- Place the bread in a food processor and pulse until it is the texture of breadcrumbs. Transfer to a large bowl.
- Add the onion, carrot, and celery to the food processor and pulse until the vegetables are finely chopped.
- Heat the olive oil in a large non-stick skillet over medium heat. Add the vegetable mixture and saute for about 5 minutes until the vegetables have softened. Stir in the beef stock and simmer until it has reduced by half. (about 10 minutes) Add the vegetable mixture to the breadcrumbs and allow them to cool for 10 minutes.
