1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped celery
1/3 cup mayonnaise
1/4 cup finely chopped onion
2 tablespoons chili sauce
1 pouch (6.4 ounces) light tuna in water
2 tablespoons butter
4 hamburger buns, split and toasted
Optional: Lettuce leaves and sliced tomato

Steps:

  • Mix the first 6 ingredients; fold in tuna. Shape into 4 patties. , In a large cast-iron or other heavy skillet, heat butter over medium heat. Cook patties until lightly browned, 4-5 minutes on each side. Serve on buns. If desired, top with lettuce and tomato.

Life can't be about all beef. "Where's The Beef?" questions are fewer nowadays due to an influx of health concerns, as well as those that are watching their weight. The Longmeadow Farm is following suit and will openly and warmly embrace these new "burgers" to grace our "Saturday Lunch at the Farm" crowd. I wanted to produce a light(ish) tuna burger that made Dennis, Jerry, Uncle Dick, and my Dad feel as light as a Spring beetle floating around on a wind current after lunch. This recipe did it. Everyone was full, but not so full they wanted to clamber off to the backyard hammock, and pull their hat over their face. This gave them enough energy to have their giddy-up for all the many maelstroms that would undoubtedly follow them around for the afternoon. Go ahead, try them "Maryland" style with the use of our beloved "Old Bay Seasoning" and get ready to work hard this afternoon. Can be easily doubled for a big crowd.

1 (6 ounce) can tuna in water
3 tablespoons fresh breadcrumbs (or canned)
1 tablespoon pickle relish
3 tablespoons Egg Beaters egg substitute or 1 egg
1 teaspoon pimiento (optional)
1 green onion (chopped)
1 small celery (chopped)
1 tablespoon light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Old Bay Seasoning (or I use extra Old Bay!) (optional)
1 dash Tabasco sauce (optional)
1 small green pepper, chopped (optional)
4 -5 slices cheddar cheese (thin slice, optional) (optional) or 4 -5 slices soy cheese (thin slice) (optional)

Steps:

  • Open and drain canned tuna.
  • Mix together rest of ingredients except tuna, cheese and rolls.
  • When mixing ingredients, I add one ingredient at a time, and gently but throughly mix all ingredients.
  • Add tuna and gently fold together, and make firm patties.
  • Heat skillet, that is sprayed with cooking spray or use 1 teaspoon of oil on bottom of pan.
  • When heated on medium high heat, add each patty browning on each side for 5 minutes each.
  • Add a piece of cheese on top to melt slightly.
  • Open hamburger buns, and place in oven @350 degrees until toasted, (about 3/4 minutes).
  • Put on buns and serve with fresh lettuce, tomato, and mustard.

1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
  • Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
  • Grill the hamburger buns over high heat until well charred and crispy.
  • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

1 egg
½ cup Italian seasoned bread crumbs
⅓ cup minced onion

Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
  • Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
  • Serve on buns with tomato slices and lettuce leaves, if desired.

1/2 cup mayonnaise
2 tablespoons adobo from a can of chipotle peppers
2 tablespoons minced fresh parsley
1 tablespoon minced capers
1 tablespoon minced shallots
2 teaspoons sherry or white wine vinegar
1 teaspoon grated ginger (grated on a rasp grater)
1 clove garlic, grated on a rasp grater
Kosher salt and freshly cracked black pepper
4 fresh or frozen tuna steaks, about 4 ounces each and 3/4 to 1 inch thick, at room temperature
Olive oil, for drizzling
Kosher salt and freshly cracked black pepper
4 brioche or potato rolls, split
Butter, for the rolls
1 clove garlic, peeled
Butter lettuce leaves, for topping
Pickled red onions, for topping
1/2 jalapeno, thinly sliced
Fried Shallots, recipe follows, for topping
6 to 8 medium shallots, very thinly sliced on a mandoline
Neutral oil, for frying
Kosher salt

Steps:

  • For the chipotle mayo: Whisk together the mayonnaise, adobo, parsley, capers, shallots, vinegar, ginger and garlic; season with salt and pepper. Set aside.
  • For the tuna: Preheat a large grill pan on high heat until very hot.
  • Drizzle both sides of each tuna steak with olive oil and season with salt and pepper. Sear the steaks on each side for about 2 minutes for medium.
  • Meanwhile, toast the rolls, spread with a little butter and rub with the garlic.
  • Spread both sides of each roll with the chipotle mayo. Then layer on lettuce leaves, a tuna steak and some pickled red onions, jalapenos and Fried Shallots.
  • In a medium, heavy-bottomed pot, add the shallots and enough oil to cover by at least 2 inches. Place the pot over medium-low heat and bring to a low simmer, stirring frequently so the shallot rings separate. Cook at a low simmer until most of the bubbles subside and the shallots are browned and crispy, 20 to 25 minutes. Use a slotted spoon or sieve to remove the shallots, place on a paper towel-lined plate to drain and season with salt. Let dry at least 1 hour. If the shallots are not completely crispy, dry in the oven at 200 degrees F for another 5 to 10 minutes.

  • If you're stopping here:
  • Wrap the burgers tightly in plastic wrap and refrigerate up to 3 days or freeze up to 3 months. Thaw completely in the refrigerator or microwave for 3 to 4 minutes on LOW before cooking.
  • When you're ready to eat:
  • Heat the oil in a large skillet over medium heat. Unwrap the burgers and cook until golden brown and heated through, 3 to 5 minutes per side. Serve the burgers on buns with sliced tomato and pickles.

1 to 1 1/4 pounds fresh tuna, roughly chopped
1/4 cup finely chopped chives
2 tablespoons tamari sauce
3 garlic cloves, grated or finely chopped
Freshly ground black pepper
1 cup panko bread crumbs
2 tablespoons black sesame seeds
1/4 cup vegetable, peanut, safflower or canola oil
8 dinner rolls or brioche rolls
1/2 head Bibb lettuce, about 4 to 5 leaves
1/4 cup pickled ginger
1/2 cup store-bought wasabi mustard or Asian Sweet-Hot mustard or, combine 1/2 cup yellow mustard, 2 tablespoons honey, 1 teaspoon wasabi paste in a small bowl
Terra chips or other fancy root vegetable chips

Steps:

  • Add the tuna in a food processor and pulse to grind. Put the tuna in bowl and stir in the chives, tamari, garlic, and black pepper, to taste. Add the panko crumbs and sesame seeds to a shallow dish. Form the tuna mixture into 8 small patties and roll in the bread crumbs.
  • In a large skillet over medium-high heat, add the vegetable oil. Put the burgers in the pan and cook until lightly golden brown on the outside and pink in the middle, about 2 minutes per side.
  • Put the burgers on the bun bottoms. Top with lettuce and pickled ginger, then slather the bun tops with wasabi mustard. Cover with the bun tops and serve with fancy root vegetable chips.

  • In a small saucepan saute the onion and garlic in oil until tender (without burning the garlic) and set aside to cool.
  • Combine tuna, eggs, bread crumbs, onion mixture, and hot sauce, in a medium bowl and mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle. Coat a nonstick skillet with cooking spray and fry tuna patties for about 3 to 4 minutes per side, or until cooked through. Steps:

  • Cut fish into 1" cubes. Place in a single layer on a rimmed baking sheet, cover with plastic wrap, and transfer to freezer. Chill protein until very cold (it should feel firm but still give when pressed with your finger), about 15 minutes. Meanwhile, place all grinding parts (the stand mixer's grinding attachment, including the dies, or the bowl and blade of the food processor) in the freezer until very cold, at least 15 minutes. Assemble grinder attachment with chilled coarse die. Set a bowl in a large bowl of ice; arrange beneath the attachment to catch ground tuna and keep it cold.

SIMPLE TUNA BURGERS

We used to eat these alot when we were kids. Now my daughter is eating them. We ate them with french fries or Tater Tots but I serve these with Sweet Potato fries. My Mom got this recipe from Disneyland back in the 60's. Theres really no accurate measurements for this recipe. Just make your tuna the way you would for a sandwich.I use 3 cans of tuna because I like to have extra sandwiches but you could make less its up to you.

1 cup mayonnaise (or more or less)

thousand island dressing
aluminum foil, to wrap the burgers in

Steps:

  • In a medium sized bowl combine all the above ingredients(except for the buns and dressing and the foil LOL!) to make your tuna salad.
  • Split up the buns and spread on the thousand Island dressing on both sides. then place the tuna salad on each bun and then wrap the sandwiches in foil.
  • Place the sandwiches on a baking sheet cook in oven at 350 for about 15-20 minutes. The buns should be slightly toasty.

200g fresh tuna steak
1 garlic clove , finely chopped
small knob fresh ginger , peeled and finely chopped
1 tbsp soy sauce
handful coriander leaves, chopped
1 tbsp sunflower oil

Steps:

198g can sweetcorn , drained
2 x cans tuna in water, drained well
25g grated cheddar
3 spring onions , finely chopped
1 egg , beaten
2 tbsp vegetable oil
wholegrain bread rolls, lettuce, salsa, to serve

Steps:

  • Whizz the bread in a food processor to crumbs, tip into a bowl, then whizz half the sweetcorn until finely chopped. Add the chopped corn, remaining whole corn, tuna, cheese, spring onions and some seasoning into the bowl with the bread and mix well. Add the egg, bit by bit (you may not need it all), until the mixture is sticky enough to be shaped into four even-size burgers.
  • Heat the oil in a non-stick pan, then cook the burgers for 5 mins on each side until golden and hot through the middle. Stuff into wholemeal buns with your favourite lettuce and a good dollop of salsa.

2 pounds fresh center-cut tuna
1 large garlic clove, minced
2 tablespoons extra-virgin olive oil
1 tablespoon toasted sesame oil, plus more for buns
1 anchovy fillet, minced
2 tablespoons finely chopped fresh basil
2 celery stalks, peeled to remove strings and minced
1 1/2 teaspoons grated fresh ginger
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup mizuna
6 buns
6 tablespoons pickled ginger
Wasabi Mayo

Steps:

  • Cut tuna into 1/4-inch chunks with a very sharp knife, trimming away any dark, bloody parts. Coarsely chop tuna by hand until it begins to hold together. Transfer to a bowl over a bowl of ice. Add garlic, olive oil, sesame oil, anchovy, basil, celery, ginger, salt, and pepper; combine well.
  • Heat grill to medium high. Form tuna into 6 patties, and place on hot grill, or chill for up to 6 hours until ready to cook. Grill from about 3 or 4 minutes per side for rare to 7 or 8 for well done. Alternatively, cook in a nonstick skillet or grill pan over medium-high heat for about 2 to 3 minutes per side for rare to 5 or 6 for well done.
  • Serve with mizuna on buns brushed with sesame oil and toasted, if desired. Serve with pickled ginger and wasabi mayonnaise.

1 1/2 pounds yellowfin tuna, cut into 1-inch pieces, chilled
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced ginger
1 1/2 teaspoons finely grated lemon zest
3 tablespoons Dijon mustard
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1 tablespoon vegetable oil
2 tablespoons rice-wine vinegar
1/2 teaspoon sugar
1/2 teaspoon coarse salt
1/2 cup grated carrot (from 1 carrot)
1/2 cup grated radish (from 3 to 4 radishes)
1 cup cored and thinly sliced Napa cabbage (from 1/2 head cabbage)
1 scallion, thinly sliced diagonally
1/2 teaspoon black sesame seeds
1/3 cup mayonnaise
4 braided challah rolls, split

Steps:

  • Make the burgers: Fit a food grinder with a grinding plate with about 1/4-inch holes. Grind tuna into a bowl. Add garlic, ginger, lemon zest, mustard, salt, and pepper. Mix gently, and shape into four 1-inch-thick patties. Cover, and refrigerate until cold and firm, about 30 minutes.
  • Make the coleslaw: Whisk vinegar, sugar, and salt in a small bowl. Mix carrot, radish, cabbage, scallion, and sesame seeds in a medium bowl. Toss slaw with vinegar mixture, and refrigerate up to 1 hour.
  • Heat oil in a large nonstick skillet over medium heat. Cook patties to medium-rare, about 2 minutes per side. Wipe skillet clean, and return to heat. Spread mayonnaise on cut sides of roll halves, and heat, mayonnaise side down, until golden, about 1 minute. Divide burgers and slaw among bottom halves of buns. Sandwich with top halves.

This is one of my favorite recipes. My grandmother would call me up and we'd have Tuna burgers for lunch all of the time. A few years ago I went vegetarian and this is really the only dish that I really miss. A nice, simple and tasty way to serve tuna. Makes a great lunch for adults and kids both.

1 tablespoon minced green pepper

  • Combine cream of mushroom soup with tuna.
  • Add green pepper and onion, mix well.
  • Spoon onto hamburger buns.
  • Add 1 slice of cheese to each bun.
  • Brush tops of buns with melted butter.
  • Bake on cookie sheet at 400 degrees for about 10 minutes, or until cheese melts and buns are golden brown.
