2 cups oats (regular or quick cooking)
2/3 cup reduced fat peanut butter (or regular)
1/4 cup honey
1/2 cup crushed pretzels
1/4 cup chocolate chips (mini chips work best)
2 tsp water (only if needed)

Steps:

  • Stir together the oats, peanut butter, and honey.
  • Crush the pretzels in a ziploc bag until they are in small pieces.
  • Add the crushed pretzels and chocolate chips to the mixture.
  • Form into balls. If the mixture is not sticking together for you, add water, 1 tsp at a time, until it does.
  • Place in the refrigerator for about 30 minutes. Store in an airtight container.

4 ounces cream cheese (softened)
1 cup creamy peanut butter
1 tsp vanilla extract
1 cup powdered sugar
1 cup crushed pretzels
½ cup mini chocolate chips
1 cup semi-sweet chocolate chips
16 oz chocolate candy coating (CandiQuik, Ghirardelli melting wafers, etc.)
chocolate sprinkles (crushed peanuts, crushed pretzels (optional))

Steps:

  • Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, beat cream cheese until nice and fluffy.
  • Add peanut butter and beat until combined.
  • Add vanilla extract and continue beating just until incorporated.
  • Stir in powdered sugar, crushed pretzels and mini chocolate chips. (You can use your hands here to really work it all together. It's actually much faster. Likewise, you could put it all in stand mixer and mix it that way as well.)
  • Shape into 1-inch balls and place on prepared baking sheet. (You will need to give them a good squeeze in your hand before rolling into balls.)
  • Refrigerate for one hour or freeze for 15 minutes.
  • Combine chocolate chips with candy coating and melt according to package directions. (30 second intervals on high, stirring in between, usually does the trick.)
  • Dip balls into melted chocolate, and place back on parchment-lined baking sheet.
  • Sprinkle with chocolate sprinkles, crushed peanuts, or crushed pretzels if desired.

2 cups creamy peanut butter
3 cups powdered sugar
3 cups crispy rice cereal, more for garnish
2 cups chocolate chunk, preferably dark, for coating

Steps:

  • In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
  • Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
  • Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
  • Using your hands, roll the mixture into approximately 30-40 1-inch balls (2 ½ cm). Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
  • In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
  • Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
  • Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.

1 1/2 cups confectioners' sugar
1 cup plus 1/4 cup smooth peanut butter
1 1/2 cups milk chocolate chips

Steps:

  • In a medium bowl, add the melted butter, pretzel crumbs, confectioners' sugar and 1 cup of the peanut butter and stir together until well combined. Press the mixture evenly into the bottom of an ungreased 9-by-13-by-2-inch baking dish. Combine the chocolate chips and the remaining 1/4 cup peanut butter in a microwave-safe bowl. 3 cups brown rice, puffed
1 cup roasted unsalted peanut
2 cups pretzels, crushed, plus more for topping
¾ cup honey
1 cup brown sugar
¼ teaspoon kosher salt
¾ cup chocolate chips, divided

Steps:

  • Line a 9x13-inch (22 x 33) cm baking dish with parchment paper.
  • In a large bowl, mix together the popcorn, puffed rice, peanuts, and pretzels.
  • In a small pot over medium-high heat, combine the honey, brown sugar, and salt. Cook until the brown sugar dissolves, stirring frequently to avoid burning, 2-3 minutes. Let the mixture to come to a low boil for 1-2 minutes, stirring constantly, then remove the pot from the heat.
  • Pour the honey and brown sugar mixture over the popcorn mixture. Using a rubber spatula, stir until the dry ingredients are well coated and beginning to stick together.

1 cup peanut butter (smooth or crunchy)
2 cups milk chocolate chips
1 cup pretzel (crushed into little pieces)
3 cups crispy rice cereal (rice crispies)

Steps:

  • In a double boiler or microwave (on 50 % power, in a large bowl) melt the chocolate and peanut butter. If microwaving, start with a minute and then add additional time (30 secs at a time, mixing in between) until melted. Be careful not to burn the chocolate.
  • Mix in the pretzels and rice cereal until everything is coated and well incorporated.
  • Drop by the teaspoonful onto a lined cookie sheet and place in the fridge. Once hardened, you can transfer to a bag or container. These are best stored in the fridge.

  • Line an 8- or 9- inch square baking pan with foil.

1 1/2 cups graham cracker crumbs
1 cup pecans, finely chopped
1 cup flaked coconut
1 lb confectioners' sugar
1 teaspoon vanilla
12 ounces peanut butter
2 ounces paraffin wax
12 ounces semi-sweet chocolate chips

Steps:

  • Melt the butter and mix in the finely ground graham crackers, nuts, coconut, confectioner's sugar, vanilla, and peanut butter.
  • Roll about 80 walnut-sized balls and place on wax paper lined tray.
  • Melt the paraffin and chocolate chips in top of double broiler; mixing well.
  • Keep mixture warm while dipping balls. Insert toothpick to dip and remove toothpick when placed on tray.
  • When finished dipping put tray in freezer to set.
