1 (9-ounce) package refrigerated cheese or spinach-filled tortellini
3/4 cup zesty Italian dressing
1 (1/2-inch) slice deli ham, cubed
1 (1/2-inch) slice deli hard salami, cubed
1 red bell pepper, cut into 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
1/4 (1/2-inch thick slice) pound Land O Lakes® Swiss Cheese cut into 1/2-inch cubes
1/4 (1/2-inch thick slice) pound Land O Lakes® Deli American cut into 1/2-inch cubes
36 toothpicks

Steps:

  • Cook tortellini according to package directions; drain.
  • Place Italian dressing, ham, salami, red and green pepper in large plastic food bag. Tightly seal bag. Turn bag over; place in 13x9-inch pan. Refrigerate, turning occasionally, 2-3 hours; drain.
  • Thread tortellini, ham, salami, peppers and cheese on toothpicks.

4 tablespoons olive oil
2 tablespoons jarred pesto
2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

1/4 cup fat-free Italian salad dressing
6 thin slices (4 ounces) reduced-fat provolone cheese

18 large pimiento-stuffed olives

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a resealable plastic bag, combine the tortellini and salad dressing. Seal bag and refrigerate for 4 hours. , Place a slice of cheese on each slice of salami; roll up tightly. Cut into thirds. Drain tortellini and discard dressing. For each appetizer, thread a tortellini, salami roll-up and olive on a toothpick.

1 package (9 ounces) refrigerated cheese tortellini
40 pimiento-stuffed olives
40 large pitted ripe olives
3/4 cup Italian salad dressing
40 thin slices pepperoni
20 thin slices hard salami, halved

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, olives and salad dressing. Toss to coat; cover and refrigerate for 4 hours or overnight., Drain mixture, discarding marinade. For each appetizer, thread a stuffed olive, a folded pepperoni slice, a tortellini, a folded salami piece and a ripe olive on a toothpick or short skewer.

4 ounces cheese tortellini or tortelloni
1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
1 clove garlic, pressed or smashed
Kosher salt and freshly ground black pepper
1/4 cup grape tomatoes
1/4 cup medium pitted California black olives
1/2 cup halved or quartered small bocconcini mozzarella
Skewers
Marinara sauce or pesto sauce for dipping, optional

Steps:

  • Cook pasta according to package directions. Drain and rinse pasta under cold water to stop cooking.
  • Meanwhile, whisk together the vinegar, olive oil and smashed garlic in a medium bowl. Season with salt and pepper, to taste, and toss with the tomatoes, olives, cheese and cooked pasta. Skewer everything, alternating as desired. Place marinara sauce or pesto in sealed containers. Pack in a lunch sack with an ice pack and send off to school.

1/2 cup Italian dressing
12 medium shrimp, cooked, peeled, deveined

Steps:

  • Cook tortellini as directed on packaged; drain and cool.
  • Place dressing in shallow glass or plastic bowl.
  • Stir in tortellini, shrimp and tomatoes.
  • Cover and refrigerate 1 hour, stirring once to coat.
