If your rice is already prepared, this recipe takes just about 15 minutes to prepare. If you need to prepare the brown rice, plan for about 55 minutes total. 1 tablespoon avocado oil (or other healthy cooking oil), divided
3 large eggs
5-6 scallions (aka green onions), root and 2 inches of green top removed, chopped (about 1/2 cup)
1 large carrot, shredded or julienned (about 1/2 cup)
1/2 cup frozen peas
2 cups cooked brown rice*
3 tablespoons organic tamari** or low sodium soy sauce
1 teaspoon rice vinegar (no sugar added)
1 teaspoon toasted sesame oil
1/2 teaspoon freshly grated ginger
big pinch of sea salt (more or less to taste)
a few spins freshly ground black pepper

Steps:

  • Heat 1/2 tablespoon oil over medium heat.
  • In a mixing bowl, whisk the eggs into a uniform mixture until well combine and season with a small pinch of sea salt and fresh black pepper.
  • Add the eggs to the pan and scramble. Once cooked remove the scrambled eggs from the pan to a plate and reserve for later.
  • Add the remaining 1/2 tablespoon oil to the pan over medium heat; add the scallions and carrot and sauté 3-4 minutes until softened.
  • Add the frozen peas to the pan, then add the rice, tamari, rice vinegar, toasted sesame oil and ginger. Stir well to combine, the heat from the pan will quickly defrost the peas.
  • Turn off the heat and stir in the scrambled eggs. Season with a pinch of sea salt if needed-it will depend on the sodium content of the tamari and other ingredients.
  • Turn the heat to low and cook another 5 minutes until the entire dish is warmed through.
  • Water chestnuts, bean sprouts, edamame, just about any other veggie you like, or plain shredded chicken would also be a delicious addition to this dish.

This Pineapple Fried Rice is super easy to make and packed with veggies!

4 cups of cooked rice (day old rice is ideal)*
2 ½ tablespoons of coconut oil (any other oil will work well!)
5 cloves of garlic, finely minced
1 inch of ginger, peeled and finely minced (about 1 tablespoon)
1 ½ cups of yellow onion, chopped
1 cup of carrot, diced
1 medium bell pepper, finely diced
1 ½ cups of fresh or frozen pineapple
1/2 cup of peas (I used frozen peas, thawed)
4 tablespoons of soy sauce
2 tablespoons of sesame oil

Steps:

  • Over medium heat, heat your coconut oil until hot. Add in the garlic, ginger, onion, and carrots. Saute for 5 minutes and then add in the pineapple and bell pepper. Saute for 5 additional minutes, stirring frequently.
  • Stir in the cold rice, peas, soy sauce, and sesame oil. Once full combined, let the rice cook, untouched for a couple of minutes. To help get a tiny bit of crispiness on the bottom of the rice, let it cook, unstirred, for a few minutes at a time. Then stir to toss it and then let it sit for another couple of minutes.
  • Remove from heat and season with a bit of salt and pepper and ENJOY!!

1 cup fat free chicken broth
1 1/3 cups long grain white rice, uncoooked
2 teaspoons canola oil
2 tablespoons onions, finely chopped
1 cup celery, finely chopped
2 tablespoons green peppers, finely chopped
1/2 cup pecans, chopped
1/4 teaspoon ground sage
1/2 cup water chestnut, sliced
1/4 teaspoon nutmeg
black pepper

Steps:

  • Bring water and chicken broth to boil in medium-size saucepan; add rice and stir, cover and simmer for 20 minutes.
  • Remove pan from heat, let stand, covered, for 5 minutes or until liquid is absorbed, Reserve,.
  • Heat oil in a large nonstick skillet; Saute onion and celery over moderate heat for 3 minutes; stir in green pepper, pecans, sage, chestnuts, nutmeg and pepper and cooked Rice, fluff with fork before serving.

Thai Pineapple Fried Rice is full of the perfect combination of Thai flavors, and an easy weeknight meal!

Number Of Ingredients 15

2 eggs
5 garlic cloves, finely chopped
1 small white onion, finely chopped
1 cup diced meat, we like sausage (optional)
1 cup frozen peas and carrots
1 cup fresh diced pineapple (you can use canned, but we love fresh!)
1/2 cup cashews
2 cups cooked day old rice (the drier, the better)
2 tsp Thai soy sauce, to taste
1 tsp oyster sauce, to taste
1/2 tsp salt (optional), to taste
1/2 tsp turmeric
3 green onion stalks cut into 1/4in pieces
Handful of cilantro leaves to sprinkle on each serving
1 lime quartered to serve with each serving

Steps:

  • Warm a few teaspoons of cooking oil of your choice in a wok over medium high heat.
  • Add the eggs and scramble until set.
  • Add the garlic and onions, and stir-fry until fragrant.
  • Add the diced meat, and stir-fry until cooked through. Or leave out the meat, and make Vegetarian Thai Pineapple Fried Rice!
  • Add peas and carrots (or whatever veggies you have in your fridge you want to use up), cashews and pineapple. Stir-fry until warmed through.
  • Once everything is fully cooked, scoop all that is in the wok into a separate container.
  • Add a teaspoon or two of cooking oil to your wok on medium high heat.
  • Make sure you've broken up the rice, so it's not in any big chunks. Add the rice to the wok, and stir-fry until warm and glistening.
  • Add the turmeric. Stir-fry until the rice has become a sunny yellow, and turn off the heat.
  • Add back the ingredients you took out, and also add in the green onions, and sauces. I usually don't measure my sauces, and instead add a little at a time, and taste it until it reaches the flavor I like.
  • WARNING! Be careful not to add too much Thai soy sauce or oyster sauce because then your fried rice will be gooey! Add only a few teaspoons of the sauces, and if it's still not savory enough, add a little salt at a time until it's reached the flavor you like.
  • Sprinkle cilantro on top, and add a wedge of lime on the side of each serving.
  • Enjoy!

This is my hubby's recipe and tastes amazing! I must say though that the large amount of bacon was quite alarming when I first saw him make this, but our family enjoys this dish a lot. We try not to make it too frequently but it is a hard habit to break. Day old rice works best but fresh rice right out of our rice cooker has been successful many times. He was taught how to cook this style of fried rice while in Hawaii.

1 lb bacon
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1 medium onion, chopped
2 teaspoons fresh ginger, grated
2 tablespoons soy sauce
1/2 teaspoon sesame oil
2 cups medium-grain white rice, precooked
4 eggs, cracked and beaten

Steps:

  • Cut bacon into half inch pieces and fry in a wok until crisp. Remove bacon and set aside leaving all the bacon grease in the wok.
  • Sautee the peppers and onions in the bacon grease until almost tender. The onions should be slightly translusent. Add in the ginger.
  • Push the vegetables to the side of the wok and add the rice, soy sauce, and sesame oil. Fry the rice until it shows signs of browning or crisping. It is okay if the vegetables begin to mix in at this point.
  • Push aside the rice to make room to scramble the eggs. Once the eggs are cooked blend them into the rice and vegetables. It's okay if the vegetables and rice get into the eggs during the scrambling.
  • Add reserved cooked bacon and mix well.
  • Serve with extra soy sauce to taste.
