Pumpkin Pie Cashew Cream:
½ cup raw cashews
½ cup water
2 cups pure pumpkin puree
2 teaspoons pumpkin pie spice
2 tablespoons pure maple syrup
½ very ripe pear (cored)
pinch of salt
Parfaits
2 cups plain (or naturally sweetened vanilla) coconut yogurt or Greek yogurt
1 cup + ¼ cup your favourite gluten free granola (I used Glutenull Quinoa Granola)
the Pumpkin Pie Cashew Cream

Steps:

  • Prepare the pumpkin pie cashew cream first.
  • Soak the cashews in the ½ cup water for 1 hour minimum, then drain and add to a high speed blender.
  • Add in the pumpkin puree, pumpkin pie spice, maple syrup, pear, and salt and blend until completely smooth.
  • Remove from the blender with a spatula and transfer to a bowl*.
  • Using 4 small jars, add ¼ cup of yogurt to the bottom of each jar.
  • Next, layer ¼ cup granola over the yogurt in each jar.
  • Next, divide the pumpkin pie cashew cream between the 4 jars, layering over the granola.
  • Divide the remaining yogurt between each jar layering over the pumpkin cream, and then finish by topping each jar with 1 tablespoon of the granola.
  • Enjoy!

3 tablespoons pure maple syrup, or to taste
1 teaspoon vanilla extract
1 teaspoon maple extract
1 pinch salt
1 cup pumpkin puree
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
⅛ teaspoon ground nutmeg
⅛ teaspoon ground allspice
1 cup maple nut granola

Steps:

  • Whisk together Greek yogurt, maple syrup, vanilla extract, maple extract, and salt until thoroughly combined. Place 1/2 cup of the maple-yogurt mixture in a separate bowl and set the rest aside.
  • Add pumpkin puree, cinnamon, cloves, nutmeg, and allspice to the 1/2 cup yogurt mixture; whisk until thoroughly combined.
  • Place a small amount of the maple-yogurt mixture in the bottom of 4 small jars or containers. Top with a portion of pumpkin mixture, followed by a layer of maple granola. Continue alternating layers of maple-yogurt mixture, pumpkin mixture, and granola. Serve immediately or cover and keep refrigerated until ready to serve.

3 tablespoons maple syrup
1 teaspoon pumpkin pie spice
3 cups nonfat vanilla Greek yogurt
1 cup granola
4 teaspoons maple syrup

Steps:

  • Mix together pumpkin puree, 3 tablespoons maple syrup, and pumpkin pie spice in a bowl.
  • Spoon 2 tablespoons pumpkin mixture in the bottom of 4 cups or jars. Top each with 1/2 cup yogurt, 2 tablespoons granola, 2 tablespoons pumpkin mixture, 1/4 cup yogurt, and 2 tablespoons granola. Cover cups (or seal jars) and refrigerate until ready to eat. Drizzle with remaining maple syrup before serving.

2 cups plain yogurt
3 tablespoons orange marmalade
3/4 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon sugar
1 (10-ounce) can whole cranberry sauce
2 tablespoons fresh orange juice
2 teaspoons orange zest
2 tablespoons chopped pecans, toasted

Steps:

  • Add the yogurt to a coffee filter or doubled paper towels lined in a fine sieve. Let drain over a bowl for at least 1 hour or up to overnight in the refrigerator. Discard the accumulated liquid on the bottom of the bowl. Add the drained yogurt to the bowl and stir in the marmalade. In a separate bowl, whip the cream with a beater until it begins to thicken. Add the vanilla and sugar and continue to whip until soft peaks just begin to form. Add the cranberry sauce to a medium bowl. Stir half of the cream into the cranberry sauce along with the orange juice and orange zest and mix gently. Add the other half of the cream to the bowl with the yogurt mixture. Layer the yogurt and the cranberry mixtures in 4 parfait glasses or wine glasses, and top with a sprinkle of chopped pecans. Chill before serving.

31/2 cups fresh or frozen cranberries
2 cups sugar
2 cups water

Steps:

  • Zest the orange, then supreme the sections (remove the fruit from the white pith completely). Place the orange zest and sections into a food processor and process 3-4 seconds, it should remain chunky. Place the cranberry mixture, sugar and water in a saucepan. Cover the saucepan and cook on medium-low, stirring every couple minutes, for 15 minutes. Pour into *sterilized canning jars and seal as directed. Label the jars and tie ribbons around them for gift giving.
  • *Follow the directions on your canning jars for sterilization.
