2 cans (16 ounces each) chocolate fudge frosting, divided
1 large egg, room temperature
1 cup chunky peanut butter
1-1/2 cups all-purpose flour

Steps:

  • Preheat oven to 375°. Reserve 1 can plus 1/3 cup frosting for topping cookies. In a large bowl, mix egg, peanut butter and remaining frosting until blended. Stir in flour just until moistened., Drop dough by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Flatten with a fork dipped in sugar., Bake until set, 7-9 minutes. Remove from pans to wire racks to cool completely. Spread with reserved frosting.

This fudge is a total triple threat -- thanks to peanut butter chips, crunchy peanut butter and chopped roasted salted peanuts. Using sweetened condensed milk, makes it quick and easy to achieve a thick, fudgy texture without cooking raw sugar; no candy thermometer required! Cut the fudge into small squares and share it with family and friends as a delicious edible gift.

Nonstick cooking spray
One 14-ounce can sweetened condensed milk
2 1/2 cups peanut butter chips (from two 10-ounce bags)
4 tablespoons unsalted butter
1/4 teaspoon kosher salt
3 tablespoons crunchy peanut butter
3 tablespoons white chocolate chips
2 tablespoons chopped roasted salted peanuts

Steps:

  • Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides. Lightly coat with cooking spray.
  • Combine the sweetened condensed milk, peanut butter chips butter and salt in a medium saucepan. Place over medium-low heat and stir frequently with a rubber spatula, making sure to scrape the bottom, until the peanut butter chips are completely melted, about 5 minutes.
  • When the peanut butter chip mixture is mostly melted, combine the crunchy peanut butter and white chocolate chips in a small microwave-safe bowl. Microwave in 15-second intervals, stirring, until melted, about 1 minute.
  • Spread the melted peanut butter chip mixture into the prepared baking dish. Immediately drizzle the white chocolate mixture on top. Drag a butter knife through the white chocolate to make a marbled pattern on top. Sprinkle with the chopped peanuts. Let cool completely, then cover with plastic wrap and refrigerate until firm, at least 2 hours or overnight.
  • Using the foil, lift the fudge out of the baking dish and cut into 16 small squares. Best serve chilled.

These Triple Threat Chocolate Fudge Peanut Butter Cookies are heavenly! They are jam-packed with lots of chocolate and peanut butter to give you an explosion of incredible flavor.

2 cups all-purpose flour
1/2 cup dark cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter (at room temperature)
1/2 cup peanut butter
1 ½ cups sugar
2 eggs
2 teaspoons vanilla extract
4 ounces semi-sweet chocolate (melted)
2/3 cup milk chocolate chips
2/3 cup peanut butter chips

Steps:

  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter, peanut butter and sugar on medium speed until light and fluffy, about 3 to 4 minutes. Add eggs, one at a time, scraping down the sides of the bowl as needed. Add vanilla and beat until combined. Reduce speed to low and add flour mixture, beat to combine. Add melted chocolate and beat until combined. Fold in milk chocolate chips and peanut butter chips. Transfer the dough to a sheet of plastic wrap, wrap it up and refrigerate 3 to 4 hours.
  • Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper.
  • Roll a heaping tablespoon of dough into a 1½-inch ball and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart.
  • Bake until cookies are set in center and begin to crack, about 10 minutes. Let cookies cool on sheets for 2 minutes before transferring cookies to wire racks to cool completely.

They're thick (almost 1/2") and dense, crisp around the outside edge, a firm "chew" as you get away from the edge, "lip smacking" rich, peanutty, and not too salty. They not only taste great, they look great too...golden brown and slightly crinkled on top.--described perfectly by a poster on another board. YUMMY! is all I need to add.
