TRADITIONAL BLACK-EYED PEAS
Fresh black-eyed peas cook much more quickly than dried ones do; check for tenderness after 20 minutes.

- Place either fresh or dried black-eyed peas in a colander, and rinse them under cool running water. Transfer to a medium stockpot. Cover with about 2 inches of water. Add the peppercorns, bay leaf, onion, jalapeno pepper, ham hock, parsley (including stems), and garlic. Cover, and bring just below the boiling point over medium-high heat. Uncover, reduce heat to a simmer, and cook just until the peas are tender when bitten, about 45 minutes for dried peas (though cooking time will vary with the age of dried peas). Do not stir the peas while they are cooking because they can break down too much. Add salt and pepper to taste during the last 10 minutes of cooking.
- The peas will keep in their cooking liquid for about 3 hours at room temperature. Then they may be stored in an airtight container in the refrigerator for 1 to 2 days. Serve black-eyed peas hot, along with their cooking liquid, in individual bowls. If desired, the meat from the ham hock may be shredded and served with the peas, along with the garlic and jalapeno peppers from the pot. Serve with hot skillet cornbread.
LUCKY BLACK EYED PEAS WITH RICE & BACON
A light, easy dish for when you're ready to take a break from heavy meals. This recipe is supposed to serve 6 but it didn't go that far at MY table. No reason to stop at half the bell pepper - it could have used more. Also that "dash" of cayenne should be increased by quite a bit!

Steps:
- Cook bacon in large, heavy skillet over medium-high heat until crispy.
- Drain off all but 1 T of the drippings.
- Add onion; cook, stirring, until lightly browned, 5 minutes.
- Stir in red pepper and garlic; cook, stirring, 1 minute.
- Add rice; cook, stirring, until lightly colored, about 3 minutes.
- Stir in chicken broth, peas, salt, thymeand peppers; heat to a boil.
- Cover; reduce heat.
- Cook until rice is tender, about 10 minutes.
- Stir in parsley.

- Sort and rinse peas, discarding any broken peas or stones. Place peas and water to cover by 2 inches in a large bowl. Allow peas to soak 8 hours or up to overnight. After soaking, drain peas and discard soaking water.
- Place peas, stock, bacon, onion, carrots, celery, garlic, bay leaf, rosemary, thyme, salt, and pepper in a 6-quart slow cooker. Cover and cook on LOW until tender, about 8 hours. Remove and discard herb sprigs, bay leaf, and bacon slices. If desired, serve peas drizzled with olive oil.
