TROPICAL BANANA SPLITS

Steps:
- In a small saucepan, bring 1/2 cup cream just to a boil. Remove from heat and add chocolate. Let stand 2 to 3 minutes; stir to combine.
- In a medium bowl, whip remaining 1/2 cup cream with sugar until soft peaks form. Set aside.
- Peel bananas, and split lengthwise; divide among 4 sundae dishes. Top with a scoop (1/4 cup) each of mango, coconut, and raspberry sorbets. Drizzle each sundae with chocolate sauce; top with whipped cream, nuts, and a cherry. Serve immediately.

- Combine first 4 ingredients in medium bowl. Let stand 5 minutes.
- Place 2 banana pieces in each of 4 dishes. Top with 1 scoop of each sorbet. Spoon over fruit and juices. Sprinkle with coconut, if desired.
LIGHT TROPICAL BANANA PUDDING
Cornstarch-thickened pudding, also known as cheater's pudding, creates the same thick, luscious texture as homemade custard with almost none of the fat. A coconut-milk beverage subbed in for regular milk lends a subtle tropical flavor in this classic Southern dessert.

Steps:
- Put the coconut milk and butter in a medium saucepan over medium-low heat, stirring gently to melt the butter and heat the milk.
- Whisk together the sugar, cornstarch and 2 tablespoons water in a separate bowl to create a thick paste. Gently whisk into the milk and increase the heat to medium. Cook, stirring often, until thick and bubbly, 10 to 12 minutes.
- Remove from the heat and stir in the vanilla extract. Let cool to room temperature, then transfer to a bowl and cover with plastic wrap, pressing the wrap directly against the surface. Refrigerate until set, 3 to 4 hours.
- Beat the whipping cream with an electric mixer until stiff peaks form.
- Arrange a layer of half of the banana slices on the bottom of a 9-inch pie dish. Add a layer of half the pineapple followed by half of the coconut pudding and a layer of half of the wafers. Top with some whipped cream and repeat to make a second layer.
- Top with the remaining whipped cream and the toasted coconut flakes. Cover and refrigerate for at least 8 hours or up to overnight before serving.

- Mix together well the flour, sugar, baking powder and salt. Set aside.
- Mix together egg, milk, oil and bananas.
- Mix the flour mixture into the egg mixture and blend well .
- Cook the pancakes on medium high setting until both sides are golden brown.
- After the pancakes are cooked, put ice cream on top of pancake, then add chocolate syrup, bananas and whipped cream. Add nuts and yum yum! One is enough though.

TROPICAL FRUIT FOSTER SPLIT

- In heavy, 12-inch skillet over moderately high heat, melt 4 tablespoons butter and brown sugar, stirring, until sugar dissolves, about 4 minutes. Add mango and pineapple and sauté until coated with butter, about 1 minute. Add bananas and sauté until coated with butter, about 1 minute.
- Pour rum into pan, but do not stir into sauce. Allow rum to heat, about 1 minute, then tilt pan away from you and use long match to carefully ignite sauce. Let sauce burn, swirling skillet to prolong flame, until it dies out, about 1 to 2 minutes. Using slotted spoon, remove bananas from pan, place, cut side up, on plate, and sprinkle with sugar.
- Pour cream and coconut extract into pan and bring to boil. Reduce heat and simmer, uncovered, until thickened, about 3 to 4 minutes. Keep warm.
- In large, nonstick skillet over moderately high heat, melt remaining 2 tablespoons butter until foam subsides. Add bananas, cut side down, and sauté until golden brown, about 4 to 5 minutes. Remove from heat.
- Into each of 4 chilled bowls, scoop 1/3 cup ice cream. Place 3 pieces banana in each bowl. Divide mango and pineapple among bowls. Spoon sauce over fruit and garnish with wafer cookies if desired. Serve immediately.
BANANA SPLIT IN A JAR
From yahoo group. Recipe description: NOTE: Serve over ice cream with whipped cream and chocolate syrup! This also makes a great spread on toast or topping for pancakes or waffles, pound cake or cheesecake, and everything else you can think up. If you don't like any of the specific classic banana split fruits, of course you can leave it out and increase the other fruits, or replace it with something else. If you don't like walnuts, use pecans, or no nuts at all. I added banana rum because I had it. You could use another rum, or leave that out altogether.

Steps:
- Mix lemon juice into bananas immediately after mashing to retain the fresh color then combine all the fruit and the pectin in a big pot.
- Bring to a boil, stirring frequently. Add sugar (and a dab of butter to reduce foaming). Bring to a rolling boil; boil hard one minute. Remove from heat and add nuts and rum (if using).
- Ladle into jars leaving a 1/4 inch headspace.
- Process in a boiling water bath for 10 minutes. Adjust time according to your altitude.
