TRIPLE SEC CRANBERRY RELISH

1 (12-ounce) bag fresh cranberries
1 Granny Smith apple, peeled, cored, and diced
1 cup sugar
1/2 cup Cointreau or Grand Marnier orange liqueur
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Grated zest of 1 lemon
Grated zest of 1 orange

Steps:

  • In a medium saucepan over medium heat, combine the cranberries, apple, sugar, Cointreau, 1/2 cup water, the cinnamon, and cloves, and bring to a boil. Reduce the heat and simmer until the cranberries start to pop, about 10 minutes. Remove from the heat, stir in the grated zests, and chill.

1/4 cup sugar

1/2 cup dried cherries
3 tablespoons marmalade
2 tablespoons fresh orange juice
1 tablespoon orange zest
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon

Steps:

  • Combine cranberry juice concentrate and sugar.
  • Bring to a boil over medium heat.
  • Stir until sugar is dissolved.
  • Add cranberries and cherries and cook until cranberries pop and cherries soften.
  • Stir often for 10 minutes.
  • Remove from heat and stir in rest.
  • Cool in fridge.

6 tablespoons butter
1 cup graham cracker crumbs or 1 cup corn flake crumbs
1 tablespoon sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup water
1 (3 ounce) package strawberry gelatin
1 pint strawberry ice cream, softened
1 (10 ounce) package frozen sliced strawberries, thawed

Steps:

  • Melt butter in saucepan; stir in corn flake crumbs or graham cracker crumbs.
  • Stir in sugar, vanilla, and almond extract. Press half of crumb mixture into an 8-inch square baking dish.
  • Heat water to boiling in a medium saucepan.
  • Remove from heat and stir in gelatin for a minute, until dissolved.
  • Stir in softened ice cream and thawed strawberries.
  • Pour into prepared pan.
  • Sprinkle remaining crumb mixture over top. Chill for 2 hours, until firm. Cut into squares to serve.

1 (3 ounce) package strawberry Jell-O gelatin dessert
1 cup boiling water
1/2 cup orange juice, from concentrate
1 (12 ounce) package cranberries, chopped (fresh or frozen)
1 medium apple, peeled and chopped
1 1/2 cups sugar
1/2 cup chopped pecans

Steps:

  • Dissolve jello in boiling water.
  • Stir in orange juice.
  • In a seperate bowl, combine cranberries, sugar, and apple.
  • Add cranberry blend to jello mixture.
  • Stir in pecans.
  • Pour into 1 1/2 qt serving dish. Refridgerate for at least 4 hours or overnight.

6 ounces cream cheese, room temp
2 tablespoons mayonnaise
2 tablespoons sugar
1 (14 ounce) can whole cranberry sauce
1 (9 ounce) can crushed pineapple, drained
1 (8 ounce) carton Cool Whip, thawed

Steps:

  • Put cheese, sugar, mayo in bowl, blend with hand mixer. Add pineapple and cranberry sauce to mixture, beat until well blended. Fold in the Cool Whip. Pour into 8x8 glass dish (don't use metal). Put in freezer overnight. Cut into 2x4 pieces. Let stand at room temp 15 minutes before serving. It can be refrozen.

1 cup frozen cranberry juice cocktail concentrate, thawed

3 tablespoons orange marmalade
2 tablespoons fresh orange juice
2 teaspoons minced orange peel
1/4 teaspoon ground allspice

Steps:

  • Combine cranberry juice concentrate and sugar in heavy medium saucepan. Bring to boil over high heat, stirring until sugar dissolves. Add fresh and dried cranberries and cook until dried berries begin to soften and fresh berries begin to pop, stirring often, about 7 minutes. Remove from heat and stir in orange marmalade, orange juice, orange peel and allspice. Cool completely. Cover; chill until cold, about 2 hours. (Can be made 3 days ahead. Keep refrigerated.)
