TROPICAL OATMEAL-MANGO CAKE

Number Of Ingredients 15

9 tablespoons butter, softened
1 cup plus 2 tablespoons granulated sugar
1 cup rolled oats (not instant)
1 1/2 cups flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
Pinch of salt
1 2/3 cup dark brown sugar
2 eggs
1 teaspoon vanilla extract
1 cup finely diced mango
2/3 cup chopped pecans
1/4 cup heavy cream
1 cup shredded unsweetened coconut

Steps:

  • Use about 1/2 tablespoon butter to grease a 10- to 11-inch springform pan. Dust with 2 tablespoons sugar. Heat oven to 350 degrees.
  • Place oats in dry skillet, and toast until light brown. Transfer to bowl, and add 1 1/4 cup hot water. Set aside. Sift flour with cinnamon, nutmeg, baking soda and salt.
  • Mix 1 cup granulated sugar and 1 cup brown sugar in bowl of electric mixer. Beat in eggs until smooth and mixture falls back in a ribbon when beater is lifted. Fold in vanilla, softened oats and mango. Fold in flour mixture.
  • Transfer batter to pan, place in oven and bake for 45 minutes, until cake tester comes out clean and surface is lightly browned. Remove from oven. Turn on broiler.
  • Mix pecans with remaining butter and remaining brown sugar. Stir in cream, and fold in coconut. Gently spread this mixture on top of cake.
  • Place cake under broiler, and broil until surface is bubbly and lightly browned. Watch carefully so topping does not burn. Transfer cake to rack, and allow to cool before removing sides of pan.

3/4 cup sugar
3/4 cup firmly packed brown sugar
3/4 cup butter, softened
1 teaspoon vanilla
2 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 cups rolled oats
1 cup coconut
1 (3.25-oz.) jar macadamia nuts, coarsely chopped (about 2/3 cup)
1 (7-oz.) pkg. diced dried tropical fruits and raisins

Steps:

  • Heat oven to 375°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour and baking soda; mix well. Stir in oats, coconut, nuts and dried fruits.
  • Drop dough by rounded tablespoonfuls 2 inches apart onto sprayed cookie sheets.
  • Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

This tropical-inspired smoothie is packed with fiber (6 grams per serving), thanks to the fruit and the clever addition of rolled oats. Feel free to take a tip from us and add oats-and fiber-to your favorite smoothie, too.

1/2 cup old-fashioned rolled oats
1 small banana, peeled and broken into 4 pieces
1 1/2 cups plain unsweetened coconut milk beverage
Juice of 1/2 small lemon (about 1 tablespoon)
1/2 teaspoon pure vanilla extract
Kosher salt
3/4 cup frozen unsweetened mango cubes
3/4 cup frozen unsweetened pineapple cubes
Fresh pineapple wedges, for garnish

Steps:

  • Add the oats to a blender, cover and blend to a fine powder. Add 2 ice cubes, banana, coconut milk, lemon juice, vanilla and 1/8 teaspoon salt, cover and blend until smooth. Add the mango and pineapple, cover and blend until smooth, at least 1 minute.
  • Pour the smoothie into two large chilled glasses and garnish with a pineapple wedge.

Number Of Ingredients 16

1/2 cup unsalted butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon baking soda
1 tablespoon molasses
1 cup mango puree
1/2 teaspoon vanilla
2 cups flour
1/8 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 cup sweetened flaked coconut
1/2 cup white semisweet chocolate chunk
1 cup chopped macadamia nuts

Steps:

  • Preheat oven to 350 degrees.
  • Peel the mangoes and cut off the pulp around the seed. Put in a food processor and puree.
  • Using an electric mixer, cream together butter and sugar until fluffy. Beat in egg. Stir in baking soda, fruit puree and vanilla and molasses.
  • Stir together the dry ingredients until well combined. Gradually add to the butter and sugar mixture. Mix coconut and Macadamia nuts. Stir into the cookie batter using a wooden spoon.
  • Drop by teaspoonfuls onto greased cookie sheets, flattening with a fork to make a criss-cross pattern.
  • Bake 12-15 minutes or until done.
