2 (35 ounce) cans tomato puree
2 (6 ounce) cans tomato paste
1 (35 ounce) can water
1 large onion, finely chopped
1 carrot, finely chopped
1 celery, finely chopped
2 garlic cloves
2 tablespoons olive oil
1 1/2 lbs pork neck bones
1 tablespoon oregano
salt

Steps:

  • In a large pot, heat olive oil.
  • Add pork bones and brown.
  • Add onion, carrot, celery, garlic.
  • Cook until onions are translucent.
  • Add tomato puree, paste, water & oregano.
  • Simmer for minimum 5 hours.
  • Remove bones and enjoy!

Number Of Ingredients 8

1 tablespoon salt
1 tablespoon sugar (optional)
10 lb plum tomatoes, halved lengthwise, cored, and coarsely chopped (24 cups)
6 garlic cloves, peeled and lightly smashed
1 cup extra-virgin olive oil
1 cup loosely packed fresh basil leaves
Special Equipment
a food mill fitted with fine disk

Steps:

  • Toss salt and sugar with tomatoes in 2 large bowls, then let stand until very juicy, about 15 minutes.
  • Cook garlic in oil in a wide 8- to 10-quart heavy pot over moderate heat, stirring occasionally, until golden, 3 to 5 minutes, then discard garlic. Carefully add tomato mixture (it may splatter) and basil, stirring to combine. Bring to a boil, covered, stirring occasionally, then reduce heat and simmer, uncovered, stirring more frequently toward end of cooking, until sauce is thickened and reduced by half, 2 to 3 hours.
  • Force sauce through food mill into a large bowl, discarding solids. Ladle sauce into 1-pint airtight containers and cool completely, uncovered, then freeze, covered.

1 stick (8 tablespoons) unsalted butter
5 cloves garlic, minced
1 large sweet onion, such as Vidalia, finely diced
Two 6-ounce cans tomato paste
Two 28-ounce cans tomato sauce
2 cups low-sodium chicken broth
1/2 cup lightly packed fresh basil leaves
1/2 cup grated Parmesan, plus more for garnish
1 teaspoon sugar
Kosher salt and freshly ground black pepper

1 pound bucatini, cooked to al dente

Steps:

  • Preheat the oven to 275 degrees F.
  • Place a large roasting pan over 2 burners set to medium heat. Add the butter, garlic and onions and sweat for 6 to 7 minutes. Add the tomato paste and cook for 2 to 3 minutes more. Add the tomato sauce and chicken stock and bring to a simmer. Cover with foil and transfer the pan to the oven for 5 hours, stirring every 30 minutes. (Baking in the oven ensures the sauce cooks down without burning.)
  • Transfer the sauce to a blender along with the basil, Parmesan and sugar, and blend well. Season with salt and pepper. Toss the cooked pasta with the sauce. Serve in shallow bowls, garnished with Parmesan.

This has been passed down from my grandmother to my mother, to me, and now to my children and their families. I never measure ingredients so I will do my best to give you ingredient proportions. Don't rush this one. Let it simmer and cook down for several hours. I use my food processor to do the chopping as there is a lot of it!Freezes great so I double, and sometimes triple, the recipe.

2 lbs lean ground beef
3 tablespoons olive oil, divided use
1 green bell pepper, chopped
1 cup celery, finely chopped
3 onions, chopped
2 garlic cloves, finely chopped
2 (15 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 tablespoons Worcestershire sauce
Tabasco sauce, several shakes
oregano, to taste
basil, to taste
salt & freshly ground black pepper, to taste
water, to make really soupy (it will cook down)

Steps:

  • Brown meat in 1 tablespoon olive oil. Drain well. (I rinse my meat after browning to get as much grease off as possible.).
  • Chop celery, bell pepper, onions and garlic in food processor or by hand.
  • Add remaining olive oil and saute vegetables until tender over medium-high heat. Return meat to the pan.
  • Add remaining ingredients and add enough water to make really watery or soupy. It will cook down. Add water as needed. Simmer about 4 to 6 hours until cooks down to proper consistency for sauce.

This is the classic tomato sauce my grandmother used to make in summer with tomatoes from the garden. It's pretty standard but I still think it's the best. This makes a lot, which is great, because it freezes wonderfully.

4 -6 lbs plum tomatoes
2 large onions, chopped
4 green bell peppers, chopped
2 hot peppers, minced (optional)
6 -10 garlic cloves, minced
1/2 cup olive oil
1 1/2 cups dry red wine
2 cups water
salt and pepper
1 teaspoon oregano
1 teaspoon hot paprika
1 tablespoon sugar (optional)
1/2 cup fresh parsley, minced
1/2 cup fresh basil, minced

Steps:

  • Peel the tomatoes by making a criss cross cut on the bottom and putting them in boiling water for 1 minute. Rinse them in cold water and let cool. When they are cool remove the skins, squeeze out the seeds, and chop coarsely.
  • In a large stockpot or Dutch oven heat the oil. Add the onion, pepper, and hot pepper and saute for about 10 minutes over medium low heat. Add the garlic and cook for 5 minutes.
  • Add the tomatoes, wine, water, and seasonings. Bring to boil over medium low heat, cover, and reduce heat to low. Simmer for about 2 hours, stirring occasionally and adding water if necessary.
  • Add sugar if needed and fresh herbs. Cook for five more minutes.
  • Either let cool and freeze or add meatballs, sausage, pork loin and serve with pasta. Also great for lasagne, eggplant parm, etc.
  • Enjoy.
