These are nice and juicy - a great cheap meal. From Better Homes and Garden - when I was little my sisters and I used to eat them just because they are called "Mermaid Patties." :-) Simple, healthy, and great tasting.

1 (6 1/2 ounce) can tuna
1 egg
14 Ritz crackers (or about 1/2 cup breadcrumbs)
1 medium carrot, shredded
1/3 cup shredded cheddar cheese

Steps:

  • If you'd like to, run your carrots through a food processor so they aren't identifiable in the finished patties.
  • Blend all ingredients together in a bowl, and form 3-4 patties. Preheat your ovens broiler.
  • Broil for 4 minutes on one side, flip, and broil for 3 minutes more. Add a slice of cheese if desired, and broil 1 minute more.

Instead of plain ol' tuna-salad-sandwiches for lunch, try this variation. Also great when you need a light, fast dinner. This recipe easily cuts in half, to serve just 1 or 2.

2 (6 1/2 ounce) cans tuna in water, drained
2 eggs, beaten
1 carrot, scraped and finely grated
1/4 cup italian-style seasoned dry bread crumb
1 green onion, finely sliced
2 tablespoons chopped flat leaf parsley
1 pinch cayenne pepper
4 teaspoons olive oil
4 hamburger buns

Steps:

  • In a mixing bowl, combine tuna, eggs, carrot, breadcrumbs, onion, parsley and cayenne; shape mixture into four patties.
  • In a large skillet, heat olive oil over medium heat.
  • Saute tuna patties for four to five minutes on each side; turn carefully as they easily fall apart.
  • Serve on hamburger buns (really nice if toasted) with your choice of condiments; I recommend lettuce leaves and mayonnaise.

2 (6 ounce) cans tuna (drained, but not squeezed dry)
1 package seasoned stuffing mix
2 eggs
1/3 cup mayonnaise
1/2 teaspoon dill weed (optional)
oil, to fry in

Steps:

  • combine stuffing and seasoning packs (if separate) in a large bowl.
  • using a fork, thoroughly mix/mash together all ingredients (except oil).
  • shape into patties (I use my ice cream scoop and flatten the scoops into patties) fry in a pan of hot oil until golden on each side (about 5 minutes).
  • serve with cocktail, tarter, or dill sauce.
  • or put on a bun and have it your way!

1/2 cup dried seasoned bread crumbs
2 tablespoons snipped chives or 2 tablespoons green part scallions
1/4 cup mayonnaise
1 egg yolk
1 tablespoon pickle relish
1/8 teaspoon cayenne pepper
2 (6 ounce) cans chunk light tuna in water, drained
2 tablespoons light olive oil or 2 tablespoons vegetable oil

Steps:

  • Spread 1/4 cup of the bread crumbs in an even layer on a sheet of waxed paper, reserve.
  • With kitchen scissors, snip enough chives or green part of scallion to measure 2 tablespoons.
  • In a medium bowl, stir together the mayonnaise, egg yolk, chives, pickle relish, and cayenne pepper until combined.
  • Flake the tuna into a bowl.
  • Add the remaining 1/4 cup bread crumbs and stir until well combined.
  • Drop 1/4 of the tuna mixture onto the crumbs on the waxed paper and form into an oval patty (about 3 inches).
  • Coat both sides in crumbs.
  • Repeat with the remaining tuna mixture and crumbs.
  • Heat the olive or vegetable oil in a large nonstick skillet over medium heat.
  • Add the patties and cook until golden brown and heated through, about 3 minutes per side.

This is a dish my parents used to be able to make in a half hour when we were children. I added a few additions to make it a little more exciting and fairly low in fat. Serve on hamburger buns with traditional hamburger condiments if desired.

2 (5 ounce) cans tuna in water, drained
1 egg
½ cup dry bread crumbs
¾ teaspoon garlic salt
1 teaspoon ground black pepper
½ cup diced tomatoes, drained
¼ cup minced onion

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
  • Mix tuna, egg, bread crumbs, garlic salt, and black pepper and fold in diced tomatoes and onion. Form the mixture into 4 patties and place onto prepared baking sheet.
  • Bake in the preheated oven until burgers are golden brown and crisp, about 10 minutes per side.

3 tablespoons grated Parmesan cheese
10 tablespoons Italian-seasoned bread crumbs

3 (5 ounce) cans tuna, drained and flaked
1 cup breadcrumbs
3 celery ribs, finely chopped
1 cup mayonnaise (I use the light kind- works well)
4 tablespoons chili paste (like Sambal Oelek)
1 1/2 tablespoons lemon juice
1 -2 teaspoon celery salt (to taste)

Steps:

  • Combine the tuna, bread crumbs, celery and mayo in a large bowl. Blend in the chili paste, lemon juice, and celery salt. Mix everything well.
  • Form 4-8 patties, depending on how large you want them. Fry lightly in a sprayed skillet over medium heat about 5-8 minutes, flipping once. Patties are done once they are well-browned.
