This roast is so tender you will not even need a knife! *Also works great with beef, pork, bear, venison and chicken!

1 (3 -4 lb) moose, roast*
1 (2 ounce) envelope onion soup mix
3 teaspoons garlic seasoning
2 (12 ounce) cans Coca-Cola

Steps:

  • Add moose roast to crock-pot, sprinkle with onion soup mix and Glorious Garlic or Peppercorn Ranch Seasoning available at www.starlaseasonings.com.
  • Pour coke all around base of roast.
  • Cover and cook on low for about 7 or 8 hours.
  • Remove, and let stand before slicing.

A friend gave me a nice LEAN (hence the name) sirloin moose roast and I developed this recipe to prepare it -- it turned out just great. Other cuts of moose, elk, or deer can be used in this recipe but the sirloin cut is really tops for this particular method. I recommend trimming as much visible fat as possible from the roast prior to marinating. This is a Crock Pot recipe but it can just as easily be roasted in your oven, (see directions.)

2 lbs moose roast, sirloin
21 ounces cream of celery soup (two cans)
15 ounces chicken broth
6 medium potatoes, peeled and halved
4 large carrots, peeled and quartered
1 celery rib, peeled and quartered
1 large onion
6 ounces beer (not "lite")
2 tablespoons salted butter
1 tablespoon Worcestershire sauce
12 ounces fresh mushrooms, stems trimmed and halved
1 teaspoon dried marjoram
1/2 teaspoon kosher salt
1/3 teaspoon black pepper, freshly milled
cooking spray

Steps:

  • In a long casserole dish, marinate the roast in a blend of the salt, pepper, marjoram, and beer. Cover with cling wrap and refrigerate for 2 hours, turning the roast after 1 hour.
  • Spray the inside of a large Crock Pot with the cooking spray, (e.g., Pam). If you have one of the older or smaller Crock Pots, you might have to cut the roast in half to make it fit inside.
  • Lay the potatoes, onions, and carrots in the bottom of the Crock Pot. Lay the roast on top of the vegetables, and include the marinade. Dot the roast with the butter and then add the mushrooms and celery on top of the meat.
  • In a mixing bowl, whisk together the soup, Worcestershire sauce, and the chicken broth. Slowly pour this blend into the Crock Pot.
  • Cook on HIGH setting for 1 hour and then reduce the setting to LOW for 7 more hours. Check the tenderness of the meat at the end of this time. You can cook it for up to 2 more hours if necessary but if you are using a sirloin roast, then 8 hours should do it.
  • Serve hot with crusty bread and a heavy red wine such as Merlot or Chianti.
  • NOTE: You can leave out the potatoes and serve this dish over cooked egg noodles if desired. Also, this can be baked in the oven in a large casserole dish covered with aluminum foil: 325 degree F. pre-heated oven for 3 hours.

4 lbs moose roast
2 tablespoons butter
6 onions
1 teaspoon parsley, fresh,chopped
1/4 teaspoon thyme
1 teaspoon salt
1 1/2 cups hot water
1/4 cup salt pork, cubed
6 carrots
6 potatoes
1 stalk celery, chopped
1 cup tart fruit juice or 1 cup cider
1/4 teaspoon pepper
3 tablespoons butter

Steps:

  • Lard the roast well by inserting cubes of salt pork into small cuts in the roast.
  • Heat butter in a Dutch oven or deep casserole and brown the meat on all sides.
  • Add hot water, fruit juice, celery, parsley, thyme, salt and pepper.
  • Cover and simmer gently for 3 hours on top of the stove or in the oven at 350 degrees until meat is tender.
  • If liquid gets low, add water.
  • About one hour before meal is to be served, add peeled potatoes, carrots and onions.
  • Add a little additional salt for vegetables.
  • When vegetables are tender, remove them and the meat to a platter and keep hot.
  • Thicken liquid with 2-3 Tablespoons flour.

I had a moose roast sitting in my freezer for a couple of months, because I had no idea how to cook it, not being a wild game fan. A friend suggested this method of cooking it and it was delicious. I made it at Christmas along with the turkey, thinking my guests could have a taste and I wouldn't have to feel guilty about it being in my freezer anymore, but it was the hit of the dinner!

2 tablespoons vegetable oil
4 pounds moose roast
2 cups apple juice
1 (1 ounce) envelope dry onion soup mix

Steps:

  • Heat oil in a large skillet over medium-high heat. Brown the roast on all sides in the hot oil. Remove, and transfer to a slow cooker.
  • Sprinkle onion soup mix over the roast, then pour in the apple juice. Cover and cook on MEDIUM for 6 to 8 hours, or until meat is very tender. Check occasionally to make sure there is sufficient liquid, and add more juice if necessary. Serve roast with juices, or thicken them for a tasty gravy.

Just something I threw together one day when we were going to be gone all day and I didn't want to do the same old (but yummy) crock pot roast. The "drippings" from this dish make a very flavorful gravy to serve with the roast and mashed potatoes. I think this would be good with a few sliced carrots and celery tossed in also. **This can also be used with moose and other wild game** This is a nice way to cook wild game that tends to be a bit dry. You can add water if it is too salty for your tastes.

3 lbs beef roast (boneless)
1 (1 ounce) package lipton dry onion soup mix
1 (7/8 ounce) package brown gravy mix
1 (5/8 ounce) package zesty Italian salad dressing mix
1 (1 ounce) package ranch dressing mix
1 cup red wine
1 cup sliced cremini mushroom
1 1/2 teaspoons thyme (or to taste)

Steps:

  • Spray crock pot with PAM.
  • Place roast in crock pot.
  • Empty contents of soup mix, gravy, and both salad dressing envelopes over roast in crock pot - sprinkling evenly.
  • Add wine.
  • Add sliced mushrooms.
  • Sprinkle thyme over top of all.
  • Cover and cook on low for 8 - 10 hours.
  • I use the drippings to make a delicious, flavorful gravy.

Slow Cooker Moose Roast : Ingredients:
Our Roast Moose Dinner
Sirloin Tip Moose Roast (2-3 pound)
1 whole bulb garlic - coarsely chopped.
3/4 cup beef broth
3 tablespoons Dijon mustard
1/2 cup red wine
3/4 cup water
1 medium onion coarsely chopped
Freshly ground pepper
2 slices bacon
6 drops liquid smoke
2 sticks celery (halved)

Steps:

  • Directions: Combine all ingredients in your slow cooker. I set up the roast with the bacon on top so the fat will add flavor to the roast. Cook your roast covered for about 8 hours on low or until you reach your required doneness. When done, remove from slow-cooker, let stand for 5-10 minute before cutting. If you don't do this all the juice will run out of the meat. Strain the ingredients from the slow cooker, and make your gravy add some potato water as you see fit. Serve with Mashed potatoes, Carrots, Mashed Turnip, Yorkshire pudding and Gravy.
