BROWN AND WILD RICE MEDLEY

Wild rice seems to add elegance to any dish or meal, but I find that many people prefer it to be mixed with brown rice to vary the taste. Little hands on time makes this a great addition to any meal.

Number Of Ingredients 11

1 Cup Brown Rice
1/2 Cup Wild Rice
3 Cups Chicken Broth (Low sodium preferred)
1 teaspoon Kosher Salt
1 Large Shallot (Minced)
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/2 teaspoon Ground Cumin
1/2 Cup Toasted Pecans (or pistachios, chopped)
2 Whole Green Onions (Sliced, green and white parts)
3 Tablespoons Unsalted Butter

Steps:

  • In skillet or saucepan add both rices, chicken broth and salt, bring to a boil. Reduce heat to low and cover. Simmer for 30 minutes.
  • Meanwhile mince the shallot. Combine the spices of garlic powder, onion powder and cumin. At 30 minutes stir the spice mixture and shallot into the rice and quickly return the cover so as to not let too much steam out.
  • Continue to cook for 10-15 minutes more or until the broth is mostly absorbed. Remove from heat, leave the lid on and let it continue to steam for 10 minutes.
  • Fluff and add chopped toasted pecans (or pistachios), green onions (reserve some green onions to top dish at the very end, just for looks) and butter. Mix and then add salt and pepper to taste.

1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/8 teaspoon cayenne pepper
1 pound beef top sirloin steak, cut into 3/4-inch cubes
1 tablespoon canola oil
1/4 cup sliced celery
1/4 cup julienned green pepper
2-1/4 cups water
1 package (6 ounces) long grain and wild rice mix
1 small tomato, chopped
2 tablespoons chopped green onion

Steps:

  • In a small bowl, combine the garlic powder, thyme and cayenne. Sprinkle over beef., In a large saucepan coated with cooking spray, cook beef in oil until no longer pink; drain. Stir in celery and green pepper; cook 2 minutes longer or until vegetables are crisp-tender. Stir in the water and rice mix with contents of seasoning packet. , Bring to a boil. Reduce heat; cover and simmer for 23-28 minutes or until rice is tender. Stir in tomato; heat through. Sprinkle with onion.

WILD RICE PILAF

Number Of Ingredients 6

3 tablespoons unsalted butter, divided
1/2 cup chopped yellow onion
Kosher salt
2 cups pure wild rice (10 to 12 ounces)
1/4 cup finely chopped scallions, white and green parts (2 scallions)
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan, add the onion, and cook over low heat for 5 to 10 minutes, until translucent. Add 5 cups of water, 2 teaspoons of salt, and the wild rice. Bring to a boil, reduce the heat to very low, and simmer, covered, for 50 minutes to 1 hour, until the rice is tender. Drain well.
  • Place the drained rice in a bowl, add the remaining tablespoon of butter, the scallions, 1 1/2 teaspoons salt, and the pepper. Taste for seasonings and serve hot.

WILD RICE WITH MUSHROOMS



Wild Rice With Mushrooms image

In Wisconsin, wild rice is truly wild, not cultivated as in other states, the tassels rising and swaying over rivers, lakes and floodplains come late August and September. Called manoomin by the local Chippewa, it is a protected crop that can be harvested only by state residents holding a valid license. And only by hand, as the Chippewa have always done, using wooden flails gently (the grains should fall from the stalk without great effort) from canoes propelled by paddles or push poles. Shellie Holmes of Rhinelander, Wis., who shares her recipe here, likes to cook wild rice just until it pops open. This is a break with her family's tradition, which favored a chewier texture and did not allow popping. "Do not mix with other rice," she urged, lest you lose the flavor of the wild.

8 ounces long-grain Wisconsin wild rice
8 tablespoons (1 stick) butter
1 pound cremini or button mushrooms, sliced
1/2 teaspoon salt, more to taste
Black pepper, to taste
1/3 cup dry sherry, such as Dry Sack (do not use cream sherry)

Steps:

  • Bring 5 cups water to a boil. Stir in rice, then reduce heat so liquid is just simmering. Cover and cook until grains just begin to pop, about 40 minutes. Drain excess liquid from rice and set aside.
  • Meanwhile, melt 4 tablespoons butter in a large skillet over medium-high heat. Add half the mushrooms and cook, stirring occasionally, until they have released their liquid and are golden brown, about 8 minutes; remove to a plate. Repeat with remaining butter and mushrooms.
  • Return all the mushrooms to the skillet and season with the salt and pepper, to taste. Very carefully add sherry to deglaze the pan, and cook until most of the liquid has evaporated but mushrooms are still moist.
  • Mix mushrooms into prepared rice and season again with salt and pepper.

BISTRO BLEND RICE MEDLEY (MIX)

This "gourmet" combination of various grains is sold in bulk at our local Winco, but it dawned on me later after having purchased the mix of course, that I could buy the grains individually and make a homemade version. Which in turn meant I could reduce the cost. Light bulb moment! Please help me decide if I should classify this as a stolen recipe...? ;) If you have difficulty locating the red rice (I found a bag at our local Asian market), substitute Wehani, short grain brown rice or similar unhulled rice. Great for gift giving: place 2 cups of the mix in a canning jar or similar container, print out or hand write the cooking instructions, attach bow or raffia and the instructions to the container.

1 cup wild rice (black)
1 cup wheat berries

Steps:

  • Combine ingredients in a bowl and transfer to an airtight container.
  • To prepare: Place 2 cups of filtered water and 1 cup of the rice/grain mix in a saucepan. (Note: stock or broth can replace the water, depending on your menu.).
  • Bring water to boil, reduce heat and simmer 50 minutes.
  • Once rice is cooked, remove pot from the burner and set aside, covered for 15 minutes.
  • If desired, season with salt and pepper. If you want to stir in a little bit of extra virgin olive oil to the rice, be my guest.

2 tablespoons butter
1/4 cup finely chopped shallot
1 (7 ounce) box new orleans style long grain and wild rice (Zatarain's)
1 1/2 cups water
1/2 cup dry white wine
1/2 teaspoon dried thyme
1 (8 ounce) can water chestnuts, drained and coarsely chopped
1 cup frozen mixed vegetables, medley (peas, carrots, corn, green beans)
1 cup chopped red bell pepper
2 tablespoons chopped fresh parsley

Steps:

  • In medium saucepan, melt butter over medium-high heat.
  • Add shallot; cook stirring occasionally until shallot wilts, about 2 to 3 minutes.
  • Add rice mix, water, wine and thyme; bring to a boil.
  • Reduce heat, cover, and simmer until rice is tender and liquid is absorbed, about 20-25 minutes.
  • Stir in water chestnuts, vegetable medley, and red bell pepper; cook stirring occasionally until heated through, about 2 to 3 minutes.
  • Place in serving bowl and garnish with parsley.
