Use seasonal rhubarb to make this G&T-with-a-difference, or top the finished gin with soda water for a refreshing and gloriously pink summertime drink

Number Of Ingredients 3

1kg pink rhubarb stalks
400g caster sugar (don't use golden - it muddies the colour)
800ml gin

Steps:

  • Wash the rhubarb, trim the stalks and discard the base and any leaves. Cut the stalks into 3cm lengths. Put in a large jar with the sugar. Shake everything around, put the lid on and leave overnight. The sugar will draw the juice out of the rhubarb.
  • After 24 hrs, add the gin, seal and shake everything around. Leave for about 4 weeks before drinking. You can strain the liquor off through a muslin-lined sieve and transfer to a bottle, but I often just leave the rhubarb and booze in the jar and ladle it into drinks that way. Over time the rhubarb and the gin go a much paler colour - this doesn't look as dramatic. The upside is you that have to get through it fairly quickly!

6 tablespoons sugar
1/4 cup water
1 1/2 lbs rhubarb, coarsely chopped
3 cups vodka
1/2 cup Grand Marnier or 1/2 cup other orange-flavored liqueur

Steps:

  • Bring sugar and water to a boil in a small saucepan, stirring just until sugar dissolves; remove from heat. Cool.
  • Place coarsely chopped rhubarb in a wide-mouth jar. Add vodka, Grand Marnier, and cooled sugar syrup; stir.
  • Screw lid on tightly; let stand at room temperature for 2 to 3 weeks or until all the color leaches out of rhubarb. Strain mixture through a sieve over a bowl; discard solids.

Favorite summertime refreshment. Given to me by a friend at a yearly biker rally where we have a competition for best homemade liqueurs determined by which bottles disappear fastest. This recipe has won 3 straight years in a row.

7 lbs rhubarb
3 (16 ounce) packages frozen strawberries
22 cups water
4 cups sugar
8 tablespoons Strawberry Koolaid
2 cups Everclear alcohol

Steps:

  • Cut rhubarb and mix with strawberries and 14 cups of water in large stockpot.
  • Boil for 30 minutes then strain off mash.
  • Dissolve in sugar and let cool.
  • Mix 4 cups prepared rhubarb juice with 2 cups water,2 T koolaid and 1/2 cup Everclear.
  • Repeat until juice is gone.
