8 trout fillets, skin on (about 2 pounds)
1 1/4 teaspoons olive oil
Coarse salt and ground pepper
1 lemon, quartered and seeded
2 tablespoons butter
2 tablespoons slivered pitted olives
1 tablespoon small capers, drained and rinsed

Steps:

  • Heat broiler. Place trout fillets, skin side down, on two baking sheets. Lightly rub top of fish with oil; season with salt and pepper. Broil one sheet at a time, 4 inches from heat; cook until fish is opaque and flakes with a fork, 6 to 8 minutes.
  • In a small skillet over high heat, cook lemon wedges until browned on all cut sides, 1 to 2 minutes. Remove, and set aside.
  • Reduce heat to medium; melt butter until lightly brown with a nutty aroma, about 1 minute. Remove from heat. Add olives and capers; toss to coat. Immediately spoon sauce over fillets. Squeeze lemon wedges over top, and serve.

4 teaspoons olive oil, divided
4 (5-ounce) sea bass fillets (or other white fish)
1 small onion, diced
1/2 cup white wine
1 cup canned low-sodium diced tomatoes, with juice
1/2 cup chopped pitted black olives
2 tablespoons capers
1/4 teaspoon dried crushed red pepper, optional
2 cups packed fresh baby spinach leaves
Salt and pepper

Steps:

  • In a large nonstick skillet, heat 2 teaspoons of oil over a medium-high heat. Add fish and cook until opaque in the center, about 2 1/2 minutes per side. Transfer the fish to a platter and tent with foil to keep the fish warm.
  • Heat the remaining 2 teaspoons of oil in the same skillet; add onion and saute for 2 minutes. Add the wine and cook until reduced by half, about 2 minutes. Add the tomatoes, olives and capers and crushed red pepper, if using, and cook for 3 minutes more. Stir in the spinach and cook until it is wilted, about 3 minutes. Season with salt and pepper. Spoon the sauce over the fish and serve.

1/4 cup cornmeal
1/2 teaspoon paprika
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 cup dry vermouth or 1/2 cup white wine
2 tablespoons chopped nicoise olives
2 tablespoons capers
2 tablespoons chopped parsley
1 1/2 tablespoons lemon juice
1/2 teaspoon cornstarch
1/4 teaspoon salt
1 clove garlic, minced

Steps:

  • Combine corn meal, paprika and pepper, stir well.
  • Dredge fish in corn meal mix.
  • Heat oil in a large skillet and cook trout over medium-high heat about 2 minutes on each side.
  • Remove from skillet and place on paper towel.
  • Combine vermouth and the next 7 ingredients in skillet: stir until well blended.
  • Bring to a boil over medium-high heat and cool 1 minute or until slightly thickened.
  • Spoon over fish fillets.
  • Serve with white rice.

For this full-flavored weeknight dinner, fish fillets are baked with a quickly assembled tomato sauce flavored with olives, capers, garlic and oregano. Baking the fish in the sauce makes it difficult to overcook, and has the convenient benefit of being served with simply boiled potatoes.

6 tablespoons extra-virgin olive oil
4 6-ounce snapper or black sea bass fillets, pin bones removed
Kosher salt and freshly ground pepper
1 small white onion, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
2 bay leaves, preferably fresh
1 28-ounce can diced fire-roasted tomatoes with green chiles
1/2 cup pimiento-stuffed green olives, roughly chopped
2 tablespoons capers in brine, drained
1 pound baby Yukon Gold or red-skinned potatoes, quartered
Chopped fresh cilantro, for serving

Steps:

  • Preheat the oven to 425˚ F. Rub the bottom of a 9-by-13-inch baking dish with 1 tablespoon olive oil. Season the fish on both sides with salt and pepper; place skin-side down in the dish.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat until shimmering. Add the onion and cook, stirring occasionally, until tender and lightly browned, about 5 minutes. Add the garlic and cook until softened, about 30 seconds. Add 1/2 teaspoon oregano and the bay leaves and stir to combine. Add the tomatoes, olives, capers and a pinch of salt and bring to a simmer. Cook, stirring occasionally, until just slightly thickened, about 3 minutes.
  • Pour the tomato mixture all over the fish. Bake until the fish is cooked through, 12 to 15 minutes.
  • Meanwhile, put the potatoes in a medium saucepan and cover with water by 1 inch; season with salt. Bring to a boil, reduce to a steady simmer and cook until very tender, 10 to 12 minutes. Drain and toss with the remaining 2 tablespoons olive oil and 1/2 teaspoon oregano; season with salt and pepper.
  • Divide the fish among plates. Spoon the tomato mixture over the top and sprinkle with chopped cilantro. Serve with the potatoes.

4 thick trout fillets
100g butter
squeeze lemon juice
handful parsley , leaves chopped
2 tbsp caper , rinsed

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Rinse the fish, then pat dry with kitchen paper. Put in a roasting tray, season, then dot with a third of the butter. Roast for 10-12 mins.
  • When the fish is almost ready, melt the remaining butter in a frying pan. Turn up the heat until it turns brown. Take off the heat, then add lemon juice, parsley and capers. Pour over the fish, then serve with green beans.

I have been in search of a Spaghetti Puttanesca that I could fix at home that compares with one they used to serve at Florentines. Add a few shrimp and this one comes very close. It is from "Cooking with Grace" (Grace Pilato) and it is oh so good (I can hardly think of capers and Kalamata olives without salivating!).

2 tablespoons extra virgin olive oil
1 1/2 ounces anchovy fillets
1 small yellow onion, chopped
4 garlic cloves, finely chopped
2 (28 ounce) cans whole Italian plum tomatoes, seeded and chopped (drained)
4 tablespoons tomato paste
1 cup dry white wine
4 tablespoons capers, drained ("whole" "or" coarsely chopped, as desired)
10 -15 kalamata olives, pitted and coarsely chopped
6 fresh basil leaves, chopped
1/2 teaspoon red pepper flakes (as desired)
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 lb penne rigate or 1 lb fusilli
freshly grated parmigiano-reggiano cheese or romano cheese

Steps:

  • Heat large skillet over medium-high heat.
  • Add oil.
  • When oil is hot, add the anchovies.
  • Mash the anchovies in the olive oil and sauté for 45 seconds.
  • Add the onion and sauté for 2 minutes, until tender.
  • Add the garlic and sauté for another 2 minutes.
  • Add the seeded, chopped tomatoes, tomato paste and wine.
  • Bring to a boil and boil for 2 minutes.
  • Reduce heat to medium and add capers, olives, basil, red pepper flakes, salt and pepper.
  • Simmer, uncovered for 25 to 30 minutes, stirring occasionally, until thickened.
  • Taste for seasoning and adjust spices accordingly.
  • Cook the pasta according to package directions.
  • Drain pasta and toss with sauce.
  • (If sauce gets a little too thick, spoon in a little water from the pot you are cooking the pasta in).
  • Sprinkle with grated cheese.

When I was first dating my husband, we went to a small restaurant in Moss Landing and I had this dish. The sweet tomatoes, sour lemon and salty olives and capers are wonderful with the halibut. The chef was kind enough to list the ingredients for me. What I didn't remember exact amounts for, I improvised and it's close enough for me to what I had that day! If you can't get good cherry tomatoes, use any tomato chopped small. I've also subbed half the olive oil for stock when I'm feeling dietetic and that's good too. Not AS good, maybe, but good!

1/3 cup fresh lemon juice
2 teaspoons Dijon mustard
1/2 cup olive oil
1 cup cherry tomatoes, quartered
1/2 cup kalamata olive, pitted, chopped

2 lbs halibut steaks (for four pieces) or 2 lbs halibut fillets (for four pieces)

Steps:

  • Preheat oven to 400.
  • Mix lemon and mustard blend in oil 'til emulsified (I love my immersion blender!). Stir in tomatoes, olives, capers, salt & pepper.
  • Put the fish in a baking dish just large enough to hold them in one layer and pour the tomato mixture over it.
  • Cook the fish in middle of oven until just cooked through--depending on the thickness of your fish, it can vary from 10-20 minutes.
  • Stir in parsley, and serve fish with the sauce. Freshly ground black pepper is great, but the capers and olives usually have enough salt to carry the dish.
  • Excellent on angel hair pasta!

5 tablespoons extra-virgin olive oil, plus some extra for the pan and fish
24 ounces sole fillets
kosher salt, to taste
fresh ground black pepper, to taste
14 ounces plum tomatoes, drained
1 small onion, halved and sliced
15 -20 pitted kalamata olives, sliced in half
2 tablespoons capers, drained
1/2 cup flat leaf parsley, coarsely chopped
1/4 cup dried breadcrumbs

Steps:

  • Preheat your oven to 400 degrees F.
  • Lightly brush a 1 1/2 quart oval gratin dish (or something similar in size) with olive oil.
  • Lay the fish out on your work surface skin side up. Drizzle with a bit of olive oil and season with a little bit of salt and pepper, to taste. Fold the fillets in half (thick end over thin) and lay them right down the center of the prepared gratin dish, slightly overlapping.
  • Crush the drained tomatoes through your fingers into a bowl. Stir in 3 T. of the olive oil, the onion, olives, capers and pepper to taste. Stir in the parsley and spoon some of the mixture right over the fish, letting some of the sauce to fall to the sides.
  • Toss the remaining 2 T. olive oil with the bread crumbs until they are evenly moist and then scatter them over the fish.
  • Bake until the fish is cooked through and the crumbs get crispy and brown - about 25 minutes.

2 tablespoons extra-virgin olive oil
4 trout fillets
2 tablespoons dried Italian seasoning

1 yellow bell pepper, thinly sliced
2 medium onions, thinly sliced
3 anchovy fillets, chopped
2 tablespoons chopped kalamata olives
4 tomatoes, seeded and chopped
1 tablespoon drained capers
1 bunch Italian flat leaf parsley, chopped
2 tablespoons medium-dry white wine

Steps:

  • Place potatoes in a medium pot and fill with enough lightly salted water to cover. Bring to a boil, and cook until fork-tender, about 8 minutes. Drain, cover, and set aside.
  • While the potatoes are cooking, heat the extra virgin olive oil in a large skillet on medium high. Rinse the trout fillets and pat dry. Season the trout with the dried Italian seasoning and salt and pepper. Gently place the trout in the heated oil and pan fry without moving the fillets for 10 minutes.
  • Carefully turn the fillets. Arrange the bell pepper and onions on top of the trout and cook for 5 minutes. Then, place the anchovies, olives, tomatoes, capers, and parsley on top of the fillets. Pour in the white wine and simmer for an additional 5 minutes. Serve the trout and vegetables on a bed of steamed potatoes.
