You don't need to hit the trails to enjoy this easy, make-ahead snack. All you need to prove is that you're a peanut butter lover through and through. Sweet, salty, chewy, and crunchy, this treat will become your new favorite breakfast on-the-go or afternoon pick-me-up.

Steps:
- Toast the oats in a medium nonstick skillet over medium heat for 2-3 minutes, until golden brown and fragrant. Remove the pan from the heat and let the oats cool.
- Melt the peanut butter and honey together in a small saucepan over medium heat for about 2 minutes, until pourable and smooth. Stir in the salt, then remove the pot from the heat.
- Transfer the peanut butter mixture to a large bowl. Add the toasted oats, raisins, peanuts, and golden raisins. Stir until well coated.
- Transfer the mixture onto a sheet of parchment paper and roll into a log, pressing together. Wrap in plastic wrap and freeze for at least 4 hours, up to overnight.
- Remove the roll from the freezer and slice into 24 pieces. The slices will keep in the freezer for up to 1 month or in the refrigerator for up to 5 days.

GRANOLA MUFFINS
Great muffin to make for breakfast or anytime. SUPER easy and the kids love it!! I tweaked another recipe that I found posted here...omitting some fat and adding a few other ingredients. They freeze well, too. I used Quaker Natural Granola with Oats, Honey & Raisins because that is what I had on hand. The slivered almonds are really yummy in the muffins. And, I also 'made' my own buttermilk by adding 3 tablespoons of lemon juice to regular skim milk before combining the wet ingredients.

- Preheat oven to 375 degrees. Line 36 muffin tins with paper liners or spray with non-stick spray.
- Combine the flour, baking soda, salt and cinnamon in a large bowl.
- In another bowl, whisk together the buttermilk, eggs, sugar, oil and mayonnaise. Pour this into the dry ingredients and and mix lightly to combine.
- Fold in granola and cranberries (or 1/2 cup more raisins) until evenly distributed in batter.
- Divide batter among the 36 muffin cups, filling almost to the top.
- Bake for 20 minutes or until golden brown. Let cool a bit on a wire rack before serving.

I found several recipes and decided to combine them to create a cereal (yogur mix-n) my family would enjoy. This isn't too sweet and is just perfect for my family.

- 1. Heat oven to 325.
- 2. In a large bowl put the oats, hemp seeds, flax seeds, sunflower seeds, and pumpkin seeds.
- 3. Toast coconut, peacans and almonds (just til lightly brown) and place in large bowl with oats and other seeds.
- 4. Mix together.
- 5. In small sauce pan put salt, brown sugar, maple syrup, agave, coconut oil, vege oil, cinnamon and vanilla extract. Heat up until a soft boil.
- 6. Drizzle the sauce over the oat mix while mixing to insure full coverage of sauce over the oats.
- 7. Place granola on lined cookie sheets or baking sheets. Cook in oven until golden brown 20-30 minutes. Mix periodically through the baking process.
- 8. Take out of the oven and mix in raisins.

I made these for breakfast on a whim. I wanted muffins but couldn't seem to locate a suitable addition, until I came across a Nut and Berries trail mix. I thought, "Why not?". The muffins turned out crispy and sweet on the outside, and fluffy yummy on the inside. The batter is thicker than usual muffin batter, which I like because it's easier to spoon them into a tin.

- Preheat oven to 375 degrees.
- Mix together flour, baking soda, salt and sugar in a mixing bowl.
- In a separate bowl, whisk the milk, oil, egg and vanilla together until the egg is beaten well.
- Pour the liquid into the flour mixture and stir just enough to combine (it's important not over mix muffins). The batter will be thicker than typical muffin batter, but that's ok. It's also okay if it's a little bit lumpy.
- Stir in the trail mix.
- Spoon the batter into a greased muffin tin, filling the cups most of the way and bake for 25 minutes.
- Turn out the muffins onto a clean kitchen town and let cool for a few minutes before serving.
