It was my husband, Steve, who came up with this easy, foil-packet recipe for flaky, fork-tender Lemon Basil Salmon. We eat a lot of salmon and Steve likes trying out different herbs and spices on our food. This recipe's a winner! -Marianne Bauman, Modesto, California

2 salmon fillets (5 ounces each)
1 tablespoon butter, melted
1 tablespoon minced fresh basil
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
Lemon wedges, optional

Steps:

  • Prepare campfire or grill for medium heat. Place each fillet, skin side down, on a piece of heavy-duty foil (about 12 in. square). Mix melted butter, basil, lemon juice, salt and pepper; spoon over salmon. Fold foil around fish, sealing tightly., Cook on campfire or in covered grill until fish just begins to flake easily with a fork, 10-15 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.,

1 (1 lb) salmon fillet
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 teaspoon grated lemon, rind of
2 teaspoons basil
1 1/2 teaspoons garlic powder
2 teaspoons soy sauce
5 teaspoons grated parmesan cheese
1/8 teaspoon pepper

Steps:

  • Place salmon filet, skin side down, in pan, (I use a disposable foil pan).
  • Mix the next 6 ingredients; pour over fish.
  • Sprinkle with parmesan and pepper.
  • Put pan on grill, cover grill, and cook over med heat for 20 minutes.

Number Of Ingredients 7

6 (1/4-inch-thick) lemon slices
6 (1/4-inch-thick) lime slices
1/4 cup plus 1 1/2 tablespoons extra-virgin olive oil
6 (1-inch-thick) pieces salmon fillet with skin (6 oz each)
Fine sea salt to taste
1 cup loosely packed fresh basil, thinly sliced
3/4 cup loosely packed fresh mint, thinly sliced

Steps:

  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes.
  • Brush both sides of citrus slices with 1/2 tablespoon oil, then brush fish all over with 1 tablespoon oil and season with sea salt and pepper.
  • Grill citrus slices, covered only if using a gas grill, on lightly oiled grill rack, turning over once, until grill marks appear, 2 to 3 minutes total. Transfer citrus slices to a plate, then, if using a gas grill, reduce heat to moderate. Grill fish, skin sides down, covered only if using a gas grill, until skin is crisp, 3 to 4 minutes. Turn each piece of fish onto 1 side and grill 1 minute. Turn over onto opposite side and grill until fish is just cooked through, 2 to 3 minutes more. Transfer fish to a platter and keep warm, covered loosely with foil.
  • Heat basil and mint in remaining 1/4 cup oil in a heavy skillet over moderate heat, stirring, until herbs are just wilted, about 1 minute.
  • Serve fish with herbed oil and top with citrus slices.

This sounds so good! Recipe calls for packaged hollandaise sauce, if you're not into packaged, try making your own hollandaise. I thought the ease of the prepackaged made this dish quick and easy.

1 (1 1/4 ounce) package hollandaise sauce mix
2 tablespoons olive oil
1 teaspoon dried rosemary
1 teaspoon lemon peel (grated)
1/4 teaspoon seasoning salt
4 (4 ounce) salmon fillets
1/4 cup fresh basil leaf (cut into narrow strips)
1 lemon (cut in wedges)

Steps:

  • Heat grill.
  • Combine olive oil, rosemary, lemon peel and seasoning salt in small bowl, rub mixture onto both sides of salmon steaks.
  • Lighly oil the grill, place salmon on grill at medium heat setting; cook 5 min.,turn and continue cooking 5 minute more, or until fish flakes easily. Baste salmon with olive oil mixture while cooking.
  • While cooking salmon, prepare hollandaise sauce according to package directions.
  • Remove salmon to individual serving plates, spoon Hollandaise sauce over top and sprinkle with fresh basil, garnish with lemon wedges.

DH and I enjoyed this easy to prepare salmon dish from July 2008 Bon Appetit. We cheated and used anchovy paste instead of opening up a new tin of anchovies. It worked fine. We served the fish with grilled summer squash and zucchini, which was very complimentary.

2 large egg yolks (preferably organic)
2 tablespoons chopped fresh basil
2 garlic cloves, minced
2 anchovy fillets, minced (1 1/3 tsp)
1/2 teaspoon red wine vinegar
1/2 teaspoon Worcestershire sauce
1 cup olive oil
1 tablespoon warm water
1 tablespoon fresh lemon juice
1/4 teaspoon hot pepper sauce (generous)
olive oil, for brushing
2 1/2-3 lbs skinless salmon fillet (about 1 inch thick)

Steps:

  • For the basil aioli: Whisk egg yolks, basil, garlic, anchovies, vinegar, and Worcestershire sauce in medium bowl. Whisk in 2 Tb oil a few drops at a time, then gradually whisk in remaining oil in a thin stream. Whisk in 1 Tb warm water, lemon juice, and hot pepper sauce. Season to taste with salt and pepper. Cover and chill. (Can be made 1 day ahead. Keep chilled).
  • For Salmon: Prepare a BBQ (high heat). Brush grill rack with oil. Brush salmon with oil; sprinkle with salt and pepper. Grill salmon, uncovered, 5 minutes. Using 2 large spatulas, carefully turn fish over. Grill until fish just begins to flake in center, 4 to 5 minutes longer. Transfer salmon to platter. Serve with aioli.

2 garlic cloves, minced
1 teaspoon kosher salt, divided
1 tablespoon extra virgin olive oil
1 1/2 lbs salmon fillets, whole (about 1.5 lbs)
1/3 cup fresh basil, thinly sliced plus
1/4 cup fresh basil, thinly sliced
2 medium tomatoes, thinly sliced
1/4 teaspoon ground pepper

Steps:

  • Preheat grill to medium.
  • Mash minced garlic and 3/4 t salt in a small bowl to form a paste, stir in oil.
  • Check the salmon for pin bones and remove if necessary. Measure out a piece of heavy-duty foil (or use a double layer of regular foil) large enough for the salmon fillet. Coat the foil with cooking spray.
  • Place the salmon skin-side down on the foil and spread the garlic mixture over it. Sprinkle with 1/3 C basil. Overlap tomato slices on top and sprinkle with the remaining salt and the pepper.
  • Transfer the salmon on the foil to the grill. Grill until the fish flakes easily, 10-12 minutes. Use two large spatulas to slide the salmon from the foil to a serving platter.
  • Serve the salmon sprinkled with the remaining 1/4 C basil.

1 teaspoon salt

  • Hot and fast is the best way to cook fish on the grill.
  • Start with a hot fire and let it die down.
  • Clean the grate and wipe it with the olive oil.

  • Turn the fish over and grill for a furthur 3 mins.

  • Blend to a paste, and then slowly pour in the olive oil and mix.
  • Serve drizzled over the grilled salmon.
