TRINIDADIAN-STYLE CHICKEN

6 cloves garlic, chopped
2 shallots, coarsely chopped
Bunch green onions, trimmed and chopped
Bunch fresh flat-leaf parsley, leaves and stems coarsely chopped
1/2 cup vegetable oil
1 (3-pound) whole chicken, cut into pieces
1 cup sugar
1/4 cup vegetable oil
1/2 white onion, cut into small dice
1 green chile, seeded and halved lengthwise, optional
1 unripe plantain, halved lengthwise and chopped
4 plum tomatoes, chopped
1/4 cup Worcestershire sauce
1/2 cup chicken stock
Kosher salt
1 cup fresh cilantro leaves

Steps:

  • For the marinade: Place the garlic, shallots, onions, parsley, and vegetable oil in a food processor, and puree. Transfer the garlic mixture to a container, and set aside. For the chicken: Put the chicken pieces in a bowl and add half of the Amise marinade, cover, and marinate in the refrigerator for a maximum of 24 hours. In a wide-based pan, heat the sugar and vegetable oil over medium-high heat. Swirl the glaze until the sugar caramelizes and browns, approximately 7 to 10 minutes. As soon as the sugar caramelizes, add the chicken pieces, in one layer skin-side down and brown the chicken on all sides, about approximately 5 minutes. Add the onion, chile, plantain, tomatoes, and Worcestershire sauce to the pan, and stir. Pour in the chicken stock, and bring the ingredients to a boil. Add in the reserved marinade and reduce the heat to medium. Cook for 30 to 40 minutes, and season the dish with salt, to taste. Turn off the heat. Transfer the chicken to a serving plate and garnish with the cilantro leaves just before serving.

This is the real callaloo the way it's made in Trinidad. This callaloo is not considered a soup but rather a side dish used with the Sunday lunch. If you can get the real ingredients wherever you are you are going to really ENJOY this dish. Serve on rice, boiled provisions, macaroni pie, potato salad....Caribbean foods are best for this dish. All ingredients can be prepped before and stored in the refrigerator at least two days before.

1 bunch dasheen leaves (root vegetable of the Caribbean or tarrow root)
15 okra (soft tips, cut into 1 inch pieces )
2 stems chives (chopped coarsely)
1 onion (medium, sliced)
1 sprig thyme (stem and leaves)
1 bunch celery (chopped roughly)
1 garlic clove (crushed)
1 whole hot pepper
1 pimentos (chopped)
2 1/2 cups coconut milk (freshly squeezed, coconut milk powder or frozen can be used)
1/4 lb salted pork tail (adding pig tail is optional. Boil out salt 30 mins in water until tender and cut in to 1inch pieces)
1 teaspoon sugar
2 teaspoons salt

Steps:

  • Separate leaves from stems. Thoroughly wash leaves and strip the stems. Tear leaves apart with hands into smaller pieces. Chop stems into about 2 inches length.
  • Add all the ingredients into a medium pot over medium heat. Bring to a boil and then allow to simmer for 20 mins or until the okra seeds turn pink.
  • Taste and season with salt & pepper if necessary.
  • When the callaloo is done the leaves and okras should be tender and there should be enough liquid to blend the ingredients. If not add a little warm water to bring to a soup consistency.
  • Remove from heat and allow to cool for 15 minutes. Remove the pork tails before blending.
  • Using a hand blender, blend the callaloo until all the ingredients are pureed.
  • Store in a clean pot with pork tails and reheat before serving.
  • Serve with rice, stewed Caribbean chicken, potato salad, boiled provisions, cole slaw, pigeon peas and macaroni pie.

These delicious snacks are served on the side of the road down Trinidad way. Kind of like the Fast Food of the Caribbean. This recipe comes from the book A Taste of the Tropics by Jay Solomon, since I could not get anyone to share their secret recipe.

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup oil
1 cup water
1 tablespoon butter, melted
2 tablespoons butter, melted
3 garlic cloves, minced
1 small red onion, diced
1 large sweet potato, scrubbed and diced
1 1/4 cups water
2 tablespoons curry powder
1 teaspoon hot sauce (Caribbean style)
1/8 teaspoon salt
1 (16 ounce) can chickpeas, drained
2 tablespoons butter, melted
4 garlic cloves, minced
1/2 cup red onion, diced
1 scotch bonnet peppers or 1 jalapeno pepper, seeded and minced
2 tablespoons curry powder
2 teaspoons hot sauce (Caribbean style)
1 teaspoon coriander, ground
1/2 teaspoon salt
4 cups pumpkin flesh or 1 (20 ounce) canned pumpkin
2 cups water
1 lb boneless chicken, cooked and diced

Steps:

  • Combine the dry ingredients in a mixing bowl. Gradually add the oil and water while mixing and kneading the dough, Set the dough aside for 15 minutes.
  • Divide the dough into 6 equal-sized balls. Flatten each slightly and roll out into 8 inch squares.
  • Fill the middle of each square with about 1/2 cup of filling mixture. Wrap the dough around the mixture to seal the filling inside.
  • To cook the roti, place the butter in a skillet over high heat until it sizzles. Reduce the heat to medium and place the rotis in the pan.
  • Cook for 2-3 minutes, until the crust is light brown. Turn with a wide spatula and continue cooking. Repeat the process with the remaining rotis. Serve immediately.
  • SWEET POTATO FILLING: Place the butter, garlic, and onion in a deep skillet and sauté for 3-4 minutes over medium heat. Add the potato, water, curry powder, hot sauce, and salt and cook for 15 minutes, until the potatoes are soft but not mushy. Add the chickpeas and cook another 5-10 minutes, stirring occasionally. Set the filling aside.
  • CHICKEN FILLING: Place the butter, garlic, onion and pepper in a deep skillet and sauté for 3-4 minutes over medium heat. Add the curry powder, hot sauce, coriander, and salt and sauté for another 2 minutes. Add the pumpkin and water and cook over medium heat for 20 minutes, stirring occasionally. Stir in the chicken and simmer for another 5 minutes. Set aside.

1 ½ cups uncooked brown rice
1 cup coconut milk

Steps:

  • Cook sugar in a large saucepan over medium heat until it begins to caramelize. Stir in the beef, and cook until well browned. Bring the water, coconut milk, rice, pigeon peas, and carrot to a simmer; cover and cook until rice is done, about 25 minutes. Stir in parsley to garnish.

  • Doubles. Doubles is undeniably the most popular street food on the island. It resembles a vegetarian sandwich. This food is made up of 2 baras (pieces of fried dough), filled with channa (chickpea), topped with various sauces such as pepper sauce, cilantro sauce, tamarind sauce, and coconut chutney, grated cucumber, or kuchela.
  • Aloo Pie. Aloo pie is a long fried pocket filled with spiced mashed potato (aloo is the Hindi word for potato). The potato is cooked with chadon-beni and garlic.
  • Saheena. Saheena is mouthwatering and, without doubt, one of the most loved street foods in the country. It is also a popular Divali (the Hindu festival of lights) dish.
  • Pholourie. Another popular street food on the island is Pholourie. These fried blobs are made from a batter of chickpea flour seasoned with garlic, onion, tumeric, peppers, and then deep-fried.
  • Chow. Fruits are abundant on the island of Trinidad – there is always a fruit in season. Nevertheless, as with all their food, Trinbagonians need it to be spicy.
  • Bake and Shark. Bake and shark is two pieces of fried dough filled with a fried fillet of shark. However, it’s all about the toppings. The combinations are endless: mustard, ketchup, pepper sauce, sliced cucumber, sliced pineapple, tomatoes, lettuce, mayonnaise, or chadon-beni sauce can all be added.
  • Gyro. Yes, you read that right, Trinidadian Gyro. There is a Syrian/Lebanese population in Trinidad, thus, it was only natural that their favorite meal made it to the food scene of Trinidad and Tobago.
  • Souse. Souse is made from either chicken feet or pig’s trotters with cucumbers marinated in lime juice, onion, and peppers. At first, it does not have the most appealing look, especially when one sees bony feet sticking out of the pot.
  • Barbecued Pigtail. People on this island don’t believe in wasting any sort of meat. Therefore, pigtail is part of its tradition and islanders can turn these cheap cuts into delicious meals.
  • Black Pudding. To clarify, it is not a pudding in the least bit! It is a sausage made with pig’s blood, local herbs, and various spices. It is mostly eaten with the local bread, called hops, or by itself (on a sheet of wax paper) with pepper sauce, of course.
