This is something my mom would do with the leftover honey baked ham from Christmas or Easter. My husband just loves this easy recipe.

vegetable oil

Steps:

  • Use a large skillet; pour enough oil to cover the bottom of the skillet.
  • Heat oil over medium heat.
  • On a plate, place enough flour to cover the plate.
  • Then rolled your ham in the flour until well coated.
  • When oil is starting to sizzle place ham in the skillet.
  • Cook until golden brown on both sides.
  • Placed on paper towels to drained the excess oil off.

8 oz. apple cider
1 Tbs. Coleman's English mustard
2 Tbs. dark brown sugar
1 tsp. garlic powder
2 tsp. onion powder

Steps:

  • In a mixing bowl, combine the onion powder, garlic powder, brown sugar, mustard, and apple cider.
  • Mix together until dissolved.
  • Add oil to the deep fryer, filling the stock pot to three quarters of the way full. Leave enough space so the oil does not overflow when the ham is submerged. Heat until 375 degrees Fahrenheit.
  • Fill the marinade injector with brine and inject the ham in multiple spots to disperse the flavor. Use as much of the brine as possible.
  • Dry the ham with the lint-free towel so there is no excess moisture on the ham.
  • Cut a slit through the ham and slide the ham onto the poultry wrack.
  • Lower the ham into the fryer. Cook each pound of the ham for 7 minutes or until the core temperature of the ham is 160 degrees Fahrenheit.
  • Remove the ham from the fryer and allow the excess oil to drain off. Carve the ham and enjoy!

BRINE:
1 gallon water
1 gallon cider
1 cup dark brown sugar
1 cup Kosher salt
2 tablespoon cinnamon
1 tablespoon mince garlic
HAM:
10 - 15 pound uncured ham
Clear frying oil
GLAZE:
3 cups pineapple juice
1 (8-ounce) can crushed pineapple
1/2 cup Dijon mustard
1 cup dark brown sugar
1/2 cup honey
Note: This recipe requires a deep fat fryer large enough to hold the ham.

Steps:

  • BRINE: In a large plastic container or bag, mix all of the brine ingredients until dissolved. Place the ham in the brine and refrigerate overnight. Before frying, take out the ham and dry really well. HAM: Prepare the deep fat fryer according to manufacturer directions. Fry for 7-1/2 minutes per pound. Let it stand for 15 minutes once fried. GLAZE: Combine all ingredients in a medium saucepan on low heat and let reduce until syrupy consistency. Let the glaze cool slightly and then pour it over the top of the ham, serve extra glaze on the side at the table.

2 eggs
1 tablespoon milk
1-1/2 cups dry bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon dried parsley flakes
1-1/2 pounds boneless fully cooked ham, cut into 1-inch cubes
Oil for frying
CHEESE DIPPING SAUCE:
5 ounces process cheese (Velveeta), cubed
1/4 cup milk
1/2 cup salsa

Steps:

  • In a shallow bowl, beat eggs and milk. In another bowl, combine the bread crumbs, cheese and parsley. Dip ham cubes in egg mixture, then roll in crumb mixture. , In an electric skillet, heat 1/4 in. of oil to 375°. Fry ham cubes, a few at a time, for 2 minutes on each side or until golden brown. Drain on paper towels., In a small saucepan, heat cheese and milk over medium heat for 3-4 minutes or until cheese is melted. Remove from the heat; stir in salsa. Serve with ham cubes.

7 -10 lbs ham (bone in skin on)
marinade (optional,anything injectable)
peanut oil (for your deep fryer,aprox.5 gallons, less for a larger ham)

Steps:

  • Thaw ham completely and pat dry.
  • (When deep frying moisture on the surface will cause a lot of oil popping and splattering, be careful) Marinade (if using) Inject whatever marinade you want to use into several place throughout the ham (I recommend 10-15 spots).
  • Place the ham in the steamer basket that comes with most turkey deep fryers and CAREFULLY and SLOWLY lower the ham into the hot oil (350-375 degrees).
  • There is a lot of water in the ham!
  • Since I couldn't put it in otherwise you must cook the ham about 3 1/2 to 4 minutes per pound depending on the size of the ham and how much it cools down the oil.
  • Obviously a smaller ham will take less time if the oil is hotter and a bigger ham will take longer even with the oil hot.
  • If when you start the oil cools down don't worry just watch the temp and adjust your cooking time.
  • Also for a bigger ham you would want to use less oil in the deep fryer so it doesn't overflow when the ham is lowered inches.

When it's finished, this one looks just like the holiday ham that Harriet Nelson (The Ozzie and Harriet Show for you youngsters) would have made! In other words, it looks like those beautifully-decorated '50s Thanksgiving hams. The integral ingredient is a 10-12 pound SMITHFIELD HAM, which is the only type I ever prepare nowadays, subsequent to much personal frustration and disappointment with boneless hams over the years. Smithfield hams, which come from Virginia, can be found in with all the other hams at most grocery outlets, or, you can order one online which is much more expensive. While bone-in Smithfield hams are generally not the most expensive ones at the grocery, to me, these hams produce the very best flavor, and the final presentation at the table is really just magnificent. If you want to bake this ham, not by time, but by using a temperature probe, go right ahead -- that will work just fine. Anyway, this is my brother's favorite dish and he nudges me to make it more often than just on holidays. I hope you have as much fun with this recipe as I do. pat, the old bone man.

1 (8 -10 lb) Smithfield Ham, bone-in
8 ounces glaze, for ham (I use Bell-View brand)
8 ounces maraschino cherries
20 ounces canned pineapple, slices, with juice
8 ounces water
4 tablespoons butter, melted (optional)

Steps:

  • Remove the outer protective plastic from the thawed (if frozen) ham. "Score" the ham slightly by taking a sharp knife and cutting criscrosses, about 1 1/2 " apart on the top and sides of the ham. These slices just need to barely cut through the outer skin -- after the ham bakes, they become much bigger.
  • Preheat the oven to 350-degrees F.
  • Using round toothpicks, attach the pineapple slices all over the outside of the ham -- reserve the juice. Using more toothpicks, secure a maraschino cherry in the middle of each pineapple slice.
  • Using a large roaster pan, (or, two aluminum "throw-away type" roasting pans, one fitted inside another for added stability), place some sort of rack in the bottom to raise the ham slightly off the bottom of the pan. Pour in the water and then set the ham on the rack. Pour the pineapple juice over the ham. Brush half the ham glaze (you can use your fingers) on the ham and then cover with lid, or "tent" with aluminum foil. Mainly, you don't want the lid or aluminum foil to make much contact with the ham -- if a few toothpicks pop through, that's okay.
  • Bake on the second from the lowest rack, 20 minutes per pound at 350-degrees F. (e.g., a ten-pound ham would bake for about 3 hours and 20 minutes).
  • Halfway through baking time, remove the lid or aluminum foil and baste the ham with the juices in the pan, just enough to re-wet the entire ham. Return to oven covered as before.
  • At the end of the baking time, re-baste it, brush on the remaining ham glaze, pour the melted butter over the ham (if using), and re-set the oven to BROIL, on HIGH if there is a broiler setting. Place the ham in the roaster pan, uncovered, under the broiler for just a few minutes to render the glaze and brown it up some. Don't worry about small black tips -- this is normal. KEEP A CLOSE EYE ON THE HAM IN THE BROIL MODE OR YOU CAN EASILY BURN IT UP!
  • When the ham looks good, remove it from the broiler, allow it to sit for at least 20 minutes uncovered so that the juices will re-disperse within the meat, remove all toothpicks, and then slice it for serving.
  • Note: Use the juices/drippings from the ham to make great-tasting Red-eye Gravy. Just pour all the drippings into a skillet and whisk in about 2 tablespoons of Wondra flour, (or cornstarch for clearer gravy), whisking constantly, over medium heat, until it thickens. If you don't have enough drippings, or if your gravy gets too thick, just add a little canned chicken broth.

7 lbs ham, spiral sliced and glazed
3 gallons peanut oil, about, as needed to properly fill pot

Steps:

  • In an outdoor turkey fryer kind of contraption heat several gallons of peanut oil to 375.
  • You can use the oil left over from frying a cajun turkey- it is seasoned and hot already and just perfect.
  • Lower the ham - unwrapped of course- into the hot oil.
  • Do not do anything to the ham- just remove from package.
  • As the ham fries it will 'seal' the outside with a type of crust like crispy bacon and seal all the juices inside.
  • Fry about 7-9 minutes- longer will give you MORE crust, shorter will produce less crust. You may need to make this recipe a few times before you find the perfect 'doneness' for you.
  • Carefully remove from oil and let drain and cool a little.
  • Slice as you would any spiral cut ham.
  • Serve!

CHOPS:
4 medium 1/4 to 1/2 inch thick boneless pork chops or ham slices
william sonoma cajun seasoning or your favorite to taste
2 c dairy buttermilk
1 c sifted all purpose flour
1 1/4 tsp baking powder
1 Tbsp corn starch
canola oil for deep frying
HONEY MUSTARD SAUCE:
1/2 c honey dijon mustard
1/2 c honey
2 Tbsp mayonnaise
1 Tbsp lemon juice
1/4 tsp cajun seasoning
1 tsp garlic powder

Steps:

  • 1. Combine flour, baking powder a pinch of salt and corn starch blending well.Set aside. Sprinkle chops or ham pieces with Cajun seasoning on all sides. Dip the chops or ham into the buttermilk and then dredge into flour mixture.
  • 2. Preheat oil in deep fryer to 350^ degrees. Once the oil is hot, slide the chops or ham pieces carefully into the deep fryer and cook about 6 to 8 minutes, or until nicely browned, making sure the chops are submerged. Do in batches if needed to avoid overcrowding the fryer.
  • 3. Mustard Sauce: Mix all ingredients together. Drizzle over cooked meat just before serving, or serve on the side at the table.
