SAUSAGE, RED PEPPER AND FETA FRITTATA

Steps:
- For the frittata: Preheat the oven to 325 degrees F.
- In a large ovenproof saute pan over high heat, add the olive oil, onions, sausage, garlic and oregano, stirring frequently to break up the clumps. Add the roasted peppers and cook about 10 minutes.
- In a large bowl, whisk together the eggs, cream, feta cheese, smoked salt and pepper. Pour the mixture into the saute pan and bake until the eggs are set and golden brown and the frittata pulls away from the sides slightly, about 35 minutes. Remove the frittata from the oven and let cool about 10 minutes.
- For the sauce: In a small bowl, combine the chives, lemon zest and juice, sour cream and olive oil. Season with salt and pepper.
- Cut the frittata into pieces and serve with dollop of the sour cream sauce.

Delicious for brunch or a quick week-night dinner, this frittata with sausage, potatoes, and Parmesan cheese is topped with chopped tomato and sliced green onion.

- Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
- Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
- Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.)
- Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
- Top with tomato and onions. Cut into 8 wedges to serve.

TRE FORMAGGI FRITTATA WITH SAUSAGE

- In bowl, lightly whisk eggs;whisk in pepper and cheeses. Set aside. In deep half of frittata pan over medium high heat, warm 1 tsp oil. Add sausages; cook until browned, about 5 min. Transfer to small bowl;discard all but 1 tsp fat in pan. Reduce heat to medium. Add green onions and bell pepper; cook 2 min. Stir in garlic and thyme; 30 seconds. Add sausages and egg mixture; cook, using rubber spatula to lift cooked edges and allow uncooked eggs to flow underneath, about 2 min. Continue to cook until eggs begin to set, about 4 min. more. Set shallow half of frittata pan over med low heat; brush lightly with oil. Place shallow pan upside down on top of deep pan; flip frittata into shallow pan. Cook, covered, until eggs are set, about 6 min. Shake pan to loosen frittata; slide onto serving plate.

- In a large bowl, whisk the eggs, parmesan cheese and the pepper together. Set aside.
- In a deep frying pan with an oven proof handle (or in the deep half of a frittata pan) warm the olive oil. Add the sausages and cook until browned and cooked through, about 5-7 minutes. Transfer to a cutting board and coin slice. Leaving only 1 tsp of oil in the pan, on medium heat add the green onions and bell pepper and cook until tender, about 2 minutes. Stir in the garlic and thyme and cook for another 30 seconds. Add the cooked sausage slices to the pan along with the egg mixture; allow eggs to set for 30 seconds. Add asiago and provolone cheese and continue to cook until the edges are just starting to set, using a rubber spatula, gently pull the edges away from the side of the pan allowing the uncooked eggs to flow underneath, about 2 minutes. Continue cooking (untouched) about 4 minutes more.
- Meanwhile, preheat your oven to 375 degrees F and finish cooking until the center of the egg mixture is gently firm to the touch, and the edges are beginning to golden, about 6-10 minutes. (If using a Frittata pan set the shallow half of the pan over medium low heat and brush lightly with olive oil. Place the shallow pan upside down on top of the deep pan and flip the frittata into the shallow pan. Cook covered until the frittata is set, about 6 minutes.)
- Gently shake the pan to loosen the frittata and use a rubber spatula to carefully slide it onto a serving plate, cut into wedges. Garnish with fresh thyme.

- Preheat the oven to 450°F.
- Saute sausage in oil in a 10"nonstick ovenproof skillet over medium-high heat until nearly cooked through, about 3 minutes.
- Add onion and cook 2 more minutes, or until onion is softened.
- Stir in spinach, tomatoes, salt and pepper. Cook 1-2 minutes.
- Remove and set aside.
- Wipe out skillet and coat generously with nonstick spray.
- Combine eggs, cream, and salt in a blender until frothy.
- Pour egg mixture into the hot saute pan and cook over medium heat just until curds form, stirring constantly.
- Stir in sausage mixture and cheese, transfer pan to oven, and bake 15-20 minutes, or until set in the center.
- To unmold frittata, place a large plate, serving side down, over the pan and carefully flip the pan and plate over simultaneously to release. Place another plate on the frittata, invert again, and slice into wedges.

SUNRISE SAUSAGE FRITTATA
If you think of a frittata as something that can only be served at brunchtime or on weekends, think again. This easy frittata recipe with Jimmy Dean Premium Pork Sausage, cheese, and veggies will brighten up any morning of the week.

- Preheat oven to 400 degrees F (200 degrees C). Spray a cast iron skillet or 8-inch cake pan with oil and set aside. In a bowl, beat eggs and milk together until they are an even consistency. Add cheese, salt, pepper, and garlic powder, and mix.
- In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
- Place sausage, arugula, and tomatoes in the sprayed pan and spread into an even layer. Pour the egg mixture over the vegetables and sausage. Put the pan into the oven and cook for about 20 minutes, until the center is set.
- Carefully remove the frittata from the oven and let cool for 10 minutes before slicing.
SAUSAGE, BREAD, AND PEPPER FRITTATA
Steps:
- Preheat oven to 375 degrees F. Heat the oil in a 10-inch nonstick skillet over medium heat. Cook the sausage, crumbling with the back of a wooden spoon, until the meat is no longer pink, about 3 to 4 minutes. Add the scallions, season with 1/4 teaspoon salt, and cook, stirring, until the scallions begin to wilt, about 2 to 3 minutes. Toss in the bell pepper, and cook, stirring, until wilted but not completely limp, about 8 to 10 minutes.
- Beat the eggs with the milk and remaining salt in a bowl. Let the bread cubes soak in the egg-milk mixture until moistened, about 2 to 3 minutes. Reduce heat under skillet to medium-low, then pour in the eggs and bread and let cook, without stirring, until the eggs begin to set around the edges of the pan, about 2 to 3 minutes.
- Sprinkle all over the top with the grated cheese. Put the skillet in the oven, and bake until frittata is set all the way through and the top is golden, about 18 minutes. Let rest for a few minutes, then run a knife around the edge of the skillet and invert onto a plate or cutting board. Serve in wedges, warm or at room temperature.
