GRILLED ORANGE HERB CHICKEN

Grilled Orange Herb Chicken image

* feel free to use fresh Thyme and/or rosemary instead! You can't go wrong!

Provided by Catherine Katz

Yield 4

Number Of Ingredients 7

2 organic free range whole chicken breasts (skinless, boneless)
Marinade:
Juice of 2 oranges (about ½ cup)
2 Tbsp olive oil
½ tsp dried herbes de Provence*
½ tsp salt
Fresh ground pepper to taste

Steps:

  • Rinse and pat dry the chicken breasts.
  • Place all marinade ingredients in a medium bowl and stir.
  • Add the chicken breasts to the bowl, poke through the chicken with a fork so as let the marinade seep in and stir well to coat. You can keep in the fridge for a couple hours until ready to grill but it is not necessary. You can proceed to the next step.
  • If you want to grill it on your stove top:
  • Use a non-stick grill pan like the one in the photo below and preheat over a high flame until nice and hot, before proceeding. Do not add any oil!
  • Place the marinaded chicken breasts on the Grill pan and grill on each side for 6-7 minutes each (do not fuss with it-- just let it grill on each side and only turn it once!). Discard extra marinade.
  • If your chicken breast is very thick and it's still not cooked through after the allotted time, you can turn off the stove with the chicken still in the pan,and cover it for an additional 5-8 minutes, before slicing. It will keep all the juices and be perfectly tender and cooked through that way!
  • if you want to use your BBQ grill:
  • Prepare your gas grill for direct cooking over high heat (450-550 F).
  • Place the coated chicken breasts on top of the grill (reserve some of the marinade) and close the lid. Set the timer to 5 minutes.
  • When the timer goes off, turn the chicken over using a long-handled grill metal spatula, pour the remaining marinade on top and close the lid again. Set the timer for 5 minutes.
  • When the timer goes off, remove the chicken from the grill.
  • Using a sharp knife, cut each breast in ¼ inch slices at an angle.

GRILLED ORANGE CHICKEN SKEWERS

Grilled Orange Chicken Skewers image

Flame-kissed, sticky and saucy, grilled orange chicken skewers with a rich, citrus-based marinade are delicious, juicy and so tender. The best summer weeknight dinner.

Provided by Sam | Ahead of Thyme

Categories     Chicken

Time 1h26m

Number Of Ingredients 9

3 chicken breasts, boneless and skinless, cut into 1.5-inch thick cubes
1/4 cup Maggi sauce (or soy sauce)
1/4 cup orange juice, freshly squeezed
1 tablespoon orange zest
1 tablespoon vegetable oil
1 tablespoon garlic, minced
1/2 tablespoon white pepper (optional)
1 teaspoon black pepper
1/2 tablespoon cornstarch

Steps:

  • In a medium bowl, combine Maggi sauce (or soy sauce), orange juice, orange zest, vegetable oil, garlic, white pepper (optional), and black pepper. Stir well until combined. Add chicken breast and stir to coat. Cover the bowl with cling wrap and refrigerate for at least 1 hour (or overnight). You can also store the marinated chicken breasts in a sealable ziploc bag.
  • Remove the chicken from the marinade, and reserve the marinade. Thread the chicken onto skewers, adding about 6-7 pieces of cubed chicken breasts for each skewer. If you are using wooden skewers, soak them in water for 30 minutes before you thread the chicken on and grill to stop them from burning.
  • Lightly brush olive oil over grill or grill pan. Preheat the grill over medium high heat for 3 minutes until the oil starts sizzling and shimmering. Place the skewers spaced evenly apart on the grill and grill for 8-10 minutes on each side or until the internal temperature for the chicken reaches 165 F. Do not overlap the skewers at any time to ensure even cooking for all the skewers.
  • Place the reserved marinade into a small cooking pot and heat over medium heat for 2 minutes, until it starts to boil. Add cornstarch and stir continuously with a spoon to dissolve, until the sauce starts to thicken and forms a smooth and thick sauce. You don't need much sauce, a tablespoon is plenty for coating the chicken.
  • Transfer the skewers onto a plate and drizzle with the orange sauce.

GRILLED ORANGE CHICKEN

Grilled Orange Chicken image

Nothing says summer quite like grilling and this orange chicken is the perfect way to celebrate the warm weather.

Provided by Christina

Categories     Entree

Time 25m

Number Of Ingredients 8

2 lbs chicken breasts or thighs (boneless and skinless)
1/4 cup coconut aminos
1/4 cup orange juice
2 tbsp honey (omit if Whole30)
1/2 tsp ground ginger
1/2 tsp salt
1/2 tsp garlic powder
orange zest from half an orange

Steps:

  • If using chicken breasts that are quite thick, slice horizontally to create thin cutlets. This helps us cook the chicken faster and gets us better browning on all sides.
  • Add chicken and all marinade ingredients to a gallon ziploc bag. Squeeze out excess air and zip closed. Lay flat, spreading the marinade inside the bag so that it's distributed evenly around the chicken breasts. Let marinade for a minimum of 1 hour. I prefer to let it marinade for several hours or overnight if possible.
  • Preheat grill to medium high heat.
  • Place your marinated chicken on the grill. Grill for 5-7 minutes, flip, and grill other side for 5-7 minutes or until chicken is cooked through. Cooking time varies depending on the thickness of your chicken.
