This tropical-inspired smoothie is packed with fiber (6 grams per serving), thanks to the fruit and the clever addition of rolled oats. Feel free to take a tip from us and add oats-and fiber-to your favorite smoothie, too.

1/2 cup old-fashioned rolled oats
1 small banana, peeled and broken into 4 pieces
1 1/2 cups plain unsweetened coconut milk beverage
Juice of 1/2 small lemon (about 1 tablespoon)
1/2 teaspoon pure vanilla extract
Kosher salt
3/4 cup frozen unsweetened mango cubes
3/4 cup frozen unsweetened pineapple cubes
Fresh pineapple wedges, for garnish

Steps:

  • Add the oats to a blender, cover and blend to a fine powder. Add 2 ice cubes, banana, coconut milk, lemon juice, vanilla and 1/8 teaspoon salt, cover and blend until smooth. Add the mango and pineapple, cover and blend until smooth, at least 1 minute.
  • Pour the smoothie into two large chilled glasses and garnish with a pineapple wedge.

Splenda sugar substitute (optional) or sugar (optional)

Steps:

  • Cook oatmeal in microwave or stovetop as you normally do.
  • While cooking, slice up banana: 1/4-inch slices, cut into four pieces.
  • When oatmeal is done, add coconut extract and banana. If desired, add a sweetener and/or milk to thin oatmeal.

I love oatmeal and came up with this recipe to use up leftover crushed pineapple. I don't always add the banana because I like the punchier flavor without it. However, to make it truly "tropical" you'll want to add it :)

1/2 cup orange juice (I use the kind with calcium added)
1/4 cup skim milk
2 tablespoons dried cranberries (or raisins)
1/2 small banana, cut into chunks
1 dash cinnamon
1/4 cup crushed pineapple

Steps:

  • Combine oats, orange juice, milk, banana, cranberries, and cinnamon in a microwave safe bowl.
  • Cook at high power for 1 minute, stir.
  • Cook for another minute at high power, stir again.
  • Add the crushed pineapple, stir, and enjoy.
