Vegetable & Tuna Pasta Salad image

This delicious pasta salad recipe is made with zucchini, sun-dried tomatoes, arugula and chunk light tuna, which is lower in mercury than white albacore tuna. For the best flavor, combine the pasta salad with the dressing about 1 hour before serving. If you're looking for an environmentally sustainable canned tuna option, check the label--tuna that was caught by troll or pole-and-line is considered the best choice, according to Monterey Bay Aquarium's Seafood Watch Program. Or look for the blue Certified Sustainable Seafood label from the Marine Stewardship Council.

¼ cup extra-virgin olive oil
¼ cup reduced-sodium chicken broth
¼ cup red-wine vinegar
3 tablespoons chopped fresh basil or 1 tablespoon dried
2 tablespoons finely chopped shallots
¼ teaspoon salt
¼ teaspoon freshly ground pepper
8 ounces (about 3 cups) whole-wheat fusilli
3 cups baby arugula
1 cup diced zucchini (about 1 medium)
2 5-ounce cans chunk light tuna, drained
½ cup shredded Parmesan cheese
¼ cup chopped soft sun-dried tomatoes
Freshly ground pepper to taste

Steps:

  • To prepare dressing: Combine oil, broth, vinegar, basil, shallots, salt and pepper in a jar with a tight-fitting lid. Shake until well combined. (Or whisk in a bowl.)
  • To prepare pasta salad: Cook pasta in a large pot of boiling water according to package directions. Drain, transfer to a large bowl and let cool. Add arugula, zucchini, tuna, cheese, tomatoes, pepper and the dressing; toss to coat.

2 (6 ounce) cans tuna in water, drained
1/2 cup Miracle Whip
4 ounces nonfat plain yogurt
1/3 cup Italian dressing
4 cups pasta, cooked, rinsed in cool water & drained (any pasta, I used wacky mac veggie spirals)
1 (16 ounce) bag frozen vegetables, cooked and cooled (I used california mix)
1/3 cup parmesan cheese, grated
1 teaspoon herbes de provence
1 dash celery salt
1 dash dill

Steps:

  • Cook the pasta in water with a dash of salt.
  • Combine all other ingredients in a large bowl with a lid.
  • When pasta is cooked through, drain and rinse in cold water.
  • Add pasta to other ingredients & mix thoroughly.
  • Let sit in fridge for several hours before serving.
  • May be served over a garden salad, baked potato, with crackers. This recipe is versatile & can be tweaked to your taste. Could be made gluten free if use gluten free pasta.

For the Salad:
8 ounces (227 grams) rotini or fusilli pasta
2 cups fresh small broccoli florets
2 (5-ounce cans) water-packed tuna, drained
1 cup cherry or grape tomatoes, halved
3/4 cup sliced black or green olives
3 scallions, white and light green parts only, sliced crosswise
For the Dressing:
1/2 cup (115 milliliters) mayonnaise
1/4 cup (60 milliliters) olive oil
1 tablespoon white wine vinegar, or rice vinegar
1 teaspoon Dijon mustard, optional
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Cook pasta according to package directions in boiling salted water.
  • For the last minute of cooking, add the broccoli florets.
  • Drain noodles and broccoli.
  • Rinse immediately under very cold running water and drain well.
  • In a large bowl, combine the pasta and broccoli with the tuna, tomatoes, olives, and scallions.
  • In a small bowl, mix the mayonnaise, olive oil, vinegar, mustard (if using), salt and pepper.
  • Beat with a whisk for a creamy-textured dressing.
  • Just before serving, pour dressing over tuna-pasta salad and mix well.

8 ribs celery from the heart with leafy tops, chopped
6 plum tomatoes, chopped
One 15-ounce can chick peas, drained
1 medium onion, chopped
A handful flat-leaf parsley leaves, coarsely chopped
1/2 cup pitted black olives, coarsely chopped
Two 6-ounce cans Italian tuna, drained
2 lemons
1/3 cup olive oil
Salt and freshly ground black pepper

Steps:

  • In a bowl combine celery, tomatoes, chick peas, onions, parsley and olives. Flake tuna and add to the salad. Dress salad with juice of 2 lemons and about 1/3 cup olive oil. Season the salad with salt and pepper and toss.

This is one of those salads where I say, "The longer it sits, the better it gets." You'll often find this cool and creamy pasta salad at my family's get-togethers.

One 12-ounce package tri-color bow-tie pasta
Kosher salt and freshly ground pepper
1 stalk celery, cut into large chunks
1/2 red bell pepper
1/2 red onion
Three 5-ounce cans solid white tuna in water, drained
3 hard-cooked eggs, peeled and chopped
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon white vinegar
2 teaspoons Miss Brown's House Seasoning, recipe follows
1/2 cup sweet pickle relish
Chopped fresh curly parsley, for garnish (optional)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • Cook the pasta in boiling salted water according to the package directions. Drain and run under cold water to cool, then drain again. Transfer to a serving bowl.
  • While the pasta cooks, pulse the celery, bell pepper and red onion in a food processor until finely minced. Add to the serving bowl along with the tuna and eggs.
  • Stir together the mayonnaise, mustard, vinegar, House Seasoning and relish in a small bowl. Pour over the pasta salad and toss gently to combine. Season with salt and pepper. Garnish with chopped fresh parsley before serving, if desired.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.

This recipe is great for those of us that "eyeball" (as opposed to measuring) ingredients. Very healthy, heavy on the veggies and lots of good fat from the E.V.O.O. This salad is ideal for camping, the beach, pot lucks, packed lunches, picnics, etc. as it has no mayo and therefore travels gracefully. Not to mention it is DELICIOUS. Try this salad- you will be addicted instantly and your body will thank you for it!!

1 lemon, for zest and juice
4 -6 garlic cloves, minced, crushed, pressed, whatever is your method
extra virgin olive oil (I probably use 1/3-1/2 C. when I make this)
1/2-1 bunch basil, finely chopped
salt and pepper
1 (12 ounce) package uncooked pasta
1 red bell pepper
1 green bell pepper
2 -4 stalks celery
1/2 red onion
1 cup sliced pepperoncini pepper (more or less ( )
1 (13 7/8 ounce) can (chopped or 1 small sliced olive)
4 (6 ounce) cans tuna (in water or oil, drained)

Steps:

  • Cook the pasta according to directions, drain, and set aside (I cook them while I chop the veggies). Zest the lemon into the bowl. Squeeze the lemon's juice into the bowl (tip: zap the lemon in the microwave for 5 seconds and then roll it on the counter with your palm to get more juice out of it). Add the garlic and basil. Add the olive oil (I base my "correct" amount of E.V.O.O. based on the consistency of the dressing- I like it to be about the consistency of salsa). Whisk everything together (and take a big whiff while you're at it- you'll think you've died and gone to heaven). Start chopping the veggies as chunky or fine as you want. Throw them in the bowl with the dressing as you go. When you're done with the veggies, add the pepporicini slices and olives. Then add the well drained tuna and mix everything together just until the dressing is totally incorporated. Now is a good time to adjust the seasonings and/or olive oil, so take a taste test and make your additions (or don't) accordingly. Finally, when the pasta is reasonably cool, add it in gradually and mix thoroughly (and as gently as possible). Let it chill in the fridge for a couple hours and enjoy!

250g wholemeal penne
240g bio yogurt
2 tsp English mustard powder
2 tbsp extra virgin olive oil
4tsp apple cider vinegar
1 red onion, finely chopped
handful of basil leaves, finely chopped
320g tuna in spring water
2 red peppers, deseeded and diced
340g can sweetcorn, drained

Steps:

  • Boil the pasta for 10 mins until al dente, then drain and rinse under cold running water. Drain again. Meanwhile, mix the yogurt, mustard, olive oil, vinegar, onion and basil together in a large bowl, then stir in the tuna, red peppers and sweetcorn.
  • Stir through the pasta and serve in bowls or pack into containers for work or a picnic. Will keep, covered, in the fridge to eat the next day.
