FRIED CABBAGE WITH SAUSAGE
This fried cabbage recipe comes together quickly and makes a great lunch! Be sure to brown the sausage nicely for extra flavor. The lowest carb smoked sausage I've found is Hillshire Farms Naturals, but any variety you love will work. Macros are calculated based on 1 carb per 2 ounces of smoked sausage. Steps:
- Slice the smoked sausage into thin rounds.
- Heat 1 tablespoon olive oil in a dutch oven or large, deep skillet over medium heat. Add the sausage to the skillet and cook, stirring often, until sausage is browned on both sides, about 4 minutes.
- Add the onion and garlic to the skillet and cook 3 more minutes to soften onions.
- Add the remaining tablespoon of oil to the skillet along with the cabbage and sprinkle with salt and pepper.
- Cook the cabbage, stirring constantly, until it becomes tender, about 10 minutes.
- Serve immediately.

This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

- In a large pot, add olive oil and sauté onion for about 4 minutes, until it starts to get translucent. Add garlic and sauté for another minute.
- Add chopped cabbage and stir until combined with the onion and garlic. Place lid on your pot and continue cooking for about 20 minutes, stirring occasionally, until cabbage is cooked down and tender.
- Add sausage and seasonings and continue cooking for 5 to 10 minutes, until sausage is warmed through. Serve immediately!

Purchased bag of Cole slaw cabbage saute' with red onions and your favorite sausage. This is a quick and easy meal that I threw together one day when I was not in the mood to cook. I really like cabbage but I live alone so buying a head of cabbage is out of the question...I would eat the whole thing in one sitting...so I started buying the pre-package bag of Cole slaw mix.

Steps:
- Saute the sausage and onion in a skillet until sausage is cooked through.
- Chop the green tomatoes and about a hand full of the Cole slaw mix and add them to the skillet.
- Add the water, cover and turn down low just until the slaw becomes slightly limp. about 5 to 10 minutes. Depends on how you like your cabbage cooked.
- Serve hot.

Steps:
- In a large frying pan, fry bacon until crisp. Remove bacon and drain.
- Add cabbage, butter and water to bacon grease and cook until tender. (Stir occasionally to coat all of the cabbage with bacon grease).
- Stop cooking when the cabbage is still a bit crunchy. Add salt and pepper to taste maybe a little more butter, not much.
- Slice sausage and lay on top of cabbage. Continue to cook a little longer to warm the sausage.
- Crumble bacon over all. Yummmy -- Great with black eyed-peas and cornbread.
