Ceviche made with fresh, raw tuna chunks. Great as an appetizer or side dish. I learned this one from my grandparents and found it to be a winner among my college buddies.

12 ounces sashimi grade tuna
¾ bunch green onions, thinly sliced
½ medium onion, finely diced
2 teaspoons minced fresh ginger root
1 fresh jalapeno pepper, seeded and minced
¼ cup lemon juice, or to taste
¼ teaspoon soy sauce, or to taste

Steps:

  • Cut tuna into 1/2 inch cubes, and place into a bowl. Stir in the onion, green onions, ginger, jalapeno, lemon juice, and soy sauce; mix to combine. Cover and refrigerate for 2 to 3 hours. Taste before serving and add more lemon juice or soy sauce as needed.

Number Of Ingredients 17

1 pound fresh tuna, cubed into 1/2 pieces
Juice of 2 limes, about 1 1/2 tablespoons
Juice of 1 white grapefruit, be sure to strain out the seeds
1 teaspoon toasted sesame oil (this will be a brownish color not clear, check in the Asian food section of your marked)
2 tablespoons coconut milk
1 tablespoon soy sauce
6 Thai purple basic leaves, chiffonade (i.e. cut into thin strips), you can use regular basil if you can't find the purple Thai variety
6 cilantro leaves, chopped
1/2 cup chopped scallions
1 teaspoon finely chopped chili pepper such as rocoto or aji Amarillo (these are both Peruvian chilis, you can use fresh or jarred but the fresh will be somewhat hotter so you might need a little more if you're using jarred)
1 teaspoon toasted sesame oil
Juice of 1 lime or about 3/4 tablespoons lime juice
1/2 cup finely diced water chestnuts
1/4 cup finely diced mango
1 tablespoon vegetable oil
4 Asian pink shallots, peeled and thinly sliced (you can use regular shallots but they'll be a little bigger so use 3 instead of 4)
1 avocado, finely chopped

Steps:

  • Combine tuna, lime juice, grapefruit juice, sesame oil, coconut milk and soy sauce. Refrigerate 15 - 60 minute or until 'cooked' to taste, remember tuna can be eaten raw if it's good quality so how long you 'cook' it is up to you. Remove from refrigerator and drain off all the liquid. Combine tuna with basil, cilantro, scallions, chili, sesame oil, lime juice, water chestnuts and mango. While the tuna is 'cooking' heat oil in a saute pan, add the shallots and cook until crisp. Serve tuna on a plate or in a martini glass. Garnish with crispy shallots and diced avocado.

14 ounces unsweetened coconut milk (available in cans)
1 1/2 pounds fresh tuna, cut into broad slices about 1/4-inch thick, sashimi grade
1/2 purple onion, thinly sliced
2 tablespoons minced scallions
1 tablespoon finely chopped chives
3 tablespoons finely chopped cilantro leaves

Steps:

  • Place the jalapeno, ginger, fish sauce, sugar, lime juice and coconut milk in a blender and puree until smooth.

This is SO good! It is a traditional ceviche with the citrus juice that "cooks" the fish, however it has soy sauce and ginger which is so wonderful paired with tuna. Simple, healthy and tasty too! It is adapted to my liking from a recipe I found on allrecipes.com. P.S. Feel free to add some minced jalapeno pepper if you like it hot.

12 ounces high grade fresh 1/2 inch thick tuna steaks
3/4 bunch green onion, thinly sliced
1/4 small onion, finely diced
2 teaspoons grated fresh ginger
1/4 cup lemon juice

1/2 mango, diced

Steps:

  • Place the onion, green onions, ginger, jalapeno (optional), lemon juice, and soy sauce; mix to combine. into a glass non-reactive bowl.
  • Cut tuna into 1/2 inch cubes, and stir into the juice mixture in the bowl. Cover and refrigerate for 2 to 3 hours.
  • Taste before serving and add more lemon juice or soy sauce as needed.
  • Serve in martini glasses, garnish with avocado and mango, and serve with unsalted rice crackers. tortilla chips, or baked wonton wrappers.

1 teaspoon chopped garlic
1 teaspoon chopped ginger
1/2 cup soy sauce
1/4 cup fresh lime juice
2 tablespoons chopped cilantro
1 pound sashimi quality yellowfin tuna
1/2 teaspoon aji amarillo*
1/2 rocoto pepper puree*
*available in Latin American specialty stores

Steps:

  • In a blender, puree until smooth the garlic, ginger, soy sauce, and lime juice. Remove to a bowl and mix in the cilantro. Slice the tuna into thin, 1-inch long pieces.
  • Place tuna on a serving platter and spoon soy sauce mixture over each slice. Dot each piece with each of the purees, aji amarillo, and rocoto pepper.

HEALTHY TUNA SALAD OR TUNA CEVICHE

This recipe has been called both tuna salad but it really has little that resembles the typical tuna salad. My friends have also called it tuna ceviche and it would be a little more accurate at describing what this is. Is really healthy and it goes well with crackers or on tostadas. I make very little because I'm the only one who eats it so feel free to double or triple the recipe for bigger parties.

5 ounces tuna, drained
1 ear of corn
1 persian cucumber, diced
4 radishes, diced
1 serrano pepper, diced
1/2 medium onion, diced
1 tomatoes, diced
1 medium avocado, diced
1 tablespoon lemons or 1 tablespoon lime juice
salt
pepper

Steps:

  • Cook your corn by preferred method. I usually buy unhusked corn and stick it 4 minutes in the microwave after I've soaked it in water for a 1 minute or 2.
  • Shave off the cooked corn kernels from the cob and add kernels into a bowl.
  • Mix in remaining ingredients, except for the lemon or lime juice, salt, and pepper. Feel free to seed the serrano pepper if you're not used to spicy food.
  • Add lemon or lime juice slowly and mix add more or less according to taste.
  • Add salt and pepper to taste.
  • Serve as topping on tostadas or on crackers.

TUNA CEVICHE IN RADICCHIO CUPS

This dish has the perfect balance of tang, zing, texture, color and banging flavor. I like to drink the ceviche juice in the radicchio cup first and then bite into the radicchio with tuna, YUM.

1 pound sushi-grade tuna, cut in 1/4-inch cubes
2/3 cup quartered cherry tomatoes
1/4 cup thinly sliced red onion
2 tablespoons finely diced jalapeño
2 tablespoons finely chopped cilantro
1 teaspoon grated garlic
2 tablespoons extra-virgin olive oil
1 teaspoon lime zest
2 1/2 tablespoons fresh lime juice
2 tablespoons fresh lemon juice
1/2 cup 1/4-inch-diced avocado
12 radicchio cups
Fine sea salt and freshly cracked black pepper

Steps:

  • In a medium bowl, combine all the ingredients except the avocado, radicchio, salt and black pepper. Add 1/4 teaspoon sea salt. Toss together, cover and refrigerate for 20 minutes, stirring the ceviche every 5 minutes.
  • Place the radicchio cups on a service platter, divide the ceviche with its the juices evenly among the cups. Top each with the avocado and season with sea salt and black pepper.

Here are two versions of tuna tartare, one of them a classic ceviche. Be sure not to marinate the tuna in the lime juice for too long or the meat will turn grey.

1 pound albacore or yellowfin tuna, cut in 1/2 inch dice
1/2 small red onion, cut in small dice
1 garlic clove, minced
1 to 2 serrano or jalapeño chiles, to taste, seeded and minced
1 tablespoon capers, rinsed and drained
1 ripe medium avocado, cut in small dice
Salt, preferably kosher salt
freshly ground pepper to taste
1/3 cup fresh lime juice
1/4 cup extra virgin olive oil
1/4 to 1/2 cup chopped cilantro to taste
Leaf lettuce, baby spinach or arugula, or radicchio leaves for serving

Steps:

  • Prepare the tuna and refrigerate while you prepare the remaining ingredients.
  • Place the onion in a small bowl, and cover with cold water. Let sit five minutes, then drain, rinse and dry on paper towels.
  • In a medium bowl, combine the onion, garlic, chile, capers, avocado, salt, pepper and 2 tablespoons of the lime juice. Toss together gently. Add the tuna to the bowl.
  • Stir together the remaining lime juice and the olive oil. Pour over the tuna, and toss the mixture together. Season to taste with salt and pepper. Cover and refrigerate for 15 minutes, stirring gently from time to time.
  • Just before serving, add the cilantro and toss together. Taste and adjust seasonings. Line plates with salad greens, spoon the ceviche on top, and serve.

1 (6 ounce) can solid white tuna packed in water
1 fresh jalapeno chile, seeded and minced (more or less to taste)
1 small red onion, peeled and finely chopped
1 ripe tomatoes, diced

salt
fleshly ground black pepper
1/4 cup fresh lime juice (1-2 limes)
2 -3 tablespoons extra virgin olive oil
lettuce
fresh cilantro stem, for garnish

  • Drain the tuna invert it onto a small platter.

Fresh chunks of tuna, ripe mango, and creamy avocado combine to make the perfect appetizer or a tasty lunch. I love to eat this with lime-seasoned tortilla chips, but it's just as delicious served in lettuce cups. I try to keep the tuna, avocado and mango pieces between 1/4- and 1/2-inch in size. Best eaten same-day, but can be kept 1-2 days in fridge, keeping in mind that texture will change.
