STEAKS IN GARLIC LIME MARINADE (PALOMILLA)
Adapted from Steve Raichlen's The Barbecue! Bible. This is a quick, easy marinade that makes an amazing grilled steak. The key to making this REALLY fast is to use a thin cut steak and only cook it for a couple of minutes on each side. I serve with grilled vegetables and rice for a complete meal. Prep time includes 30 minutes of marinating in the fridge.

Steps:
- Combine all ingredients except for the steaks in a food processor or blender. Process until the mixture is a smooth liquid paste.
- On a plate or in a zip top bag, combine 1/2 of the marinade with the steaks, making sure the meat is well coated. Let sit in the refrigerator for 1/2 hour. Reserve the remaining marinade.
- Grill the steaks over high heat, 2-3 minutes per side, basting if desired with the remaining marinade.
- Remove to a serving dish, brush with any remaining marinade, and serve.
GRILLED SKIRT STEAK WITH GREEN AND SMOKEY RED CHIMICHURRI

- For the green chimichurri: Combine the parsley, mint, oregano, canola oil, vinegar, red pepper flakes and garlic in a food processor and process until smooth.
- Put the steak in a large baking dish, add the green chimichurri and turn to coat. Cover and refrigerate for at least 4 hours and up to 24 hours. Remove the steak from the marinade and place on a plate 30 minutes before grilling.
- For the red chimichurri: Using a mortar and pestle, combine the parsley, olive oil, vinegar, oregano, chipotle, paprika, red pepper flakes, garlic and some salt and pepper.
- Preheat a charcoal or gas grill to high heat.
- Sprinkle the steaks with salt and pepper on both sides. Grill until charred on both sides and cooked to medium-rare doneness, about 5 minutes per side. Remove from the grill and let rest on a cutting board for 5 minutes. Cut the meat across the grain into thin slices, top with the red chimmichurri and garnish with parsley leaves.

- combine the soy sauce, brown sugar, olive oil, cider vinegar, ketchup and garlic powder in a bowl.
- Pat dry the steak tips, and place in a large sealable plastic bag. Pour the marinade into the bag, and seal. Gently toss the steak in the marinade, then refrigerate.Marinate the steak tips for at least an hour prior to cooking.
- Remove the steak from the fridge 30 minutes prior to grilling time to complete the marinating time and bring the steak closer to room temperature.
- Preheat a grill to medium high. Take the steak tips out of the marinade bag, letting the excess marinade drop back into the bag. Place the steak on the grill, and cover.

- In a large bowl, whisk together all of the marinade ingredients until completely combined. Add the steak tips and green onions. Toss to coat. Cover and refrigerate for at least 30 minutes (or overnight).
- When ready to cook, allow the steak to sit on the counter and come to room temperature while you prepare the grill.
- Brush the grates of the grill with oil (to prevent sticking) and place the steak tips directly on the grill. Grill for about 4 minutes on each side for medium-rare steak, 5 minutes for medium, and 6 minutes for medium-well. Total cooking time will vary depending on the size and thickness of your steak. For medium-rare, you’re looking for an internal temperature of 130-135 degrees F; for medium steak a temperature of 135-145 degrees F; for medium-well steak a temperature of 145-155 degrees F.
