Steps:
- Heat oven to 180C/160C fan/gas 4. Cream the butter and sugar together until well blended and smooth. Gradually beat in the banana, vanilla extract and egg. Add the zest. Mix well with a wooden spoon until thoroughly blended.
- In a large bowl, mix the flour, salt, baking powder, oats, coconut, walnuts and sultanas or chocolate chips. Stir the dry ingredients into the wet and mix thoroughly until a thick dough is formed. Line a baking sheet with parchment. Drop heaped tbsps onto the sheet, leaving a 5cm (2in) space around each one, and press down lightly. Bake for 15-20 mins until lightly browned. Cool.

ORANGE SULTANA SQUARES

Steps:
- Preheat oven to 200 degrees centigrade. Grease a 23cm x 23cm slab tin.
- Squeeze juice from orange and reserve for topping. Mince pulp and rind. Mix together pulp, rind, and sultanas.
- Combine sifted dry ingredients and sugar in bowl of electric mixer, rub in margarine.
- Add 1 cup milk, blend on medium speed for 2 minutes
- Add egg and 1/4 cup extra milk, beat further 2 minutes.
- Fold orange and sultana mixture into batter.
- Pour mixture into greased 23cm x 23cm slab tin.
- Bake at 200 degrees centigrade for 40 to 45 minutes Whilst still warm, sprinkle cake with orange juice, then sprinkle with sugar and cinnamon.

STICKY SULTANA PUDDING

Steps:
- Butter a small microwave-proof pudding basin. In a separate bowl, rub the butter into the flour and baking powder, then stir in the sugar and sultanas. Gradually add the eggs and milk to make a wet cake mixture.
- Spoon into the basin and make a deep hollow in the centre with the back of the spoon. Cover the basin with cling film, pierce with the tip of a knife and microwave on High for 4½-5 mins until well risen and firm to the touch.
- Carefully turn the pud out onto a plate and spoon over a generous amount of syrup. Slice and serve with custard.

ORANGE SHORTBREAD SQUARES

Steps:
- Will need one 10x15x1 inch pan, buttered and lined with buttered parchment or foil.
- Position oven rack in the middle of oven and preheat to 325°.
- In the bowl of an electric mixer fitted with paddle attachment, combine the butter, sugar, extract, zest, and salt; beat on medium speed until very light colored and fluffy, about 10 minutes.
- Add in the flour and mix in on lowest speed.
- Remove the bowl from the mixer and use a large rubber spatula to finish mixing the dough.
- Scrape the dough into the prepared pan and with lightly floured palm of your hands, press into all corners.
- Use the back of a spoon to smooth the top of the dough evenly, if necessary.
- With the tines of a fork, pierce the dough all over at ½ inch intervals.
- Bake the shortbread for about 25-30 minutes, until it is slightly puffed and firm.
- Remove the pan to a rack to cool until the shortbread is lukewarm-not completely cooled.
- Invert the shortbread from the pan onto a cutting board, and remove the paper.
- Using a ruler to mark, then cut the shortbread into 2-inch squares.
- Store between sheets of parchment or wax paper in a tin or plastic container with tight-fitting lid; may freeze for longer storage.

Steps:
- Preheat oven to 350°F.
- In a large bowl, combine 2 cups flour, almonds, 1/2 cup confectioners' sugar, and 1 tsp orange zest.
- Cut in butter until mixture is crumbly.
- Press into bottom of a 13x9x2-inch baking pan.
- Bake for 20 minutes, or until lightly browned.
- In a medium bowl, whisk together sugar, eggs, orange juice, and extract.
- Combine remaining 1/4 cup flour and baking powder and add to sugar mixture, whisking to combine.
- Pour over crust.
- Bake for 20 minutes, or until set.
- Sprinkle with confectioners' sugar, if desired.
- Cut into squares to serve.

- Once cool sift the icing sugar into a bowl and stir in remaining orange zest plus enough juice to make a runny icing. Drizzle all over the cake and scatter with the crushed sugar cubes. Leave to set, then slice into 15 squares to serve.
