Perfect for freezing and taking to holiday cookie exchanges, these Orange Juice Balls are a simple (and delicious) no bake cookie recipe!

Number Of Ingredients 5

1 12 oz box vanilla wafer cookies, crushed
3/4 cup powdered sugar
1/2 cup walnut pieces (or any other chopped nut)
3/4 cup shredded coconut
1/2 cup orange juice concentrate

Steps:

  • Combine ingredients, mixing well until evenly coated.
  • Roll into 1" balls with your hands and place on a wax paper lined baking sheet. Refrigerate for at least an hour.
  • Store in an airtight container and keep refrigerated
  • Freezes well!

My Mom got this recipe from a friend who always makes them for my Dad's company Christmas party. They are easy to make and taste so good. You do have to work quickly with the creamsicle mixture, but they are good! Cooking time is chilling time. Great for your Christmas Goodie Tray.

1/2 cup butter, softened
1 (14 ounce) can condensed milk
2 lbs confectioners' sugar
2 tablespoons orange extract
orange food coloring
1 (24 ounce) package white almond bark

Steps:

  • Cream together softened butter and confectioner's sugar.
  • Add can of condensed milk and orange extract, and mix until well combined.
  • Add in food coloring to achieve the color of Orange Creamsicles.
  • Let chill in freezer for 2 hours or until hardened, roll into balls return to freezer and allow to harden again.
  • Dip in melted almond bark.

1 cup oats
⅓ cup almond butter
¼ cup date paste
3 tbsp dried cranberries
2 tbsp psyllium (or ground flax)
2 tbsp whey isolate (optional)
Zest of one orange

Steps:

  • Add all ingredients (except the water) to a bowl and stir to combine.
  • Using a small cookie scoop, scoop out and form into a ball. Don't try to squish the dough too hard with your hands. The recipe is light on the sticky syrup so you need to gently coax them into a ball shape. Now is not the time to be a perfectionist in making the spheres!
  • Add water, 1 tsp at a time, if the mixture is too crumbly to stick together at all.
  • Allow to firm up in the fridge.
  • Measure the oats into the food processor and turn on high. Process until oats are nearly a flour consistency.
  • Add the rest of ingredients to a bowl (except the water) and stir to combine.

1/2 sifted confectioners' sugar (or shredded coconut for coating)

Steps:

  • Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
  • Add the butter to the crumb mixture and blend in well.
  • Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
  • With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
  • Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor.
