My grandfather's pot roast is the best. Flavorful, moist, and tender, this is worthy to be the centerpiece of the Sunday dinner table! Serve in a bowl as a stew or over white rice with biscuits. Best served with bread to sop up the juices!

1 (5 pound) bone-in pork roast
6 cups chicken broth, or more to taste
1 tablespoon Italian seasoning
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons ground cinnamon
1 pinch salt and ground pepper to taste
1 pound red potatoes, quartered
1 (16 ounce) package baby carrots
water as needed

Steps:

  • Heat a 7 1/2-quart pot over medium-high heat. Sear the fat side of the roast until some of the fat renders, 2 to 3 minutes. Continue to sear pork until browned completely, 2 to 3 minutes per side.
  • Pour chicken broth into the pot; add Italian seasoning, garlic powder, onion powder, cinnamon, salt, and black pepper. Bring the broth to a simmer, place a cover on the pot, reduce heat to medium-low, and cook at a simmer, turning every 30 minutes, for 4 hours.
  • Put potatoes and baby carrots into the pot so they are covered by liquid; add enough water to ensure the bottom 2/3 of the roast remains submerged. Cover the pot and continue cooking until roast is falling from bone and vegetables are tender, 60 to 90 minutes more.

1/2 cup applesauce
1 tablespoon shortening
1/2 cup canola oil
2 teaspoons cinnamon (set 1 tsp aside )
1 tablespoon peanut butter
1 cup honey
2 eggs
3 3/4 cups flour
2 teaspoons cream of tartar (or 6 tsp lemon juice)
1 teaspoon baking soda
1 cup cornmeal

Steps:

  • in seperate bowl mix all dry ingredients, flour,cream of tartar, baking soda, cinnamon.
  • in another bowl beat eggs, add honey, oil, add peanut butter mix well, and apple sauce an stir.add wet mixture to dry a little at a time stiring well.
  • make 1/2" balls, roll in a mixture of 1 c cormeal and 2 tsp of cinnamon. place on a parchment lined baking tray. shape into paws if desired.
  • bake in a preheated oven for 8 to 12 minutes depending on size.

Juice of 2 oranges
Juice of 1 lime
1 1/2-inch piece fresh ginger, peeled
3 tablespoons honey
4 ice cubes

  • Scoop papaya flesh into a blender jar. Add orange and lime juices, ginger, honey, and ice cubes. Blend until combined. Divide between 2 glasses; serve immediately.

Traditional Sunday recipe my grandfather has made ever since I can remember! Best when prepared Sat. night, so it can cook all night, and be ready for lunch after church!

3 -5 lbs pork roast (any)
olive oil
2 (10 3/4 ounce) cans condensed golden mushroom soup
1 large onion, diced
1/2 bell pepper, diced
water
1 garlic clove
2 (1 1/4 ounce) packages Lipton Onion Soup Mix
1 (8 ounce) package mushrooms, fresh (we like portabello)
garlic powder
Tony Chachere's Seasoning (optional)

Steps:

  • Cut deep slits into roast on both sides.
  • Peel cloves of garlic, crush with spoon.
  • Stuff garlic cloves into each slit (don't be afraid of garlic!).
  • Season roast, heavily (will loose some during searing).
  • Heat oil in large browning pot.
  • Sear roast on all sides to golden brown.
  • Remove roast from browning pot, place in large crock pot.
  • Add 4 cups of water to browning pot.
  • Bring to a boil.
  • Add all ingredients to roast in crock pot (including water).
  • Stir until well blended.
  • Bring all ingredients to boil in crock pot (high).
  • Cook for 1 hour.
  • Reduce to low, cook all night (10-12 hrs).
  • Serve over rice or mashed potatoes.

1 boneless pork shoulder butt roast (2-1/2 to 3 pounds), halved
1-1/2 cups beef broth
1/2 cup sliced green onions
1 teaspoon dried basil
1 teaspoon dried marjoram
1/2 teaspoon salt
1/2 teaspoon pepper
1 bay leaf
6 medium red potatoes, cut into 2-inch chunks
4 medium carrots, cut into 2-inch chunks
1/2 pound medium fresh mushrooms, quartered
1/4 cup all-purpose flour
1/2 cup cold water
Browning sauce, optional

Steps:

  • Place roast in a 5-qt. slow cooker; add the broth, onions and seasonings. Cook, covered, on high for 4 hours. Add the potatoes, carrots and mushrooms. Cook, covered, on high 1 hour longer or until vegetables are tender. Remove the meat and vegetables; keep warm. Discard bay leaf., In a saucepan, combine flour and cold water until smooth; stir in 1-1/2 cups cooking juices. Bring to a boil. Cook and stir until thickened, 2 minutes. If desired, add browning sauce. Serve with roast and vegetables.

3 carrots, peeled
1 choco (chayote), peeled and pitted, or 1 medium cucumber, peeled and seeded
6 Scotch bonnet peppers (any color)
1 small or 1/2 large pawpaw (papaya), peeled and seeded
2 teaspoons salt
1 teaspoon brown sugar
1/3 cup white vinegar
3/4 cup water

Steps:

  • Place the carrots and choco in a food processor or blender. Blend until pulverized. Remove the stems from the Scotch bonnet peppers and add the peppers to the carrots and choco. Blend until the mixture is an even consistency. Add the pawpaw, continuing to blend until you have a uniform texture.
  • Place the mixture in a noncorrosive saucepan. Add the salt, brown sugar, vinegar, and water. Bring it to a boil over high heat, then reduce the heat to low and cover. Simmer it for 30 minutes. Remove from the heat and let cool completely. Place in small bottles or jars. Keep it refrigerated.
