3 tsp. baking powder
1/3 cup raw or brown sugar (leave out for savoury muffins)
1 egg
1 tsp. vanilla (optional)
1/2 cup rice bran oil
1 cup milk
1 cup of your chosen flavouring (ideas listed below)

Steps:

  • Preheat oven to 200°C or 180°C fan-forced.
  • Sift flour and baking powder into a large bowl. Stir in sugar.
  • In a separate jug, mix together egg, oil and milk.
  • Add wet ingredients + extra flavours (see below for ideas) to dry ingredients and fold through gently.
  • Line muffin tin and spoon mixture evenly into muffin holes.
  • Bake for 20 minutes or until a skewer comes out clean.

1/2 cup milk (any variety will do)
1/4 cup vegetable oil
1 tsp vanilla extract
1/2 cup sugar
1 1/2 cup flour (all-purpose)

Steps:

  • Preheat the oven to 400°F. Line a muffin pan with muffin papers or grease the pan well.
  • Combine Egg, Milk and salad oil.
  • In a separate bowl combine baking powder, flour, sugar, and salt. Whisk to combine. Pour the liquid ingredients into the dry ingredients. Blend only until combined.
  • Spoon batter into each muffin paper until 2/3 full. Bake for 16-20 minutes.
  • Store in an airtight bag or container.

2 cups sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg
1 cup milk
1 teaspoon vanilla

Steps:

  • Melt the butter in a small saucepan or in the microwave on low heat.
  • Sift, measure and then place the flour in a large bowl.
  • Add the baking powder, salt and sugar.
  • Beat the egg well in a small bowl.
  • Add the milk, vanilla and melted butter and mix thoroughly.
  • Put the above wet ingredients into the large bowl of dry ingredients.
  • Stir just until the flour mixture is moistened.
  • Fill greased muffin tins 1/2 to 2/3 full.
  • Bake at 400 F or 200 C for 20-25 minutes.
  • The muffins should be golden brown in colour and spring back when touched.

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.

2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
250g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
  • Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
  • Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
  • Stir in 100g chocolate chips or dried fruit if using.
  • Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  • Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

Steps:

  • Preheat oven to 375 degrees, with rack in lower third. Butter and flour a standard 12-cup muffin pan, tapping out excess. Set aside.
  • In a small bowl, whisk together butter, eggs, milk, and vanilla; set aside. In a large bowl, whisk together dry ingredients; make a well in the center. Add egg mixture to well. With a rubber spatula, gently stir ingredients just until batter is moistened (do not overmix; a few lumps are fine). Add mix-ins, if desired.

I worked in a bakery and we made dozens of these moist muffins in different flavors every day. You can add any fruit you like to the basic batter. Our favorites are blueberry, banana nut, pina colada and pumpkin.

2 c all purpose flour
1 c sugar
2 tsp baking powder
1/2 tsp salt
1 large egg
3/4 c milk
3/8 c oil (that is 1/4 cup plus 2 tablespoons)

Steps:

  • 1. Stir together dry ingredients in a large bowl.
  • 2. Add wet ingredients and any optional ingredients and stir just until moistened. (Adjust amount of milk depending on how moist your add-ins are - add less for moist things like banana, crushed pineapple, or pumpkin and add a bit more if needed for dried fruits.)
  • 3. Scoop into greased muffins tins (an ice cream scoop works well for this). Sprinkle the tops with sugar if desired, and bake at 400 degrees for 25 to 30 minutes or until done.
  • 4. NOTES: You can mix up a large batch of the basic dry mix (flour, sugar, baking powder and salt) and store in a sealed container in your pantry. To have fresh muffins in the morning, stir the mix and measure out 3 cups of mix for one dozen muffins, 6 cups for two dozen muffins, add the wet ingredients and the optional ingredients and bake. Or, for a large group, make a large batch of the basic mix and make one dozen each of a variety of flavors with a lot less work.
  • 5. VARIATIONS: Banana Nut - add 1c. mashed bananas and 1/2 c. chopped walnuts. Blueberry - add 1 c. fresh or frozen blueberries. Pina Colada - add 1 small can drained crushed pineapple and 1/2 c. coconut. Apple Spice - add 1 peeled chopped apple, 1/4 teas. cinnamon and a dash nutmeg. Coffee Walnut - add 1 teas. coffee extract and 3/4 c. chopped walnuts. Pumpkin Spice - add 1 c. canned pumpkin, 1/2 teas. pumpkin pie spices, 1/2 c. nuts. Mincemeat - add 1 c. canned mincemeat and 1/2 c. chopped nuts. Date Nut - add 1 c. chopped dates and 1/2 c. nuts. Cranberry - add 1 c. chopped fresh cranberries, 1/2 c. nuts, 1 teas. orange rind. Chocolate chip - add 1 c. chocolate chips and 1/2 teas. vanilla extract, nuts if desired. Cherry Almond - add 1 c. chopped dried cherries and 1/2 c. toasted flaked almonds. Chocolate Chocolate chip - add 1/4 c. cocoa powder, 1/2 teas. vanilla and 1/2 c. (or more) chocolate chips (thanks LB). Anything else you can think up. Adjust amount of milk in batter depending on the moistness of the added ingredients.

1/2 cup unsalted butter, melted
3/4 cup buttermilk
2 teaspoons vanilla extract
2 cups all-purpose flour

  • Preheat oven to 425°F. Line a muffin tin with 10 muffin cups, and spray the muffin cups with an oil-based spray. Set aside.
  • In a large bowl, combine the sugar, eggs, melted butter, buttermilk, and vanilla extract.
  • In a separate bowl, mix together the flour, baking powder, and salt.
  • Fold the dry ingredients into the wet, mixing only until combined. Having a few lumps in the batter is totally fine!
  • Scoop batter into prepared muffin cups, filling just shy of the top of the cups. Bake for 5 minutes at 425°F, then, without opening your oven door, turn the oven down to 350°F and bake for an additional 15 minutes.
  • Remove from oven and allow to cool for 10 minutes, before transferring to a wire rack to cool completely.

1/4 cup (57g) butter
1/4 cup (50g) vegetable oil
1/2 cup (99g) granulated sugar
1/3 cup (71g) brown sugar
2 large eggs
1 cup (227g) buttermilk
2 2/3 cup (319g) all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 to 1 1/4 teaspoons ground cinnamon, to taste
3/4 teaspoon salt
1 teaspoon vanilla extract
8 -10 ounces of the mix in of your choice. Here I used Blueberries and few raspberries
2 - 3 tablespoons melted butter
3 tablespoons granulated sugar
1 tablespoon cinnamon

Steps:

  • Preheat the oven to 425°F.
  • Lightly grease a standard muffin tin. Or line with 12 paper or silicone muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins. Or use the tip I share in the video for the best liners.
  • Cream together the butter, vegetable oil, vanilla, and sugars till smooth.
  • Add the eggs one at a time, beating to combine.
  • Whisk together the flour, baking powder, baking soda, cinnamon, salt.
  • Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.
  • Fold in the berries or the mix in of your choice.
  • To prevent the berries from sinking to the bottom of the muffin, be sure to first toss them in a tablespoon or two of flour!
  • Spoon the batter evenly into the prepared pan, filling the cups nearly full.
  • Bake the muffins for 15 to 17 minutes, or until they're a pale golden brown and a cake tester inserted into the middle of one of the center muffins comes out clean.
  • Remove them from the oven, and let them cool for a couple of minutes, or until you can handle them.
  • While they're cooling, melt the butter for the topping (this is easily done in the microwave).
  • Use a pastry brush to paint the top of each muffin with the butter, then sprinkle with the cinnamon-sugar. Or simply dip the tops of muffins into the melted butter, then roll in the cinnamon-sugar. For added sparkle, use the coarse sugar I show you in the video.
  • Serve warm, or cool on a rack and wrap airtight. Store for a day or so at room temperature.

  • Add 1 cup mashed, peeled banana with the egg, milk and oil.
  • BLUEBERRY MUFFINS: Toss 1 cup washed and well-drained fresh or frozen blueberries with sifted flour mixture before adding liquid.
  • ORANGE MUFFINS: Cut 2 peeled navel oranges into sections.
  • When batter is in the cups, place an orange section on top of each and sprinkle lightly with granulated sugar.
  • CHEESE MUFFINS: Fold 1/2 cup grated sharp yellow cheese into muffin mix with the last few strokes on batter.
  • Serve hot with scrambled eggs and bacon for a special breakfast.
  • SURPRISE MUFFINS: Fill muffin cups 1/3rd full of batter.

  • Line a 12-count muffin tin with cupcake liners and preheat oven to 400˚F. In a large mixing bowl, using an electric mixer, beat 2 eggs with 1 cup granulated sugar on high speed 5 minutes, or until thick and light in color.
  • Add 1 cup Greek yogurt, 1/2 cup oil, 1 tsp vanilla. Set mixer to low speed and mix just until combined.
  • In a small bowl, add 2 cups flour, 2 tsp baking powder and 1/4 tsp salt and whisk to combine. Using a hand held whisk, add flour mixture into the batter 1/3 at a time, stirring to incorporate with each addition. DO NOT OVERMIX or muffins will be dense.
  • Use a spatula to fold in 1 1/2 cups mixed berries, folding just until combined.

Bake in the center of the oven at 400˚F for 20-22 minutes or until tops are golden and a toothpick inserted into the center come out clean. Transfer muffins to a wire rack to cool. 3 cups (375g) all-purpose flour (spoon & leveled)
3 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon (optional)
1/3 cup (5 Tablespoons; 80g) unsalted butter, melted and slightly cooled
1/3 cup (80ml) vegetable oil*
1 cup (200g) granulated sugar
2 large eggs, at room temperature
1/3 cup (80g) sour cream or yogurt, at room temperature*
1 cup (240ml) milk, at room temperature*
1 teaspoon pure vanilla extract
1-2 cups add-ins (see blog post above for suggestions)
optional: coarse sugar for sprinkling

Steps:

  • Preheat oven to 425°F (218°C). Generously grease a jumbo 6-count muffin pan with butter or nonstick spray (nonstick spray recommended) or line with muffin liners. Set aside.
  • Whisk the flour, baking powder, baking soda, salt, and cinnamon (if using) together in a large bowl. Set aside.
  • Whisk the melted butter, oil, sugar, and eggs together until combined. Then whisk in the sour cream, milk, and vanilla extract. Mixture will be pale yellow. Pour wet ingredients into dry ingredients and fold together with a rubber spatula or wooden spoon until completely combined. Use a whisk to rid any large lumps of flour, if needed. Avoid overmixing. The batter will be thick. Fold in the add-in(s).
  • Divide batter between each muffin cup, filling all the way to the top. Sprinkle with coarse sugar (for added crunch, recommended!). Bake at 425°F for 5 minutes, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C) and continue to bake for 25-30 minutes or until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.
  • Allow to cool for 10 minutes in pan before serving.
  • Cover leftover muffins and store at room temperature for 5 days or in the refrigerator for 1 week. Muffins freeze well for up to 3 months. Thaw in the refrigerator or on the counter.

3 tbsp Cocoa Powder
1 cup Chocolate Chips
1 cup Crushed Pineapple
1/2 cup Coconut Flakes

Steps:

  • Preheat oven to 180°C. Line a 12 cup muffin tray and set aside.
  • In a bowl, combine the flour, sugar and salt and mix.
  • In a jug, combine the egg, milk and oil.
  • Add the additional ingredients into the bowl and fold in the wet ingredients using a spatula until all ingredients are just wet.
  • Using a 1/3 cup measure, fill each muffin cup and smooth the top.
  • Bake for 22-25 minutes. Leave to cool in the tray for 5 minutes and then cool on a wire rack.

1 round loaf (1 pound) unsliced Italian bread
1/2 pound thinly sliced Genoa salami
1/2 pound thinly sliced deli ham
1/2 pound sliced mortadella
1/2 pound sliced Swiss cheese
1/2 pound sliced provolone cheese

Steps:

  • In a large bowl, combine the first 14 ingredients. Cover and refrigerate at least 8 hours. , Cut bread in half horizontally; carefully hollow out top and bottom, leaving a 1-in. shell (discard removed bread or save for another use). Spoon half the olive mixture over bottom half of bread. Layer with salami, ham, mortadella, Swiss and provolone; top with remaining olive mixture. Replace bread top. Wrap tightly. Refrigerate at least 3 hours or overnight. Cut into 8 wedges.
