Steps:
- Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain. Meanwhile, melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion and cook until slightly soft, about 2 minutes. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining 1 tablespoon butter, the chicken, flour, paprika, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken browns, about 3 minutes. Add the chicken broth and Worcestershire sauce and bring to a gentle simmer; cook until thickened, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering gently until the chicken is cooked through, about 2 more minutes. Divide the noodles among plates. Top with the chicken mixture, parsley, some sour cream and paprika.
EASY ONE-TRAY CHICKEN THIGHS AND VEGGIES RECIPE BY TASTY

Steps:
- Assemble potatoes, carrots, onion, and garlic on a parchment-lined baking sheet.
- Drizzle with olive oil and sprinkle with rosemary, and half the black pepper and salt. Roll around and rub to coat everything evenly.
- Sprinkle remaining salt and pepper on either side of each chicken thigh.
- Arrange chicken thighs skin-side up on top of the vegetables.
- Roast at 425˚F (220˚C) for about 40-50 minutes or until the chicken reads 165˚F (73˚C) internal temperature and skin is crispy.

ROAST CHICKEN TRAYBAKE

- Heat the oven to 200C/180C fan/gas 6. Put the onion, pepper, potatoes and oil in a non-stick roasting tin and toss everything together. Roast for 15 mins while you rub the chicken with the lime zest, garlic, paprika and thyme. Take the veg from the oven, stir, then snuggle the chicken thighs among the veg, covering them with some of the onions so they don't dry out as it roasts for 40 mins.
- As you approach the end of the cooking time, mix 200ml boiling water with the bouillon powder. Take the roasting tin from the oven, add the broccoli to the tin, and pour over the hot stock followed by the lime juice, then quickly cover with the foil and put back in the oven for 10 more mins until the broccoli is just tender.

CHICKEN STROGANOFF I
I wanted something like the traditional beef stroganoff and threw this one together, writing down everything as I went so I wouldn't forget. I served with noodles, but rice would be great, too. Asparagus for a vegetable and a green or fruit salad is great! Nutmeg seems to be the secret ingredient of many Stroganoff recipes.

Steps:
- In a shallow dish or bowl, season flour with salt and pepper to taste. Dredge chicken in seasoned flour to coat. In a large skillet, brown coated chicken in melted butter or margarine until golden.
- In a medium bowl combine the soup, half-and-half, dry onion soup mix, parsley, garlic, mushrooms, nutmeg and browning sauce. Mix all together and pour mixture over chicken in skillet. Reduce heat to low and let simmer, covered, for 1 hour.
- Stir in sour cream and heat through, but DO NOT BOIL! Top with chopped green onion and serve over noodles or rice, if desired.

Steps:
- In a large frying pan, heat oil over medium heat until hot but not smoking.
- Add onion, garlic and mushrooms and fry, stirring constantly for 5 minutes.
- Add the stock and cook, stirring occasionally for 6-8 minutes, until vegetables are tender and liquid has evaporated.
- Add the remaining ingredients and cook stirring frequently for 2-3 minutes or until well heated through.
- Serve over egg noodles or rice.

TRAY-BAKED CHICKEN STROGANOFF
From our local/state paper, sounds interesting though I think I would make it without the cherry tomatoes (so have made them optional), times are estimated. Serve with crusty bread.

- Preheat oven to 200C/180C (fan forced).
- Place chicken in a bowl and sprinkle with paprika and toss to coat and then place chicken in a baking dish.
- Combine stock and garlic and pour over the chicken and then bake for 40 minutes turning chicken drumsticks half way through.
- Cut tomatoes into small bunches and arrange tomatoes and mushrooms around chicken and season with salt and pepper and bake for 20 minutes or until vegetables are tender and chicken is cooked.
- Set aside for 5 minutes and then transfer chicken and tomatoes to a plate.
- Add sour cream to dish and stir to combine and then return chicken and tomatoes and sprinkle with chives.
- Serve with crusty bread.

Steps:
- Place chicken breasts, one at a time, between two sheets of plastic wrap & flatten each to a thickness of 1/4 inch with a rolling pin.
- Cut into 1-inch strips diagonally across the fillets.
- In large frying pan, heat 2 tablespoons of oil, & cook sliced onion slowly until soft but not colored.
- Add mushrooms & cook until golden brown, then remove & keep warm.
- Increase heat, & add remaining oil.
- Fry chicken very quickly, in small batches, for 3-4 minutes until lightly colored. Remove & keep warm while frying remaining chicken.
- Return all chicken, onions & mushrooms to frying pan & season with salt & pepper, then stir in sour cream & bring to boil.
- Sprinkle with fresh parsley & serve immediately.

CREAMY CHICKEN STROGANOFF
Just like the popular beef version, but with chicken! Came up with this one night when my boyfriend was tired of our usual meals...he asked for beef stroganoff, chicken was what was defrosted so I made it with that. Has become a favorite! I like to make it with shells cause they really hold the sauce.

Steps:
- Put a large pot of water on high heat to boil. Add pasta and cook to box's directions once boiling.
- While water is boiling/pasta is cooking: heat oil in a large skillet and add onion.
- Saute for 2-3 minutes until the onion begins to become translucent.
- Add chicken and garlic, raise heat to medium high and cook until chicken starts to brown.
- Push mixture to one side of the pan. In the empty side, add butter and melt. Add flour and cook for 1 minute to make a roux.
- Carefully whisk in chicken broth. Bring to a simmer. Sauce should begin to thicken due to the roux.
- Add the sour cream and mix thorougly.
- Add salt and pepper to taste.
- Mix with, or serve over pasta. Serve with French bread and salad for a deliciously easy meal.

- In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoons drippings; set bacon aside. , In the drippings, cook the chicken, onion and mushrooms until the chicken is no longer pink. Add garlic; cook 1 minute longer. Add the broth, salt, paprika, pepper and bacon. Cover and simmer for 10 minutes. , Combine flour and sour cream until smooth; add to the skillet. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with noodles. If desired, sprinkle with paprika.
