Tropical Fudge Food
TROPICAL FUDGE
This has no chocolate in it, so perhaps it should just be tropical candy, but oh well! :) Time listed doesn't include cooling time.

Steps:
- Grease an 8 inch square cake pan. Combine the evaporated milk, sugar and pineapple juice in a saucepan. Heat to 238F (soft ball stage), stirring constantly.
- Remove from heat and stir in the butter until melted. Let stand - without stirring - until completely cool.
- When cool, add candied fruit and lemon juice. Beat until crystallized.
- Pour into prepared pan and score top with knife in 1 inch squares. Let sit until hardened.

Steps:
- Add milk to dry pudding mix in large bowl. Beat with wire whisk 2 min. or until well blended. Gently stir in 2 cups of the whipped topping.
- Place half of the cake cubes in bottom of 2-1/2-qt. straight-sided serving bowl. Spoon half of the pudding mixture over cake cubes; top with half of the fruit. Repeat layers. Top with remaining 1 cup whipped topping and the coconut.
- Serve immediately. Or, cover and refrigerate until ready to serve. Store leftover dessert in refrigerator.
