2 large handfuls arugula
2 Roma tomatoes, cut into 1/2-inch slices
2 stalks celery, sliced thin on the bias
1/2 red onion, thinly sliced
1/4 cup fresh basil leaves, torn
1/4 cup pitted green olives, such as Castelvetrano olives, chopped
2 tablespoons capers packed in salt, rinsed, drained and chopped
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Make a nice bed of arugula on a large platter. Arrange the sliced tomatoes on top, followed by the celery and red onions. Sprinkle on the basil, olives and capers. Drizzle with the extra-virgin olive oil and balsamic vinegar. Season with salt and pepper.

Number Of Ingredients 8

1 tablespoon olive oil
1/2 medium onion, diced
1 lb celery (about 6 ribs of celery)
1 cup canned diced tomato
1 -2 tablespoon capers
8 large olives, chopped
2 tablespoons minced fresh basil
salt & pepper

Steps:

  • In a large skillet, heat the oil on medium heat until shimmery.
  • Add the onion, stir well to coat with oil, let cook while preparing the celery.
  • Trim the celery ends, cut ribs in thirds lengthwise, then into two-inch lengths.
  • Add the celery, stir well, then let cook undisturbed for 4 minutes. Stir, then pour in tomatoes, turn down the heat to medium low, cover and let cook until celery is tender, about 20 minutes.
  • Uncover and stir in capers and olives and cook til warmed through and tomato juice cooks almost all the way down. Stir in basil.
  • Season to taste.
  • Serve immediately. Enjoy!

6 large tomatoes, sliced
2 tablespoons balsamic vinegar
5 tablespoons olive oil
1/3 cup halved pitted Kalamata olives
1/3 cup crumbled blue cheese (about 2 ounces)
2 tablespoons drained capers
4 anchovies, drained, chopped (optional)
Fresh basil leaves

Steps:

  • Arrange tomatoes on large platter. Drizzle with vinegar, then oil. Sprinkle very lightly with salt and generously with pepper. Sprinkle with olives, blue cheese, capers and anchovies, if desired. Garnish with basil leaves and serve.

  • Heat the oven to 400 degrees F. Season the eggplant cubes with salt (if you have the time, set it aside in a colander to sweat out its bitterness for about 20 or 30 minutes, while you prepare the remaining ingredients. Pat dry with paper towel).
  • Place the seasoned eggplant cubes on a sheet pan, add a generous drizzle of extra virgin olive oil (about 3 tablespoons or so) and toss to coat. Roast the eggplant in the heated oven for 25 to 30 minutes or until browned.
  • Heat 2 tablespoons of extra virgin olive oil in a large skillet. Add the onions, bell pepper, and celery. Season with a pinch of kosher salt and black pepper. Cook for about 5 to 7 minutes, tossing regularly until softened.
