TUNA AND CORN FRITTERS
These little fritters - or 'tuna pancakes' as my 5 year old calls them, are fast and nutricious - and loved by big and little people alike - especially my very fussy 5 year old. You can even can add sweet chilli sauce and some fresh coriander to give them an Asian flavour.

Steps:
- Mix all the ingredients together in a bowl.
- Heat up a frying pan.
- When the pan is hot, spoon the mixture in heaped spoonfuls into the pan.
- Cook in batches for about 3 minutes each side, or until both sides are golden brown.
- Remove from the pan, and continue cooking in batches.

- Prepare and bake cornbread according to package directions, using a greased 8-in. cast-iron skillet. Cool on a wire rack., In a small bowl, combine the tuna, mayonnaise, celery, onion, egg, dill, salt and pepper. Cut cornbread into 6 pieces; top each with 1/4 cup tuna mixture and a slice of cheese. , Broil 4-6 in. from the heat until cheese is melted, 2-3 minutes. Top with tomato and avocado.

I was looking for something a little different for an appetizer to serve at a party. These were a bit of a hit to Tuna and non Tuna lovers alike. I made mine in patty pans and got about 24, but the recipe says to use muffin pans. N.B. The recipe is for Tuna in springwater but I was unable to list springwater!

Steps:
- Cut 4 each 10cm circles from each pastry sheet.
- Place pastry circles into a greased 12 cup medium muffin tin.
- Combine creamed corn, eggs, chives and sour cream and season with salt and pepper.
- Spoon mixture into pastry cases and sprinkle with cheese.
- Bake in a preheated oven at 200ºC for 20-25 minutes.

TUNA CORNBREAD CAKES
I love tuna and am always looking for new ways to fix it. This recipe uses the herb-and-garlic-flavored tuna chunks. It is from Southern Living and is credited to Sherry Little of Sherwood, AR. Haven't tried it yet, but it sounds yummy!

- Preheat oven to 425 degrees.
- Stir together cornbread mix and 2/3 cup milk. Pour batter into a lightly greased 8-inch square pan.
- Bake at 425 degrees for 15 minutes or until golden brown. Cool on a wire rack 5 minutes or just until warm.
- Stir together mayonnaise and next 5 ingredients in a large bowl.
- Crumble cornbread to equal 2 cups. Reserve remaining cornbread for another use. Fold cornbread crumbs and tuna chunks into mayonnaise mixture until well blended. Shape tuna mixture into 8 patties.
- Melt 3 tablespoons butter with vegetable oil in a large skillet over medium-high heat. Add tuna patties, and cook in batches, 2-3 minutes on each side or until golden brown; drain on paper towels.
TUNA & SWEETCORN SLICE

- Heat oven to 220C/200C fan/ gas 7. Lay the pastry out on a baking sheet. Pinch up the edges to form a border, pressing firmly into the corners. Prick the centre all over with a fork and pop in the oven for 10-15 mins.
- Meanwhile, mix the tuna and sweetcorn in a bowl and season.
- Remove the pastry from the oven, pressing the centre down with the back of a fork, as it will have puffed up a bit. Spread the crème fraîche across centre, spoon the tuna mix on top, then sprinkle over the cheese. Bake for 10-15 mins more, until golden, puffed up and cooked though. Sprinkle with chives and cut into quarters.

CREAMY TUNA AND MASHED POTATO PIE
Quick and easy if you use pre prepared stuff, not as quick but just as easy if you do it all from scratch. It is up to you the type of cheese sauce and the kind of mashed potatoes you use, spice it up, or leave it simple. This is loved by kids and adults in my house. - Pour into a shallow baking dish (I use a round non stick cake pan).

- Heat oven to 200C/180C fan/gas 6. Fry onion, garlic, potatoes and carrots in oil for 5 mins until softening. Add peppers, paprika, herbs and tomato purée, and cook for 5 mins.
- Add stock, bring to the boil, then simmer until stock is absorbed and vegetables are tender. Add the tuna.
- Roll a quarter of the pastry into a 22cm circle. Roll remaining pastry to line a 22cm loose-bottomed tin, allowing the pastry to come over the edges of the tin.
- Fill with the tuna mix and top with the pie lid. Brush the edges with egg then fold over the sides and press down with a fork to seal. Make two holes in the top, brush with egg and bake for 35-40 mins until golden brown. Leave to cool slightly, then serve.
