ASIAN SNOW PEA TOSS

- In a small bowl, whisk the marmalade, vinegar, sesame oil and ginger; set aside., Cook edamame according to package directions, adding the snow peas during the last minute of cooking. Drain and rinse in cold water. Place in a large bowl. Stir in the black beans, red pepper and green onions. Add the marmalade mixture, mandarin oranges, salt and pepper; toss to coat.

Steps:
- Heat dressing in large skillet on medium-high heat. Add onions, garlic and seasoning; cook 3 min., stirring occasionally. Add zucchini; cook and stir 4 to 5 min. or until crisp-tender.
- Stir in snow peas and tomatoes; cook 2 to 3 min. or until heated through, stirring occasionally.
- Sprinkle with cheese; cover. Remove from heat. Let stand 1 min.

Steps:
- 1. Place peas in a vegetable steamer over hot water.
- 2. Cover, steam 2 minutes or until crisp tender.
- 3. Drain and rinse under cold water.
- 4. Combine peas, zucchini, tomatoes and pine nuts in a medium bowl.
- 5. Combine shallots, vinegar, oil and pepper; mix well with a wire whisk.
- 6. Pour over vegetables and toss gently to mix well.
- 7. Cover and chill thoroughly for atleast 15 minutes.

These hors d'oeuvres are so elegant for bridal or baby showers. I always make them ahead. You can season the cream cheese with anything you like. I sometimes make them with plain cream cheese. Steps:
- In salted, boiling water, blanch (boil rapidly in lots of water) snow peas for 30 seconds.
- Cool in cold water, drain, and set aside.
- Blend the rest of the ingredients until smooth.
- With a sharp pairing knife, split the snow peas along the curved side.
- Fill each snow pea with filling, using a small spatula or pastry bag with tip.
- I have used a ziplock bag with a hole cut in the corner.
- Can be made the day before, refrigerate, and serve chilled.

- Clip tough stem part off of snow peas.
- Heat oil in wok or skillet to hot but not smoking.
- Stir in squash and snow peas.
- Toss and fry till tender.

TWISTED SNOW PEA TOSS
Found this recipe on one of those grocery recipe cards from the produce section. This is a very different twist on an Asian dish in my opinion by using the black beans with the snow peas and edamame (baby soybeans). I could not find seasoned rice vinegar so I used plain rice vinegar...maybe I don't understand what they are calling for with that ingredient.

- Stir together marmalade, oil, vinegar and ginger and set aside.
- In a large bowl combine the black beans, bell pepper and green onions and set aside.
- Cook edamame in large pan of boiling water according to package directions. Add snow peas to pan during the last 2 minutes of cooking. Drain and rinse with cold water.
- Add edamame, snow peas and reserved dressing to the bean mixture; tossing to coat. Season with salt and pepper to taste. Add orange sections and lightly toss. Serve immediately.
