Simply the best chicken marinade for any occasion. Works wonderfully on top of a salad.

¼ cup red wine vinegar
¼ cup reduced-sodium soy sauce
¼ cup olive oil
1 ½ teaspoons dried parsley flakes
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
5 skinless, boneless chicken breasts, thinly sliced

Steps:

  • Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.
  • Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
  • Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Keep this grilled chicken marinade on hand for easy weeknight cooking. You'll get juicy chicken every time so you never have to worry about dry chicken again!

1/2 c. extra-virgin olive oil
1/4 c. soy sauce
3 garlic cloves, chopped
1 tbsp. brown sugar
2 tbsp. lemon juice
1 tbsp. dijon mustard
1 tsp. fresh thyme leaves, chopped
1 tsp. kosher salt
1/2 tsp. ground black pepper
4 lb. bone-in chicken pieces, such as drumsticks, thighs, or leg quarters
1 c. marinade
Oil, as needed

Steps:

  • For the marinade: Combine the olive oil, soy sauce, garlic, brown sugar, lemon juice, dijon mustard, thyme, salt, and black pepper in a pint-sized mason jar. Cover and shake well to combine. Use immediately or store in the refrigerator for up to 4 days before use.
  • For the grilled chicken: Place the chicken in a zip-up gallon bag. Add all of the marinade, seal the bag, and refrigerate for 30 minutes (or up to 4 hours).
  • Meanwhile, pre-heat one side of the grill to medium heat, around 350°, and leave the other side unlit. Oil the grill grates well.
  • Remove the chicken from the marinade and pat dry with paper towels. Discard the remaining marinade. Place the chicken skin-side down over the lit side of the grill. Cover and cook until grill marks appear and the chicken easily releases, 6 to 8 minutes.
  • Flip the chicken and transfer it to the unlit side of the grill. Cover and cook until the internal temperature reads 165˚, 35 to 45 minutes more (depending on the size of your chicken pieces). Let rest for 5 minutes, then serve immediately.

1/4 cup fresh lime juice mixed with 1 tablespoon sugar
Salt and 1/4 teaspoon crushed red pepper
2 chickens (each about 3 pounds) cut up
2 cloves garlic, minced
2 tablespoons vegetable oil
1 1/2 cups plain whole milk yogurt

Steps:

  • In a small iron skillet toast the coriander and cumin for a few seconds or until the spices emit a lovely aroma. Remove from heat and cool for a moment. In a small mixing bowl combine the toasted spices with the paprika, lime juice and sugar. Season with 1 teaspoon salt and crushed red pepper.
  • Prick the chicken pieces all over and rub the pieces with half of the lime/spice mixture. Combine remaining half of lime/spice mixture with garlic, vegetable oil and yogurt. Marinate the chicken in the yogurt mixture for 24 hours, turning the pieces on occasion.
  • Preheat the broiler (or heat an outdoor grill) and set the rack 4 inches away from heat source. Remove chicken from marinade and broil, skin side down for about 15 minutes a side or until cooked through and browned. Let rest at room temperature for up to an hour before serving. Or chill and bring back to room temperature before serving.

1 ½ cups water
⅓ cup rice wine
⅓ cup sesame oil
¼ cup soy sauce
2 tablespoons honey mustard
¼ cup brown sugar
2 dashes liquid smoke flavoring
1 (.7 ounce) package dry Italian-style salad dressing mix
1 tablespoon grated orange zest
1 teaspoon ground ginger
2 teaspoons paprika
1 teaspoon fines herbs
1 (4 pound) chicken, skin removed, cut into pieces
6 sprigs fresh rosemary

Steps:

  • In a large shallow dish, combine water, wine, sesame oil, soy sauce, mustard, brown sugar and liquid smoke. Stir in Italian dressing mix, orange zest, ginger, paprika and fines herbs. Place chicken in the dish, and turn to coat. Cover, and refrigerate overnight.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Discard marinade. Grill chicken 15 to 20 minutes per side, until no longer pink and juices run clear. Occasionally place rosemary sprigs on coals to impart a unique smoky flavor to chicken.

1/4 cup balsamic vinegar
2 tablespoons olive oil
1-1/2 teaspoons lemon juice
1/2 teaspoon lemon-pepper seasoning
4 boneless skinless chicken breast halves (6 ounces each)

Steps:

  • In a large resealable plastic bag, combine the vinegar, oil, lemon juice and lemon-pepper; add chicken. Seal bag and turn to coat; refrigerate for 30 minutes. , Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°.
