Juice of 1 lemon
1 clove garlic, grated
1 teaspoon paprika
1 teaspoon fresh thyme
3 tablespoons extra-virgin olive oil
Kosher salt
1 pound (about 24) large shrimp, peeled and deveined, tails intact
12 slices bacon, halved

Steps:

  • Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.
  • Turn the shrimp in the marinade to coat well. One at a time, remove each shrimp and wrap with a piece of bacon; secure with a toothpick if desired. Place seam-side down on a baking sheet. Spoon any remaining marinade over the shrimp. Broil, turning the shrimp once, until the bacon is slightly crisp and the shrimp are cooked through, about 5 minutes.

This tender Traeger bacon-wrapped shrimp are one of my favorite appetizers for the spring and summer months! Cookouts, potlucks, family gatherings, or just a regularly old day - your family will adore this flavor-packed shrimp appetizer!

1 pound raw shrimp (16-20 per pound size)
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/2 - 1 pound bacon, cut in half

Steps:

  • Preheat your Traeger according to factory directions to 350°.
  • Remove the shells and tails from the shrimp, and set on paper towels. You want to make sure the shrimp is relatively dry before wrapping with the bacon for the best results.
  • Sprinkle the shrimp with the salt and garlic powder.
  • Wrap with a section of bacon and secure with a toothpick.
  • Place on a baking rack that's been sprayed with cooking spray.
  • Cook for 10 minutes, flip the shrimp over, and then cook for another 10 minutes.
  • If the bacon isn't crips enough you can cook for another 5 minutes, but I wouldn't go much over that or you will probably end up with overcooked shrimp.
  • Remove from the grill and enjoy!

1 orange, sectioned, seeded (if there are any) and chopped
1 hot red chile, stemmed and chopped
2 scallions, white and green parts, chopped
2 tablespoons chopped fresh cilantro leaves
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
8 large shrimp, shelled and deveined
3 to 4 slices bacon, cut into 2 to 3-inch sections
8 leaves bibb or Boston lettuce

Steps:

  • Preheat the broiler. In a bowl, stir together the chopped orange, chile, scallions, cilantro, olive oil, and salt and pepper.
  • Wrap each shrimp in a section of bacon and secure with a toothpick. Put the shrimp on a baking sheet and broil, turning once, until the bacon is crisp and the shrimp is cooked through, 2 to 3 minutes each side. To serve, lay a lettuce leaf on the cutting board. Remove the toothpick from 1 of the cooked shrimp and center the shrimp on the lettuce leaf. Spoon a little of the citrus sauce on top, wrap it all up in the lettuce like a burrito, and put it seam-side down on a plate. Keep going in the same way to wrap all of the shrimp. Serve hot.

Leftover brisket gets added to Texas toast and then grilled directly on the Traeger wood pellet grill.

jumbo shrimp, peeled and deveined
bacon
cheesy grits, for serving
Olive oil
Fresh lemon juice
fresh chopped parsley
lemon zest
minced garlic
Salt
Black pepper

Steps:

  • Rinse the shrimp under cold running water and dry thoroughly on paper towels.
  • Transfer to a resealable bag or a bowl.
  • For the Marinade: Combine olive oil, lemon juice, lemon zest, garlic, salt, pepper and parsley in a small jar with a tight-fitting lid, and shake vigorously until combined.
  • Pour over the shrimp and refrigerate for 30 minutes to 1 hour.
  • When ready to cook, set the Traeger temperature to 400°F and preheat with the lid closed for 15 minutes.
  • Lay the bacon strips diagonally on the grill grate and grill for 10 to 12 minutes, or until the bacon is partially cooked but still very pliable.
  • Cut each strip in half width-wise. Leave the grill on.
  • Drain the shrimp, discarding the marinade.
  • Wrap a strip of bacon around the body of each shrimp, securing with a toothpick.
  • Grill for 4 minutes per side, turning once. Serve over cheesy grits, if desired. Enjoy!

30 uncooked shrimp (31-40 per pound), peeled and deveined
6 tablespoons creamy Caesar salad dressing, divided
15 bacon strips, halved crosswise
2 jalapeno peppers, seeded and thinly sliced

Steps:

  • Preheat broiler. In a large bowl, toss shrimp with 4 tablespoons dressing; let stand 15 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Remove shrimp from marinade; discard marinade. Top each shrimp with a jalapeno slice and wrap with a bacon strip; secure with a toothpick.
