TUNA FISH EMPANADAS



Tuna fish empanadas image

Easy to make recipe for homemade tuna fish empanadas made with a filling of tuna fish, onions, bell peppers, olives, capers, paprika, and oregano.

15-20 empanada discs for baking (from homemade dough (see recipe below) or store bought)
2 tablespoons of oil
1 small yellow onion (sliced)
2 bell peppers (red and green, sliced)
2-3 garlic cloves (crushed)
1 tablespoon of paprika
3 cans tuna fish ((~ 15 ounces or 425 grams total))
1 tablespoon of dried oregano
½ cup of olives (sliced)
1-2 tablespoons of capers
1 tablespoon of lemon juice
Salt and pepper to taste
1 egg (lightly whisked for egg wash)
Cilantro jalapeño yogurt dip
Creamy avocado sauce
Avocado cilantro mayonnaise dipping sauce

Steps:

  • Heat the oil in a large frying pan, add the onions, peppers, crushed garlic, and paprika. Cook until golden the onions and peppers are soft and start to brown, about 15-20 minutes.
  • Add the tuna fish, mix and cook for another 5 minutes. Stir as needed.
  • Add the oregano, sliced olives, capers, and lemon juice. Mix well, taste and add salt/pepper to taste. Cook for a few minutes, then remove from heat and let the tuna fish mix cool down before using to fill the empanadas.
  • Place a large spoonful of the tuna fish filling on the center of each empanada disc.
  • Fold the empanada discs and gently seal the edges with your fingers. Twist and fold the edges of the empanadas with your fingers. You can also use a fork to press down and seal the edges.
  • Chill the empanadas for at least an hour, this will help them seal better and prevent them for opening while baking.
  • Pre-heat the oven to 400F (200C).
  • Brush the empanadas with the egg wash before baking; this helps them achieve that nice golden finish when baked.
  • Bake the empanadas for 18-20 minutes or until golden on top.
  • Serve the empanadas alone or with a dipping sauce.

1 tablespoon olive oil
2 medium plum tomatoes, seeded, finely chopped
1 medium green bell pepper, finely chopped
1 medium onion, finely chopped
2 garlic cloves, minced
1 pound high-quality canned Spanish tuna packed in olive oil, drained, coarsely flaked
2 large hard-boiled eggs, peeled, sliced
Nonstick vegetable oil spray
1 17.3-ounce package frozen puff pastry (2 sheets), thawed
2 ounces thinly sliced Serrano ham or prosciutto
1 large egg, beaten to blend (for glaze)

Steps:

  • Heat oil in heavy medium skillet over medium-high heat. Add tomatoes, pepper, onion, and garlic; sprinkle with salt and pepper and sauté until vegetables are soft, stirring often, about 10 minutes. Transfer to bowl. Add tuna and sliced eggs; toss gently to distribute evenly. Season filling with salt and pepper; set aside to cool completely.
  • Spray rimless baking sheet with nonstick spray. Roll out 1 pastry sheet on floured surface to 12x16-inch rectangle. Transfer to baking sheet. Arrange ham over pastry, leaving 1-inch border. Spread filling atop ham, leaving 1-inch border. Brush pastry edges with beaten egg. Roll out second pastry sheet to 12x15-inch rectangle. Place atop filling, pressing on edges to seal. Fold 1/2 inch of bottom pastry edge up over top pastry; crimp edges to seal. Brush top with beaten egg. Cut eight 2-inch slashes in top pastry. DO AHEAD: Can be made 4 hours ahead. Cover; chill.
  • Preheat oven to 450°F. Bake empanada uncovered until crust is browned and crisp, about 25 minutes. Slide onto platter.

TUNA EMPANADITAS

Active time: 1 hr Start to finish: 1 1/2 hr Don't use water-packed tuna for this recipe - it's too bland for the filling. Tuna packed in olive oil, however, will make for _empanaditas_ that taste genuine. Especially with a glass of Fino Sherry.

Yield Makes about 60 hors d'oeuvres

Number Of Ingredients 6

1 (6-oz) can light tuna in olive oil (not drained)
1/2 cup finely chopped onion
1/2 cup finely chopped pimiento-stuffed green olives (3 oz, drained)
2 tablespoons drained capers, rinsed and chopped
1 (17 1/4-oz) package frozen puff pastry sheets, thawed
a 2 1/4-inch round cookie cutter

Steps:

  • Preheat oven to 400°F.
  • Pour oil from tuna into a medium skillet. Add onion to skillet and cook over moderate heat, stirring occasionally, until softened, 3 to 4 minutes.
  • Mash tuna in a bowl with a fork, then stir in onion, olives, and capers. Season generously with pepper and very lightly with salt.
  • Roll out 1 pastry sheet on a lightly floured surface with a lightly floured rolling pin into a 13-inch square. Cut out 30 rounds with floured cookie cutter and discard trimmings.
  • Put 1/2 teaspoon tuna mixture in center of each round. Hold 1 filled round in palm of your hand, then moisten edge with a finger dipped in water. Cup hand, then fold dough over to form a half-moon, pinching edges to seal (this creates a border for crimping).
  • Transfer empanadita to an ungreased large baking sheet and press back of a fork onto border to crimp. Form more empanaditas with remaining rounds, then bake on sheet in middle of oven until golden, 20 to 25 minutes. Meanwhile, make more empanaditas with remaining pastry sheet and filling. Bake in same manner. Cool empanaditas on baking sheet on a rack about 10 minutes. Serve warm.

1 tbsp olive oil
1 onion , finely chopped
1 garlic clove , crushed
3-4 medium potatoes , cubed
2 carrots , diced
2 red peppers , diced
1 tbsp smoked paprika
1 tsp each dried oregano and thyme
2 tbsp tomato purée
300ml vegetable stock
185g can sustainable tuna in spring water, flaked
500g pack shortcrust pastry
1 egg , beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Fry onion, garlic, potatoes and carrots in oil for 5 mins until softening. Add peppers, paprika, herbs and tomato purée, and cook for 5 mins.
  • Add stock, bring to the boil, then simmer until stock is absorbed and vegetables are tender. Add the tuna.
  • Roll a quarter of the pastry into a 22cm circle. Roll remaining pastry to line a 22cm loose-bottomed tin, allowing the pastry to come over the edges of the tin.
  • Fill with the tuna mix and top with the pie lid. Brush the edges with egg then fold over the sides and press down with a fork to seal. Make two holes in the top, brush with egg and bake for 35-40 mins until golden brown. Leave to cool slightly, then serve.

1 (3 ounce) packet solid white tuna, drained and flaked
1 (4 ounce) can diced green chilies, drained
1 (2 1/2 ounce) can of sliced black olives, drained
1/2 cup of shredded sharp cheddar cheese
1 hard-boiled egg, chopped
salt and pepper
1/4 teaspoon hot pepper sauce
1/4 cup of medium thick chunky salsa
2 (15 ounce) packages refrigerated pie crusts
additional salsa (for serving)

Steps:

  • In medium bowl, place tuna, chilies, olives, cheese, egg, salt, pepper, and hot sauce. Toss lightly with fork, add 1/4 cup of salsa; toss again and set aside.
  • Follow direction on pie crust package. Unfold the crust; cut 4 circles 4 inches each out of each crust. Place the 8 circles on a foil covered baking sheet. Wet the edges of each circle with water. Top each circle with 1/4 cup of lightly packed tuna mixture. Top each with remaining circles (you may have to stretch the top piece slightly to fit). Press edges together and crimp with a fork. Cut slits in top of crust for venting.
  • Bake at 425°F for 15 to 18 minutes or until golden brown. Cool slightly and serve with additional salsa.

1 lb shortcrust pastry
2 tablespoons olive oil
2 lbs onions, sliced
2 garlic cloves, crushed
2 tablespoons sun-dried tomato paste
14 ounces tuna in vegetable oil, drained
3 tablespoons creme fraiche
2 ounces sharp cheddar cheese, finely grated
salt & freshly ground black pepper
20 basil leaves
1 egg, beaten

Steps:

  • Preheat the oven to 400°F
  • On a floured surface, roll out half the pastry into a rectangle approximately 12in x 8in. Place on a baking sheet and chill in the refrigerator for 10 minutes.
  • Prick the pastry rectangle all over with a fork and bake for about 15 minutes until golden brown. Allow to cool.
  • Heat the olive oil in a heavy-based frying pan. Add the onion and gently fry for 20 minutes until softened.
  • Increase the heat, add the garlic, and fry quickly until the onions turn golden brown. Spoon into a large bowl and allow to cool.
  • In a large bowl, mix together the sun-dried tomato paste, flaked tuna, creme fraiche and grated Cheddar and season well with salt and freshly ground pepper.
  • Pile the tuna mixture onto the cooled pastry base and spread evenly, top with cooked onions and basil leaves, leaving 1/2in clear round the edge. Brush the edge with beaten egg.
  • Roll the remaining pastry into a rectangle large enough to cover the tuna mixture and base. Place the pastry over the tuna filling, pressing the edges to seal it well and cut off any raggedy edges. Brush the tuna pie all over with beaten egg.
  • Bake for approximately 35-40 minutes until crisp and golden brown. Serve hot, cold or warm with a crisp green salad.

2 Tbsp. KRAFT Zesty Italian Dressing
2 large tomatoes, seeded, chopped
1/3 cup chopped onions
1 tsp. dried oregano leaves
1 tsp. paprika
2 cans (5 oz. each) tuna, drained, flaked
1 cup KRAFT Shredded Colby & Monterey Jack Cheeses
2 cups flour
1 tsp. baking powder
1 tsp. salt
1/2 cup shortening
1/2 cup water
1 cup oil

Steps:

  • Heat dressing in medium skillet on medium-high heat. Add tomatoes, onions, oregano and paprika; cook 5 min. or until onions are crisp-tender, stirring occasionally. Remove from heat. Stir in tuna and cheese; set aside.
  • Mix flour, baking powder and salt in large bowl. Cut in shortening with pastry blender or 2 knives until mixture resembles coarse crumbs. Gradually stir in water until mixture forms ball. Place on lightly floured surface; knead 5 min. or until smooth and pliable.
  • Divide dough into 10 balls, using about 2 Tbsp. for each. Flatten each to 6-inch round. Spoon about 1/3 cup tuna mixture onto center of each round; moisten edge with water. Fold dough rounds in half to enclose filling; press lightly on tops to remove air pockets. Seal edges with fork.
  • Heat oil in large deep skillet to 375ºF. Add 3 or 4 empanadas; cook 3 min. on each side or until golden brown on both sides. Remove from oil; drain well. Meanwhile, cook remaining empanadas. Cool slightly.
