Jackies Pound Cake Food
JACKIE'S POUND CAKE
I got this recipe from a great lady I worked with. She would bring the pound cake in for birthdays etc. I never could get over how yummy it was so finally we sat down and she wrote out the recipe for me. When I first made it I was amazed that I actually could make something that good. Hope you like it too.

Steps:
- Beat softened butter, softened cream cheese, and sugar until very, very light and fluffy.
- Add lemon juice and vanilla.
- Add 2 eggs, one at a time.
- Beat well after each addition.
- Alternate the remaining 4 eggs with flour.
- Beat well after each addition and end with flour.
- Pour into greased loaf pan.
- Bake at 350 F for 1 1/2 hours.
- Enjoy!

Not for the faint of heart. This is a rich, robust cake that is easy to prepare and will impress your friends and family. MUCH better than any of the commerically available liquor cakes.

Steps:
- Preheat oven to 325 degrees.
- Mix butter and sugar. Add eggs one at a time. Add in dry ingredients, which should have been mixed together, sour cream and whiskey. Stir in pecans.
- Turn into a greased and floured 10" tube or bundt pan. Bake at 325 degrees for 75 minutes or until a tester or toothpick comes out of the cake clean.
- Cool the cake and pour the icing over the top. Let sit for at least one day. Keep in an airtight container or covered with plastic wrap.

Steps:
- Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
- Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.
