My grandmother used to make the best tomato sauce ever, and while I watched her everytime she made it, I was having a hard time getting it right. Until now...

Steps:
- Toss salt and sugar with tomatoes in 2 large bowls, then let stand until very juicy, about 15 minutes.
- Cook garlic in oil in a wide 8- to 10-quart heavy pot over moderate heat, stirring occasionally, until golden, 3 to 5 minutes, then discard garlic. Steps:
- Preheat the oven to 275 degrees F.
- Place a large roasting pan over 2 burners set to medium heat. Add the butter, garlic and onions and sweat for 6 to 7 minutes. Add the tomato paste and cook for 2 to 3 minutes more. Add the tomato sauce and chicken stock and bring to a simmer. Cover with foil and transfer the pan to the oven for 5 hours, stirring every 30 minutes. (Baking in the oven ensures the sauce cooks down without burning.)
- Transfer the sauce to a blender along with the basil, Parmesan and sugar, and blend well. Season with salt and pepper. Toss the cooked pasta with the sauce. Serve in shallow bowls, garnished with Parmesan.
MY GRANDMOTHERS FAMOUS SPAGHETTI SAUCE
This has been passed down from my grandmother to my mother, to me, and now to my children and their families. I never measure ingredients so I will do my best to give you ingredient proportions. Don't rush this one. Let it simmer and cook down for several hours. I use my food processor to do the chopping as there is a lot of it!Freezes great so I double, and sometimes triple, the recipe.

Steps:
- Brown meat in 1 tablespoon olive oil. Drain well. (I rinse my meat after browning to get as much grease off as possible.).
- Chop celery, bell pepper, onions and garlic in food processor or by hand.
- Add remaining olive oil and saute vegetables until tender over medium-high heat. Return meat to the pan.
- Add remaining ingredients and add enough water to make really watery or soupy. It will cook down. Add water as needed. Simmer about 4 to 6 hours until cooks down to proper consistency for sauce.
TOMATO SAUCE LIKE MY GRANDMOTHER'S
This is the classic tomato sauce my grandmother used to make in summer with tomatoes from the garden. It's pretty standard but I still think it's the best. This makes a lot, which is great, because it freezes wonderfully.

Steps:
- Peel the tomatoes by making a criss cross cut on the bottom and putting them in boiling water for 1 minute. Rinse them in cold water and let cool. When they are cool remove the skins, squeeze out the seeds, and chop coarsely.
- In a large stockpot or Dutch oven heat the oil. Add the onion, pepper, and hot pepper and saute for about 10 minutes over medium low heat. Add the garlic and cook for 5 minutes.
- Add the tomatoes, wine, water, and seasonings. Bring to boil over medium low heat, cover, and reduce heat to low. Simmer for about 2 hours, stirring occasionally and adding water if necessary.
- Add sugar if needed and fresh herbs. Cook for five more minutes.
- Either let cool and freeze or add meatballs, sausage, pork loin and serve with pasta. Also great for lasagne, eggplant parm, etc.
- Enjoy.

- Strain tomatoes either using a food mill or colander. If you don't have that, break up with your hands and take out the bigger pieces of pulp.
- This recipe is for a smooth marinara sauce. You can, however, chop the tomatoes and use entire can. If you use good tomatoes as I recommend, you will not have any waste, when using food mill.
