2 tablespoons sherry vinegar
1/2 teaspoon saffron threads
1 1/2 cups mayonnaise
1 tablespoon roughly chopped shallot (1/2 small shallot)
1 teaspoon anchovy paste
1 clove garlic, smashed
Kosher salt
1 tablespoon extra-virgin olive oil
1/4 cup finely chopped shallot (1 large shallot)
1 tablespoon minced garlic (2 to 3 cloves)
1 tablespoon tomato paste
Kosher salt
On 26-ounce box chopped tomatoes
1/2 teaspoon red pepper flakes
3 pounds baby red and yellow potatoes
1/4 cup extra-virgin olive oil
Kosher salt
2 tablespoons chopped fresh parsley
Sweet Spanish paprika, for garnish

Steps:

  • For the sherry-saffron aioli: Combine the sherry vinegar and saffron threads in a small bowl and let sit for 5 minutes to rehydrate the saffron.
  • Combine the mayonnaise, shallots, anchovy paste, garlic, 1/2 teaspoon salt and the saffron-vinegar mixture in a food processor; process until smooth. Transfer to an airtight container and refrigerate until ready to use, up to 2 days.
  • For the spicy tomato sauce: Heat the oil in a medium saucepan over medium-high heat. Add the shallots and garlic and saute until softened, 3 to 4 minutes. Stir in the tomato paste and 1 teaspoon salt and cook for 2 minutes, stirring occasionally. Add the chopped tomatoes and red pepper flakes. Bring to a boil, then reduce the heat and simmer until the sauce thickens, 15 minutes. Serve immediately, or cool and refrigerate until ready to use, up to 2 days.
  • For the potatoes: Place two baking sheets on oven racks. Preheat the oven to 425 degrees F.
  • Cut the potatoes into halves or quarters, depending on size, to get roughly 1-inch pieces. Toss the potatoes with the olive oil and 1 tablespoon salt in a large bowl. Carefully pour half of the potatoes onto the first baking sheet; they should sizzle as they hit the pan. Repeat with the remaining potatoes on the second baking sheet. Roast, stirring halfway through, until the potatoes are tender and crispy, 40 to 45 minutes. (If some of the potatoes do not move when you stir them, do not force them; they will release from the pan when they have crisped up.) Let cool slightly.
  • Spread one third of the tomato sauce on the bottom of a serving dish. Top with half of the potatoes. Spoon another third of the tomato sauce over the potatoes, and then top with the remaining potatoes and the rest of the tomato sauce. Dollop with the aioli, and sprinkle with the parsley and some paprika. Serve any extra aioli on the side.

For Saffron Aïoli
2 whole heads garlic
3 large egg yolks
2 tablespoons fresh lemon juice
1 tablespoon saffron threads
3/4 cup canola oil
8 garlic cloves, minced
1 teaspoon salt
3/4 cup extra-virgin olive oil
For Tortilla
2 small boiling potatoes, peeled and cut into 1-inch pieces
1/4 medium onion, finely chopped
1 large garlic clove, minced
1 tablespoon vegetable oil
2 large eggs, lightly beaten

Steps:

  • Make aïoli:
  • Preheat oven to 350°F.
  • Wrap each garlic head in foil and roast until soft, about 1 hour. Unwrap and let cool. Peel cloves and set aside.
  • In medium bowl, whisk together egg yolks and lemon. Set aside.
  • Place 2 tablespoons hot water in small bowl. In small, dry skillet over moderate heat, toast saffron for 30 seconds. Stir into hot water, then fold saffron water into egg mixture.
  • In blender, combine 4 tablespoons canola oil, raw garlic, roasted garlic, and salt. Blend on high speed until creamy, about 2 minutes. Add egg mixture and blend 1 more minute. With motor running, very slowly add olive oil and remaining canola oil in steady stream, and continue blending until thick, about 2 minutes. Set aside.
  • Make tortilla:
  • Preheat oven to 300°F
  • In medium pot, combine potatoes and enough water to cover. Bring to boil, lower heat to moderately low, and cook, covered, until potatoes can be pierced with fork, about 5 minutes. Drain and set aside to cool.
  • In small sauté pan, over moderate heat, sauté onions and garlic in vegetable oil until soft, about 5 minutes.
  • In medium bowl, combine eggs, potatoes, onions, and garlic. Heat 10-inch nonstick skillet over medium heat and add egg mixture. Cook 4 minutes, then invert tortilla into ovenproof nonstick pan. Cover and bake until just set, about 10 minutes. Serve with saffron aïoli.

This baked version of tortilla espanola is like a potato-and-onion fritatta. Often sliced and served as an appetizer, it maintains its Spanish accent with a pinch of saffron.

1/2 cup extra-virgin olive oil
4 strands saffron
2 large baking potatoes, peeled and thinly sliced crosswise
1 medium red onion, thinly sliced (1 cup)
5 garlic cloves, finely chopped (1/4 cup)
Coarse salt and freshly ground pepper
5 large eggs
1/2 cup coarsely chopped fresh flat-leaf parsley
1 tablespoon fresh thyme

Steps:

  • Preheat oven to 400 degrees. Heat oil and saffron in an 8-inch skillet over medium heat. Add potatoes, onion, and garlic, and stir well. Gently press into an even layer with a spatula. Reduce heat to medium-low, cover, and cook for 10 minutes. Stir, season with salt and pepper, and press again. Cover, and cook for 10 minutes. Drain in a colander, reserving oil.
  • Whisk together eggs, parsley, and thyme. Season with salt and pepper. Stir in potato mixture. Heat 2 tablespoons reserved oil in the skillet over medium heat. Pour in egg mixture, and gently press into an even layer. Reduce heat to medium-low. Cook, uncovered, for 2 minutes.
  • Bake until set, about 5 minutes. Invert, or serve from pan.

2 egg yolks
1 small garlic clove
1 tbsp Dijon mustard
½ lemon , juiced
200ml olive oil

Steps:

  • Put the saffron in a small bowl with 1 tbsp boiling water. Leave for 10 mins to cool and for the water to turn a golden colour.
  • Meanwhile, put the egg yolks, garlic, mustard and lemon juice in a jug or a tall container with a pinch of salt and blitz with a stick blender (or in a food processor) until smooth. Slowly add the olive oil, a small drizzle at a time, keeping the blender on, until you get a thick, glossy mayonnaise. Season with black pepper, then stir in the saffron water to loosen the aïoli and turn it a golden hue. Cover the surface and chill until ready to serve. Add a splash of water or lemon juice, to serve, if your aïoli thickens up too much in the fridge.

  • Froth Eggs, Then Mix in Potato and Onion. I give the eggs one final vigorous beating to froth them up, which helps create an airier tortilla later, and then mix the potato and egg in.
  • Cook, Shake, Swirl. When the oil in the skillet is hot, I scrape the egg mixture in, shaking and swirling the pan to keep the tortilla in motion.
  • Form and Flip. As soon as the egg is noticeably thicker, I take a spatula and push it in all around the sides. The idea is to start giving the tortilla its characteristic puck-like shape.
