A favorite vacation spot in Wisconsin-Door County (in the "thumb" of the state)-is known for its abundance of cherry orchards, and that's where this cream pie recipe originated. We think it's a delectable dessert, with a nutty crumb crust, real whipped cream and, of course, cherry pie filling. -Carol Wencka, Greenfield, Wisconsin

CRUST:
1 cup all-purpose flour
1 cup finely chopped walnuts
1/2 cup butter, softened
1/4 cup packed brown sugar
FILLING:
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1/4 teaspoon almond extract
1/2 cup heavy whipping cream, whipped
1 can (21 ounces) cherry pie filling

Steps:

  • In a small bowl, combine the flour, walnuts, butter and brown sugar. Transfer to a 13-in. x 9-in. baking pan. Bake at 375° for 15 minutes, stirring once. Set aside 1 cup of crumbs. While warm, press the remaining crumbs into a greased 9-in. pie plate, firmly pressing onto the bottom and up the sides. Chill for 30 minutes., In a small bowl, beat the cream cheese, confectioners' sugar and almond extract until smooth. Spread over bottom of crust. Gently fold whipped cream into the pie filling; spread over cream cheese layer. Sprinkle with reserved crumbs. Chill for at least 4 hours before serving.

3 cups pitted frozen tart cherries, thawed, drained and patted dry
1 unbaked pastry shell (9 inches)
1 tablespoon butter
1-3/4 cups plus 2 tablespoons sugar, divided
1 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
1 cup sour cream
1 tablespoon lemon juice

Steps:

  • Arrange cherries evenly in the pastry shell. Dot with butter. In a large bowl, combine 1-3/4 cups sugar, flour and salt. Stir in the eggs, sour cream and lemon juice. Spread evenly over cherries. Sprinkle with remaining sugar. , Bake at 400° for 10 minutes. Reduce heat to 350°; bake 30 minutes longer or until topping is set. Cool for 1 hour on a wire rack. Refrigerate for 3-4 hours before cutting. Refrigerate leftovers.

FILLING:
1 unbaked pie crust
3/4 cup sugar
2 Tbsp flour
1 cup Breakstone's Sour Cream
1 egg, well beaten
1/2 tsp vanilla
1/8 tsp salt
2 cups sour Door County cherries
TOPPING:
1/3 cup butter
1/2 cup sugar
3/4 cup flour
1 tsp cinnamon

Steps:

  • Line 9" pie plate with unbaked pie crust. To make filling: combine sugar, flour, Breakstone's Sour Cream, egg, vanilla and salt. Beat until smooth. Fold in sour cherries and pour filling into crust.
  • Cover crust edges with tin foil and bake at 425°F for 15 minutes. Reduce heat to 325°F and bake for additional 30 minutes. While pie is baking, combine topping ingredients and mix well.
  • Remove foil from crust edges and sprinkle topping evenly over pie filling. Return to oven and bake for additional 20 minutes at 325°F.

4 cups tart red cherries, pitted
1 -2 cup butter, melted
1 yellow cake mix, with pudding
1 cup pecans, chopped

Steps:

  • Grease a 9x13 cake pan Preheat the oven to 350 degrees LAYER ONE: Sprinkle the cherries into the pan.
  • LAYER TWO: Sprinkle the dry cake mix over the cherries.
  • LAYER THREE: Drizzle the melted butter evenly over the top of the cake mix.
  • LAYER FOUR: Sprinkle the chopped pecans on top of mixture.
  • Bake for 50 minutes.
  • Serve warm with ice cream or with cool whip.

This recipe is from The Back Street Deli in Eagle, Wisconsin. Eagle is in Door County, and Door County is an area known for its wonderful cherries (and it is among the major producers of cherries in the U.S.)These are a delicious bar just as they are, but they are also great when you put 1/4-1/2 cup of white baking chips on top during the last 5 minutes of baking. Of course, the original recipe calls for Door County cherries, but any sweet cherry may be used (they suggest Bing).

1 1/4 cups flour, divided
1/2 cup butter, room temperature
3 tablespoons confectioners' sugar
1 cup cherries, frozen (do not thaw)
2 teaspoons vanilla extract
2 large eggs
2/3 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup walnuts, chopped

Steps:

  • Preheat oven to 350°F and butter an 8 x 8" square baking pan.
  • BOTTOM LAYER: Combine 1 cup of flour, the butter, and the confectioners' sugar in a bowl.
  • Beat until smooth.
  • Pat mixture into the prepared pan with fingers, and bake for 25 minutes or until golden.
  • TOP LAYER (THIS SHOULD BE MADE WHILE THE BOTTOM LAYER IS IN THE OVEN): In a small bowl, toss frozen cherries with vanilla; set aside.
  • In a large bowl, slightly beat the eggs.
  • Gradually add the sugar and beat until they are thick and light.
  • Add the remaining 1/4 cup flour, baking powder, and salt to the bowl and stir with a spoon until blended.
  • Stir in the walnuts and cherry-vanilla mixture.
  • Immediately spread the cherry mixture over the hot bottom layer and return the pan to the oven.
  • Bake for 25 minutes or until the bars are a deep golden brown.
  • Allow to cool in the pan on a wire rack before serving.

1 tablespoon lemon juice

  • Place cherries in a food processor or blender: cover and process until smooth. Add ginger ale, milk, sugar, lemon juice, and vanilla: cover and process until blended.
  • Pour into bowl: whisk in sour cream until smooth. Cover and refrigerate until thoroughly chilled, about 2 hours.
