1 tablespoon olive oil
1/4 cup chicken broth
1 tablespoon butter
1 apple
2 tablespoons sugar
1 teaspoon cinnamon
1 teaspoon water

Steps:

  • Prepare apples by peeling and chopping to the size you desire and sprinkling with sugar and cinnamon. If you want an 'applesauce' texture dice the apples, if you prefer a more elegant presentation, you may prefer slices.
  • In a small sauce pan, Simmer cinnamon sugar coated apples in the butter and water until the juices form a glaze.
  • Meanwhile, prepare the chops by cutting through outside fat strip every 1 inch to prevent curling being careful not to cut into the meat, and seasoning chops with salt and pepper.
  • Sauté chops in olive oil, in a skillet over medium-high heat until browned, flip and brown other side (approx 3-4 minutes per side). Remove chops from pan and rest on a platter while you make the compote.
  • Deglaze the skillet with chicken broth being sure to scrape up brown bits from the bottom of the pan.
  • When you have reduce the broth by about 1/2, add the apple mixture and juices release from the rested pork chops and stir until well combine. Season to taste and serve over the pork chops. If wish, you can return the pork chops to the pan to coat before serving.

Juice of 1 lemon
Juice of 1 lime
Juice of 1 orange
1/4 cup fresh fennel sprigs
2 tablespoons kosher or sea salt
Six 8 to 10-ounce bone-in pork chops
2 tablespoons grapeseed oil
2 tablespoons grapeseed oil
2 cups thin-sliced Yukon potatoes
1 cup thin-sliced red onion
1 teaspoon sea salt
1 teaspoon white pepper
2 cups thin-sliced apple, such as Granny Smith or Gala
1 teaspoon hot sauce, such as Tabasco

Steps:

  • For the brine: Blend 8 cups water, the fruit juices, fennel and salt in a large saucepan over medium heat. Simmer for 20 minutes. After heating, remove the brine from the heat, allow to cool. Add the chops and allow to brine for 3 hours and up to 24 hours under refrigeration. (The longer the chops are brined the more salt and fruit flavor will be absorbed.)
  • For the pork: In large saute pan over high heat, add the oil, allow to warm until on the verge of smoking and then add 3 chops to the pan. Reduce the heat and cook for 6 to 7 minutes per side, this should yield a golden brown chop. Repeat the process with the remaining 3 chops. Hold warm until serving
  • For the hash: Return the same pan to medium-high heat and add the oil and the potatoes. Stir the potatoes until softened and browned on the edges, this will take 6 to 8 minutes. Once the potatoes are cooked, add the onions, season with the salt and pepper and continue to cook until the onions have softened, 3 to 4 minutes. Finally, reduce the heat to medium, add the apples and finish cooking for a final 4 minutes. Once cooked, remove from the heat and serve with hot sauce if desired.

4 bone-in pork loin chops, 1- inch thick
Kosher salt
Extra-virgin olive oil
2 onions, thinly sliced
1 pinch crushed red pepper
2 Granny Smith apples, peeled, cored, and sliced
Pinch cinnamon
2 sprigs fresh rosemary, leaves finely chopped
2 cups apple cider

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
  • Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.

1/2 cup thin-sliced (height wise) red or Vidalia onion
1/4 cup thin-sliced bacon
1 cup thin-sliced apple (1/4-inch by length)
1/4 cup white wine, sauvignon blanc or riesling
1/4 cup (1/2 stick) butter, at room temperature
1/2 teaspoon ground nutmeg, optional
1/2 teaspoon turmeric, optional
2 tablespoons grape seed oil
Eight 4-ounce fresh boneless pork loin chops
1 teaspoon ground pepper
1 tablespoon kosher or sea salt
1 teaspoon fresh mint, chopped
Potatoes of choice, for serving

Steps:

  • For the apple compote: In a large saute pan over high heat, add the oil and allow to heat to the verge of smoking. Then add the onions and reduce the heat to medium. Allow the onions to cook, stirring throughout, until light brown in color, about 2 minutes. Then add the bacon and allow to cook until the bacon has begun to brown. Then add the apples. After adding the apples, allow all the ingredients to blend in flavor for a final 2 minutes. Add the wine to deglaze the pan and allow the alcohol to cook off. After reducing the wine, reduce the heat to low and whisk in the butter and optional spices, stirring for 1 to 2 minutes to create a sauce. Finish with the mint and hold warm until serving.
  • For the chops: In large a saute pan over medium-high heat, add the oil and allow to warm. Sprinkle the chops with salt and pepper equally on both sides and add to the warm oil. Allow the chops to brown on the first side for 3 to 4 minutes, and then flip and repeat cooking on the second side for a final 3 to 4 minutes. Once cooked, remove from the pan and serve with potatoes of choice. Finish with the apple compote.

1/2 cup honey
1 cup water
10 juniper berries
2 (6-inch) sprigs rosemary
10 peppercorns
1 bay leaf
2 cloves garlic, smashed
1 (2-pound) rack of pork (pork loin roast with 4 rib bones), frenched (ribs scraped clean of meat and fat), skin-on and scored in a 1-inch diamond pattern
Oil, for pan
1 shallot, chopped
1 Granny Smith apple, peeled and diced
1 Bosc pear, peeled and diced
1/2 cup dried cranberries
1/2 cup orange juice
1/2 cup apple cider
1 tablespoon brown sugar
1 tablespoon Dijon mustard
2 teaspoons chopped fresh rosemary leaves
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Pinch cayenne pepper, about 1/8 teaspoon

Steps:

  • In a small saucepan over high heat, dissolve the salt and honey in a cup of water. Remove the pan from the heat, and add the juniper, rosemary, peppercorns, bay leaf, and garlic. Let steep until the water cools to room temperature, about 20 minutes. Add the brine mixture to a large container with a lid, and add enough very cold water until you have a gallon. Submerge the pork in the brine and cover a lid. Let marinate, overnight, in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Remove the pork from the marinade, rinse and pat dry, Add a coating of olive oil to an oven-safe pan. Sear the pork until all of the sides are a deep golden brown. Transfer the pan to the oven and roast the pork until an instant-read thermometer inserted in the middle, reaches 150 degrees F, about 20 minutes a pound. Remove to cutting board, tent with foil and let rest for at least 15 minutes.
  • While the meat is resting, prepare the compote.
  • Pear Apple Compote:
  • Drain all but 2 tablespoons of fat from the roasting pan. Put the fat in a medium pan and add the shallots. Saute the shallots over medium heat for 5 minutes. Add all of the remaining ingredients, bring to boil. Reduce the heat to medium and cook the mixture until soft and thickened, about 5 to 8 minutes.
  • Transfer the compote to a serving bowl. Carve the pork into individual chops and serve with compote.

A delicious pork chop dish sweetened with apples and cinnamon. It has a bed of caramelized onions and it is delicious. I got this from some recipe cards called Great Meals in Under 30 minutes. My family devours this everytime. It is great with some roasted potatoes. One suggestion, use the largest skillet you have. I use a big cast iron skillet and it is still crowded. I have tried subbing peaches for the apples and liked it, but not as well.

1 tablespoon vegetable oil
1 onion, sliced
1 (20 ounce) can sliced apples (not apple pie filling! Comstock puts out plain sliced apples in water)

I was looking for something new to do with some smoked pork chops and I found a recipe on cooks.com that I altered slightly. The original called for cranberry-apple drink rather than cider. The glaze never really thickened for me, but it the chops were still delicious. I used MacIntosh apples, unpeeled. My kids and husband cleaned their plates and my husband has already requested that I make it again.

1 cup apple cider
1/3 cup maple syrup
2 tablespoons cider vinegar
2 medium red baking apples

Steps:

  • In skillet over high heat, heat chops, cider, syrup, and vinegar till boiling. Reduce heat to medium, cover and cook 15 minutes, turning chops once.

1/2 cup water
1/2 small head of cabbage, shredded

2 apples, cored and cut into thin wedges

  • Trim excess fat from chops and place on unheated broiler pan rack. Broil 5 inches from heat 20 to 25 minutes or until no longer pink, turning once.

  • Rinse pork chops to remove any residue and pat dry with paper towels. Combine the Smokey Rotisserie seasoning, the Roasted Garlic Pepper, and the salt to make a rub. Rub the seasoning into all surfaces of the pork chops and allow to sit covered for 2 hours. (The seasoning will actually begin to "cure" the meat.)
  • Melt butter and oil over medium heat in a large saute pan. Saute the chops for 3 to 5 minutes each side, remove to a platter and keep warm. To the same pan, add the apples and saute until tender. Puree the apples and pan juices in a blender (or you can use an immersion blender if the pot is deep enough).
