For the Shortcrust Pastry:
1 3/4 cup all-purpose flour
1/2 teaspoon salt
5 tablespoons unsalted butter (, chilled)
5 tablespoons lard (, chilled)

1/3 cup ice cold water
For the Treacle Filling:
1 1/4 cups (450 g) golden syrup
Homemade Golden Syrup ((click the link for the recipe to make your own!))
grated zest and juice of one lemon
1 1/4 cups (100 g) fresh white breadcrumbs
3 tablespoons heavy cream
1 egg

Steps:

  • For the Shortcrust Pastry:Place the flour and salt in a food processor and pulse to blend. Next add the cold butter and lard. Pulse a few more times until the mixture resembles coarse crumbs. Add the water a little at a time, pulsing between additions, until the mixture begins to come together. DO NOT over-mix the dough or the pastry crust will be tough and won't be flaky.The mixture is done when it resembles large streusel-like crumbs and when you take some and press it between your fingers it will hold together.Form the dough into a ball, flatten into a 1-inch thick disk, wrap in plastic wrap and refrigerate for at least 30 minutes before using. (The shortcrust pastry can be refrigerated for a few days or frozen for up to 3 months.)
  • Preheat the oven to 375 degrees F.Roll out the pastry dough. I find it easiest to roll it out on to plastic wrap, it makes transferring it to the tart pan easy. Roll the pastry dough out so that there's a little excess around all sides of the tart pan (it will shrink when baked). You will need a 9-inch fluted tart pan with a removable bottom (also commonly called quiche pans).Carefully place the pastry crust into the tart pan and pierce it multiple times with a fork.Line the pastry crust with parchment paper and fill it with dried beans or similar.Place the tart on the middle shelf of the oven and bake for 10-15 minutes.Remove the beans and parchment paper and continue to bake for another 5-10 minutes or until the crust is a very pale golden.
  • For the treacle filling: While the shortcrust is baking prepare the filling.Place the golden syrup, lemon zest and lemon juice in a medium saucepan. Heat the syrup until hot and runny and then stir in the breadcrumbs. Turn off the heat and let the mixture sit for 5 minutes.Lightly beat the egg and cream together with a fork. Pour the egg/cream mixture into the saucepan with the treacle mixture and stir quickly to combine.Pour the hot mixture into the tart crust.Place the tart on the middle shelf of the oven (still heated at 375 degreesF) and bake for 20-25 minutes or until the pastry is golden and the filling is nicely browned.Remove the tart from the oven and let it cool.
  • Treacle tart is traditionally served warm with clotted cream, whipped cream, or custard. You can also serve it with ice cream.

Any Harry Potter fan knows what this is. I finally procured the recipe from an British friend of mine. I know I can now find 'Lyle's Golden Syrup' in the grocery store along with the pancake syrups. Serve with ice cream or whipped cream.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Press the pie crust pastry evenly into the bottom of a 9-inch pie plate.
  • Mix the syrup, cream, bread crumbs, lemon zest, and lemon juice together in a bowl; pour into the pie crust.
  • Bake in the preheated oven until the filling is set, 35 to 40 minutes. Allow to cool slightly before serving.

  • Mix the oats, zest, and ginger, and sprinkle half in the pastry. Pour on the syrup and lemon juice and sprinkle rest of oat mixture on top.
  • Roll out any remaining pastry and cut strips to lay a trellis over the tart if desired.
  • Bake for 30 minutes and serve hot or cold.

Filling:
3/4 cup plus 2 tablespoons fresh breadcrumbs made from crustless whole wheat bread
1 1/4 cups golden syrup*
2 large eggs
2 tablespoons heavy whipping cream

1 tablespoon light (mild-flavored) molasses
Large pinch of salt
1 1/2 cups coarsely grated peeled tart apples (such as Granny Smith)

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor 5 seconds. Add butter. Using on/off turns, cut in until very coarse meal forms. Add 3 tablespoons ice water. Blend until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic wrap and chill 1 hour. DO AHEAD: Dough can be made 1 day ahead. Keep chilled. Soften briefly at room temperature before rolling.
  • Preheat oven to 375°F. Roll out dough on lightly floured surface to 12- to 13-inch round. Transfer dough to 9-inch-diameter tart pan with removable bottom. Cut off all but 1/2 inch of overhang and fold in, pressing sides of dough to come 1/4 to 1/3 inch higher than pan sides. Freeze crust until firm, about 10 minutes.
  • Line crust with foil and dried beans or pie weights. Bake until sides are set, about 25 minutes. Remove foil and beans. Continue to bake until crust is pale golden, piercing with fork if crust bubbles, 12 to 15 minutes longer. Cool 30 minutes. Reduce oven temperature to 350°F.
  • For filling:
  • Scatter breadcrumbs on small rimmed baking sheet. Bake until dry and crisp, about 10 minutes. Set aside.
  • Combine golden syrup, eggs, whipping cream, lemon peel, molasses, and salt in large bowl; whisk to blend. Stir in apples and breadcrumbs. Pour filling into crust.
  • Bake tart until filling is set in center and cracks appear at edges, about 55 minutes. Cool in pan on rack.
  • For calvados crème fraîhe:
  • Stir crème fraîhe, sugar, and Calvados in small bowl to blend well. Cover mixture and refrigerate until ready to use, up to 3 hours.
  • Gently push up tart pan bottom to release tart. Serve tart slightly warm or at room temperature with a dollop of Calvados crème fraîche.

Treacle tarts are usually made with a combination of golden syrup and molasses. The dessert has a texture similar to pecan pie (minus the nuts). Recipe by Tamasin Day-Lewis and taken from Bon Appetit May 2010 for ZWT. ****Golden syrup is a type of cane syrup popular in Great Britain; available at some supermarkets and at specialty foods stores and British import shops. RZ doesn't recognize this as an ingredient, and there should be 1 and 1/4 cups of golden syrup in the filling.

Treacle tart is a British classic, and Mary Berry shows you how to make it to perfection. This version has a fancy lattice woven top to show off to all your guests. But Mary makes it very easy.

250g/9oz plain flour
130g/4½oz butter, plus extra for greasing
400g/14oz golden syrup
150g/5½oz fine fresh white breadcrumbs
2 lemons, zest and juice
1 free-range egg, beaten, to use as egg wash

Steps:

  • First make the shortcrust pastry: measure the flour into a large bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs (alternatively, this can be done in a food processor). Add about three tablespoons of cold water and mix to a firm dough, wrap in cling film and chill in the fridge for about 20 minutes.
  • Preheat the oven to 200C/400F/Gas 6 and put a heavy baking tray in the oven to heat up. Grease a deep 18cm/7in loose-bottomed fluted flan tin with butter.
  • Remove about 150g/5½oz of pastry from the main ball and set aside for the lattice top.
  • Roll the rest of the pastry out thinly on a lightly floured work surface and line the prepared flan tin with the pastry.
  • Prick the base with a fork, to stop the base rising up during baking.
  • Place the reserved pastry for the lattice top on cling film and roll out thinly. Egg wash the pastry and set aside to chill in the fridge (the cling film makes it easier to move about). Do not cut into strips at this stage. Do not egg wash the strips once they are on the tart as it will drip into the treacle mixture.
  • To make the filling, heat the syrup gently in a large pan but do not boil.
  • Once melted, add the breadcrumbs, lemon juice and zest to the syrup. (You can add less lemon if you would prefer less citrus taste.) If the mixture looks runny, add a few more breadcrumbs. Pour the syrup mixture into the lined tin and level the surface.
  • Remove the reserved pastry from the fridge and cut into long strips, 1cm/½in wide. Make sure they are all longer than the edges of the tart tin.
  • Egg wash the edge of the pastry in the tin, and start to make the woven laying lattice pattern over the mixture, leave the strips hanging over the edge of the tin.
  • Once the lattice is in place, use the tin edge to cut off the strips by pressing down with your hands, creating a neat finish.
  • Bake on the pre-heated baking tray in the hot oven for about 10 minutes until the pastry has started to colour, and then reduce the oven temperature to 180C/350F/Gas 4. If at this stage the lattice seems to be getting too dark brown, cover the tart with tin foil.
  • Bake for a further 25-30 minutes until the pastry is golden-brown and the filling set. Remove the tart from the oven and leave to firm up in the tin. Serve warm or cold.

½ tsp fine salt
140g cold unsalted butter, cubed
3 tbsp icing sugar
2 medium egg yolks
2-3 tbsp cold water
400g golden syrup
1 ball stem ginger in syrup, finely chopped, plus 50g of the syrup
1 lemon, zested
2 medium eggs, lightly beaten
100g fine fresh white breadcrumbs

Steps:

  • Sieve the flour and salt into a large bowl. Add the butter and rub together with your fingers to a fine breadcrumb-like texture (you can also do this part in a food processor). Stir though the icing sugar, then quickly add the egg yolks and 2 tbsp water, mixing swiftly with a cutlery knife to combine. Form into a ball (add another tbsp water if you need to), wrap and chill for 30 mins. Roll out to the thickness of a pound coin, and line a 22cm fluted tart tin with the pastry, leaving an overhang. Return to the fridge for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6. Put a baking sheet into the oven to heat up. Line the pastry case with baking parchment and baking beans, then put in the oven on the baking sheet, and bake for 15 mins. Remove the parchment and bake for a further 10 mins or until the pastry is golden brown. Leave the pastry to cool before trimming off the overhanging edges with a small serrated knife.
  • Lower the oven temperature to 160C/140C fan/gas 4. Combine the golden syrup, ginger, ginger syrup, lemon, eggs and breadcrumbs in a bowl, briefly whisking everything together until combined. Carefully pour the filling into the pastry case put in the lower part of the oven to bake for 35-40 mins or until the filling is just set. Remove from the oven and leave to cool down for 20 mins before serving with ice cream or thick clotted cream.

This is Tom Kerridge's twist on a family favourite. Brioche is a really simple edition, but it makes a richer version of this British classic that everyone will enjoy.

225g plain flour
110g butter
40g caster sugar
1 small egg, beaten
450g golden syrup
90g whizzed to make breadcrumbs in a food processor brioche
½ tsp ground mace
½ tsp ground nutmeg
1 lemon, zested

Steps:

  • In a food mixer, whizz the flour, sugar and butter and bring together until it looks like breadcrumbs. Add enough egg to bring together to form a pastry. Remove and chill for at least 1 hour before using.
  • Heat the oven to 190c/fan 170c/gas 5. Line a 20cm tart ring or tart tin with the sweet pastry. Fill with baking paper and baking beans and bake blind for 10 minutes. Take out the beans and paper and cook for another 5 minutes.
  • In a mixing bowl, stir all the filing ingredients together then pour into the tart case. Put the tart back into the oven and bake for a further 25 minutes. Remove from the oven and leave to cool. Serve slices with a dollop of crème fraîche.

110g/4oz butter, chilled, diced
1 medium free-range egg, lightly beaten
450g/1lb golden syrup
85g/3oz fresh breadcrumbs
generous pinch ground ginger
1 lemon, zest, finely grated and 2 tbsp of the juice
clotted cream or double cream

Steps:

  • In a bowl, rub the butter into the flour with your fingers until it resembles fine breadcrumbs.
  • Mix in the egg with a knife, then knead on a clean, lightly dusted work surface to form a smooth dough.
  • Use the dough to line a 23cm/9in loose-bottomed tart tin, prick the base all over with a fork and leave to rest in the fridge for about 30 minutes.
  • Preheat the oven to 190C/375F/Gas 5.
  • Line the pastry with parchment paper and weigh down with rice or ceramic baking beans. Bake the pastry blind for 10-15 minutes, remove the paper and rice or beans and return the pastry case to the oven for a few minutes more, until light golden-brown.
  • For the filling, mix together the filling ingredients in a bowl and pour into the pastry case. Return to the oven and bake for about 30 minutes. Serve hot or cold with clotted cream or double cream.

Drizzle the warm syrup mixture over the breadcrumbs and allow it to sink in, giving a very gentle stir, if necessary, to incorporate all the breadcrumbs (overmixing will give you a dense, chewy filling). Set to one side for 5 minutes to allow the crumbs to swell slightly.
  • Pour the mixture into the pastry case and evenly distribute the breadcrumbs through the syrupy mixture. Bake for 45-50 minutes, turning the tin now and then so it cooks evenly, until the filling is just set and golden brown around the edges. Leave to cool in the tin for 15 minutes, then transfer to a serving plate and serve, cut into thin wedges, with some extra thick double cream or ice cream.

  • Prepare the crust by combining the flour, salt, and sugar in a bowl. Pour the flour mixture and all of the butter int oa food processor and pulse until the butter has formed small balls around the flour. Like course yellow meal.
  • In a large bowl, combine the egg mixture with the flour/ butter mixture and toss the mixture with a spatula until it clumps together. You want the dough to be rather moist so add more cream if it’s too dry.
  • If making one large tart, divide the dough into half. If making 5 smaller tarts (like I did) divide the dough into 6 even parts. Roller the sections of dough into balls and individually wrap each one with plastic wrap. Cool in fridge for at least 2 hours (and up to 3 days).
