BAKED TUNA MEATBALLS

Baked tuna meatballs are a healthy, seafood spin on meatballs! They're paleo, low-carb and keto-friendly as well. Watch the video above to see how I make them!

1 tablespoon olive oil
1/2 medium onion (finely diced)
2 cups baby spinach (chopped)
2 cloves garlic (minced)
3 5-ounce cans tuna (or one pound cooked tuna)
1/4 cup almond flour
2 beaten eggs
1 tablespoon mayonnaise
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
2 tablespoon chopped fresh dill (chopped)
salt and pepper (to taste)

Steps:

  • Heat the oil in a pan on medium heat. Add the diced onion and minced garlic and saute for a minute. Then add the chopped baby spinach and saute for another 1-2 minutes or until the spinach is wilted.
  • Transfer the onion spinach mixture to a bowl and let it cool. You can place the bowl in the fridge to speed this up.
  • Preheat your oven to 400 degrees fahrenheit.
  • Drain the cans of tuna and add the tuna to a mixing bowl along with the cooled vegetables, almond flour, eggs, mayonnaise, lemon juice, parsley, dill, salt and pepper.
  • Use your hands to dig in and mix everything together, breaking up any large chunks of tuna. The finer the mixture, the easier it will stick together.
  • Use a medium cookie scoop to scoop out evenly sized amounts of mixture. Use your fingers to mold this into a ball, then place it on a parchment lined baking tray.
  • Bake the tuna meatballs for 20-25 minutes, or until lightly golden.

1 (8 ounce) package cream cheese
1 teaspoon lemon juice
2 tablespoons grated onions
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
chopped nuts
chopped parsley

Steps:

  • Drain tuna. Soften cream cheese. Combine tuna, cream cheese, lemon juice, onion, horseradish, salt and liquid smoke.
  • Mix well;chill for several hours.
  • Shape tuna mixture into ball;roll in nuts and parsley.
  • Serve with assorted crackers.

1 egg
3 tablespoons corn meal
1 6-ounce can tuna (water drained)
1/4 cup Parmesan cheese
2 tablespoons oregano
1 tablespoon vegetable oil
3/4 cup water

Steps:

  • Preheat oven to 350 degrees.
  • Blend all ingredients and roll into quarter-sized balls. Place on cookie sheet sprayed with non-stick cooking spray. Bake for 30 minutes.
  • Cool. Should be soft after cooling

Use storecupboard ingredients to make herby fish balls in a speedy tomato and garlic sauce for a healthy pasta supper

4 x 150g cans tuna in brine, drained
140g breadcrumbs
2 eggs
2 tbsp mixed seeds
1 small pack tarragon , leaves only, chopped
1 tbsp sunflower oil
300g spaghetti
2 x 400g cans cherry tomatoes
1 garlic clove , crushed

Steps:

  • In a large bowl, mix together the tuna, breadcrumbs, eggs, seeds and half of the chopped tarragon. Season, then scrunch the mixture together with your hands and form into golf ball-sized balls.
  • Take a large, deep, non-stick frying pan and add 2 tsp oil. Fry 5-6 balls in the oil over a high heat for 5 mins or until they are a deep golden brown all over, adding more oil if the pan gets dry. Transfer to a plate covered in kitchen paper. Repeat with the rest of the balls.
  • Cook the spaghetti following pack instructions. Meanwhile, tip the cherry tomatoes into the pan you fried the balls in and add the garlic. Bring to a simmer, then season. When the spaghetti has been cooking for a few minutes, spoon a ladleful of pasta water into the cherry tomatoes to make a sauce. Just before serving, put the tuna balls back in the pan with the sauce to warm through for 5 mins.
  • Drain the pasta and scatter the remaining tarragon over the tuna balls before serving.

2 tablespoons chili sauce
1 teaspoon dried minced onion
1/2 teaspoon garlic powder

2 cans (6 ounces each) light water-packed tuna, drained and flaked
2 tablespoons minced fresh parsley
Assorted crackers

Steps:

  • In a small bowl, combine the cream cheese, chili sauce, onion, garlic powder and hot pepper sauce until blended. Add tuna and parsley; mix well. Shape into a ball; place on a serving plate. Cover and refrigerate for at least 3 hours. Serve with crackers.

One day I didn´t have any kind of meat at home, but I saw two cans of tuna on the shelf and said to myself: if I cook other kind of meatballs why not make tuna meatballs. I cooked them, my kids and husband loved them since then, and I still cooking them. It is very easy, I hope you like it!

2 (6 ounce) cans light chunk tuna in water, drained
1 cup Italian breadcrumbs
1 tablespoon butter, softed
1 teaspoon salt
1 egg
milk (approx. 1/4 cup)

Steps:

  • Open the cans of tuna and drain them completely.
  • Put the tuna in a medium bowl and mix.
  • Add 1/2 cup of breadcrumbs and mix.
  • Add butter and salt, mix.
  • Add egg, mix.
  • Add the other 1/2 cup of breadcrumbs and mix well.
  • Add milk little by little until moistened, not too sticky.
  • Make the meatballs with your hands and fry in hot oil in medium heat until golden, not too brown.

These tuna balls are very tasty, they can be made into 10-12 larger balls, or 30-40 smaller cocktail size balls (served with a cocktail picks). If you are one of those people (like myself) that just have to add garlic to everything, no matter what it is, then fresh minced garlic in any amount may be added to these if desired. This recipe can easily be doubled, I usually do if I am making, them into larger balls, for a snack or a main meal.

1 (6 1/2 ounce) can tuna, drained
1 egg
1/4 cup fine dry breadcrumbs (enough to hold the balls together) or 1/4 cup soft breadcrumbs (enough to hold the balls together)
3 tablespoons mayonnaise (Hellman's is best)
2 -3 tablespoons chopped onions or 2 -3 tablespoons green onions, if desired
2 -3 tablespoons chopped fresh parsley or 1 -2 teaspoon dried parsley
2 -3 tablespoons chopped almonds
1 teaspoon prepared mustard
1/2 teaspoon poultry seasoning, to taste
1/2 cup crushed corn flakes (for coating)
3 tablespoons melted butter
seasoning salt (I use seasoning salt for this) or regular white salt, to taste (I use seasoning salt for this)
black pepper, to taste (optional)

Steps:

  • Set oven to 375 degrees.
  • Prepare a greased 13 x 9-inch baking pan, or any size to fit the tuna balls.
  • In a bowl, combine the tuna, egg, breadcrumbs, mayo, onion, parsley, almonds, mustard, poultry seasoning, salt, pepper and fresh garlic, or garlic powder (if using), do NOT add the crushed Corn Flakes cereal; combine well.
  • Shape into 40 balls (for cocktail size) or larger balls, any size you desire.
  • Roll completely and evenly in the crushed Corn Flakes cereal to coat well.
  • Dip the coated balls completely in melted butter.
  • Place on a baking sheet/pan.
  • Bake for 10 minutes (for the cocktail size), and 20-25 minutes (depending on how large you make the balls) for the larger size, DON'T OVERBAKE, these do not take long to to get done.

ITALIAN TUNA BALLS

2 160g cans of tuna in sunflower or olive oil, drained (reserve a little oil)
small handful of pine nuts
freshly grated zest 1 lemon
small handful parsley leaves, roughly chopped
50g fresh breadcrumb
1 egg , beaten
400g spaghetti
500g jar pasta sauce

Steps:

  • Flake the tuna into a bowl, then tip in the pine nuts, lemon zest, parsley, breadcrumbs and egg. Season and mix together with your hands until completely combined. Roll the mix into 12 walnut-size balls. Put a large pan of salted water on to boil, then cook the spaghetti according to pack instructions.
  • Heat a little of the tuna oil in a large non-stick frying pan, then fry the tuna balls for 5 mins, turning every minute or so until completely golden. Drain on kitchen paper. Heat the tomato sauce, then toss together with the pasta and tuna balls.
