CLASSIC PASTA SALAD (FOR A CROWD)



Classic Pasta Salad (for a crowd) image

This classic pasta salad is made with a tri-color rotini, filled with vegetables and cheeses, and coated in a scratch-made vinaigrette. The perfect recipe to feed a crowd.

24 ounces tri-color rotini pasta (uncooked)
1 pint cherry tomatoes (halved)
12 ounces sliced pepperoni
1 red onion (diced)
1 green bell pepper (diced)
16 ounces mozzarella cheese (cubed)
1 cup grated parmesan cheese
8 ounces olives (sliced)
1 1/2 cups olive oil
1/2 cup red wine vinegar
2 tablespoons Italian seasoning
2 teaspoons garlic powder
1 1/2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon red pepper flakes

Steps:

  • Cook pasta according to package directions for al dente pasta. Drain and rinse with cold water until pasta is room temperature. Place pasta in a large bowl.
  • Add cherry tomatoes, pepperoni, onion, bell pepper, mozzarella, parmesan, and olives to the bowl. Set aside.
  • In a separate bowl, add olive oil, vinegar, italian seasoning, garlic powder, salt, pepper, and red pepper flakes. Stir to combine.
  • Pour vinaigrette over pasta salad, then toss to coat. Refrigerate for 1 hour before serving. Pasta salad will keep for 3-4 days, refrigerated in a sealed container. Pasta WILL continue to soak up the dressing the longer it sits, so it may need a splash of olive oil and vinegar if it has been sitting for several hours.

Tri-Color Beet Salad with Cherry Vinaigrette image

Number Of Ingredients 12

2 pounds medium red, golden and striped beets, scrubbed
Extra-virgin olive oil, to coat
Kosher salt and freshly cracked black pepper
1/4 cup dried cherries (reconstituted in 1/4 cup red wine vinegar for 30 minutes)
2 tablespoons balsamic vinegar
1 teaspoon sherry vinegar
1/2 cup extra-virgin olive oil
Kosher salt and freshly cracked black pepper
1 cup chiffonade of kale leaves
2 tablespoons pepitas, toasted
1/3 cup crumbled goat cheese
2 tablespoons chopped fresh mint

Steps:

  • For the beets: Preheat the oven to 400 degrees F. Lay out a large sheet of foil on top of a roasting dish and spread the beets across evenly on the sheet. Drizzle with a little olive oil and season with salt and pepper. Top with another sheet of foil and crimp to seal the edges. Poke holes in the top to allow steam to escape. Place in the oven and roast until the beets are tender, 30 to 45 minutes. Remove from the oven. Allow to cool in the foil pouch before loosening the skins and discarding. Quarter the peeled beets and place in a large bowl.
  • For the cherry vinaigrette: Drain the cherries and roughly chop. Whisk together the vinegars (including the red wine vinegar from the cherries) and cherries while slowly drizzling in the olive oil so it lightly emulsifies. Season with salt and pepper. Set aside until ready to use.
  • For the salad: Toss the warm beets with the cherry vinaigrette. Add the kale, pepitas, goat cheese and mint, continuing to toss. Season with salt and pepper.

This salad by Bobby Flay represents the three colors of the Italian Flag. Very simple to make and the flavors pair well with traditonal Italian dishes.

2 spears endive, washed, dried, and coarsely chopped
1 small radicchio, washed, dried, and coarsely chopped
1/3 lb baby arugula, washed, dried, and thinly chopped
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil
salt & freshly ground black pepper
shaved parmesan cheese

Steps:

  • Combine all 3 lettuces in large bowl and season with salt and pepper, to taste.
  • Whisk the mustard, vinegar, and oil together in a small bowl and season with salt and pepper, to taste. Pour dressing over salad and toss to combine.
  • Top with shavings of Parmesan.

  • Whisk together white-wine vinegar, mustard, and sugar in a large bowl. Slowly whisk in olive oil; season with salt and pepper. Add endive, radicchio, and arugula, and toss until well combined.

Steps:

  • For spice mixture:
  • Mix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)
  • For salad:
  • Whisk oil, vinegar and mustard in large bowl to blend. Season with salt and pepper. Add greens, bell pepper and onion and toss to coat. Divide salad between 2 plates.
  • Spread spice mixture on plate. Coat both sides of steaks with spice mixture. Dip both sides of steaks into melted butter. Heat heavy large skillet over high heat until very hot. Add steaks and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer to cutting board; let stand 2 minutes. Thinly slice steaks crosswise. Arrange slices atop salads. Sprinkle with cheese. Garnish with tomato and serve.

1 green pepper
1 red pepper
1 yellow pepper
1/2 lb. portobello mushroom caps
3/4 cup KRAFT Lite Balsamic Vinaigrette Dressing, divided

Steps:

  • Cut peppers into quarters; place in large bowl. Add mushrooms and 1/4 cup of the dressing; toss to coat. Meanwhile, preheat grill to medium heat.
  • Remove vegetables from dressing; discard dressing. Grill vegetables 8 to 10 min. or until crisp-tender, turning and brushing occasionally with 1/4 cup of the remaining dressing. Slice mushrooms; place in bowl.
  • Add peppers and remaining 1/4 cup dressing; toss to coat.
