1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
3 cups old-fashioned oats
1/2 cup chopped dried apples

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Let stand for 1 minute before removing to wire racks.

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine butter, oats, sugar, apple, flour, cinnamon, and salt. Stir in eggs.
  • Drop dough by rounded tablespoons, 3 inches apart, onto parchment-lined baking sheets and gently flatten with damp fingers. Bake, one sheet on a time, until edges are golden, 10 to 12 minutes, rotating sheet halfway through. Let cool completely on sheets on wire racks.

1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup shortening
¾ cup white sugar
2 eggs
1 cup rolled oats
1 cup diced apple without peel
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.

My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

Number Of Ingredients 12

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar
1/8 teaspoon ground cinnamon
Kosher salt
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 cups oats
1 1/4 cup confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
  • In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
  • Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
  • Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
  • To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.

1/4 cup all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon salt
1 tablespoon beaten egg white
2 ounces bittersweet chocolate, finely chopped

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Melt the butter with the sugar in a saucepan over low heat, stirring, until the mixture thickens and the sugar is almost dissolved, about 5 minutes. Transfer to a large bowl and stir in the oats, flour, vanilla and salt. Let cool 10 minutes, then stir in the egg white.
  • Drop 6 rounded tablespoonfuls of batter onto each prepared baking sheet, about 3 1/2 inches apart. Spread each mound into a 3-inch circle. Bake, switching the position of the pans halfway through, until golden brown, 12 to 15 minutes. Let cool on the baking sheets until firm, about 3 minutes, then carefully remove using a thin metal spatula and transfer to a rack to cool completely.
  • Put the chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Drizzle on the cookies and let set, about 30 minutes.

One 17.5-ounce oatmeal cookie baking mix

Steps:

  • Line a baking sheet with parchment paper. Break or chop the apples in the filling into bite-size pieces. Scoop heaping tablespoons of the filling onto the lined baking sheet. Place in the freezer until completely frozen, about 1 hour.
  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Prepare the cookie mix according to package instructions and chill in the fridge about 10 minutes.
  • Remove the pie filling from the freezer. Slightly dampen hands with cool water and wrap each mound of frozen filling in 2 tablespoons of cookie dough, making sure to completely enclose the filling. Place the cookies on the lined baking sheet spaced about 2 1/2 inches apart, and freeze 15 minutes.
  • Bake the cookies until the edges are golden brown and crispy and the centers still look soft, about 18 minutes. Allow the cookies to cool on the baking sheet for 2 minutes before moving to a plate, then serve immediately.

1 cup quick oats (not instant)
1/2 teaspoon salt
1 teaspoon baking soda

2 teaspoons grated lemons, zest of (from 1 medium lemon)
1 cup packed dark brown sugar
3/4 cup salted butter
1 large egg
1/2 cup unsweetened applesauce
1/2 cup honey
1 medium apple, peeled,cored and finely chopped (about 1 cup)
1 cup raisins (about 6 ounces)

Steps:

  • Preheat the oven to 300 degrees F.
  • In a bowl, combine the flour, oats, salt, baking soda, cinnamon, cloves and lemon zest.
  • Mix well with a wire whisk and then set it aside.
  • Cream the butter and sugar together in a large bowl with an electric mixer.
  • Add the egg, applesauce and honey, and beat at medium speed until smooth.
  • Add the flour mixture, fresh apple and raisings.
  • Blend at a low speed until just combined.
  • Don't overmix it, and don't worry, it's supposed to be a soft dough.
  • Drop the dough by rounded tablespoons on to ungreased cookie sheets (I like to cover the sheets in parchment paper).
  • The cookies should be spaced about 1 ½ inches apart.
  • Bake for 18-22 minutes, or until the bottoms are golden.

1/4 cup flour
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 375.
  • Beat sugar and butter until well blended.
  • Beat in flour, vanilla and salt.
  • Stir in oats.
  • Form into a ball. (See photo).
  • Cover and refrigerate cookie dough 1 hour.
  • Line 2 baking sheets with parchment paper.
  • Roll dough by tbsp full between palms into one inch balls. (I cut the dough ball into 24 equal portions, and then roll each portion into a ball.).
  • Place dough balls on baking sheets, spacing 1 1/2 inches apart (cookies will spread during baking).
  • Using bottom of drinking glass as aid, flatten cookies to 1 1/2-inch rounds. (See photo).
  • Bake until cookies are golden brown, about 12 - 13 minutes, turning the cookie sheet once mid-way through baking.
  • Let cookies rest on sheets 1 minute.
  • Using spatula, transfer cookies to a rack and cool completely.
