This New Orleans classic warms you up no matter where you are. Don't skip the almond extract - it ties together all the ingredients, and gives the drink its trademark nutty backbone.

- Mix the passion fruit juice, pineapple juice, light rum, orange juice, dark rum, grenadine and almond extract together in a 2-gallon container. Chill until ready to serve. Pour the punch into a large punch bowl for serving. Serve in glasses filled with ice. Garnish with an orange wedge and a maraschino cherry.

- Put 2 martini glasses in the freezer for 5 mins to chill. Mix the vodka, raspberry liqueur, passion fruit juice and a handful of ice in a jug or cocktail shaker.
- Strain into the glasses and float ½ a passion fruit on the top of each, if you like.

This is a delightful punch to serve guests in the summer, when mint and raspberries are fresh. But because I have lots of mint, I like to serve this year-round.

- In a large saucepan, bring 3 cups water, mint and sugar to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes. Stir in the raspberries, lemonade concentrate and remaining water. Refrigerate overnight., Strain raspberry mixture, reserving liquid. Press berries and mint through a sieve; discard seeds and mint. Combine raspberry juice with the reserved liquid. Serve over ice.
