharp, and it's good and cheesy)
1 (7 ounce) envelope solid white tuna packed in water or 1 (12 ounce) can chunk light tuna, drained and flaked
1 (8 ounce) can crescent roll dough (optional)

Steps:

  • Preheat oven to 375°F.
  • In medium saucepan, combine water, vegetables, and bouillon cube. Bring to a boil over medium heat; cook for 2 minutes longer.
  • Dissolve cornstarch in milk, stir into vegetable saucepan and cook until thickened (maybe a little less than 2 minutes.) Stir in tuna and cheese.
  • Spoon mixture into 4 (3/4 cup to 1.5 cup) individual pie pans or casserole dishes.
  • Optional step: Separate crescent roll dough into 4 rectangles, cut each rectangle into six strips. Attach crust by crisscrossing six dough strips over each pot pie and pressing down firmly; trim excess dough.

This is a versatile recipe that can be made with tuna or not for a vegetarian pie. IMHO, the crust rivals Marie Callendars pot pies! And if you happen to have leftovers, just slice a wedge and microwave it a couple of minutes...it's just as good as the first day.

2 1/4 cups all-purpose flour
1 cup chilled Butter Flavor Crisco (Crisco Sticks work best)
1 teaspoon salt
1/2 cup ice cold water
1 egg
2 tablespoons water
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (5 ounce) can evaporated milk
2 (6 ounce) cans albacore tuna in water, well drained
1 1/2 cups thawed frozen vegetables (peas, carrots, green beans, or corn work best)
1/2 cup thinly sliced mushroom
1 garlic clove, minced
1/2 cup diced shallots or 1/2 cup onion
1 teaspoon dried parsley
1/2 teaspoon celery seed
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Make crust first.
  • In a large bowl, mix flour and salt thoroughly.
  • Add shortening and cover with flour.
  • Using 2 butter knives or pastry cutter (I've also used a waffle-bottom potato masher with excellent results) cut up shortening into flour until it resembles chunky cornmeal.
  • Create well in center and sparingly add ice cold water to mixture stirring with spatula gently between pourings.
  • Do this only until dough starts to form a loose ball.
  • It may not be necessary to use all of the water.
  • Turn dough out onto a large piece of wax paper or plastic wrap and form ball using the paper or wrap to do so and fold closed.
  • Place in coldest part of refrigerator until ready to use (at least 15 minutes).
  • Mix all filling ingredients well, except tuna.
  • Flake tuna with fork into chunks of various sizes, the largest being bite-size and stir into filling mixture.
  • *If you wish to omit the tuna for a vegetarian pie, substitute 1 large potato, peeled, cubed and par-boiled for 10 minutes.
  • Take dough out of frige.
  • On a well-floured board knead gently 4-5 times until the dough holds together nicely and looks marbleized.
  • Cut dough in half and roll out 1 half at a time about 3/4" bigger than the pie dish.
  • The key to a flaky crust is to handle it as little as possible.
  • Put bottom half in dish, then filling, then cover with top half.
  • Crimp edges together using your fingers and make ventilation holes in center using a fork.
  • Brush top of crust and edges with egg wash (1 egg and 2 tbs water whisked together).
  • Bake in oven at 425F for 15 minutes, then reduce heat to 375F and bake another 45 minutes or until crust is golden brown.
  • Check every 15 minutes.
  • If edges start to brown too much cover them with foil.
  • Cool 10 minutes before serving.
